Boiled condensed milk in the microwave. A quick way to cook condensed milk is to cook it in the microwave. How to do it right?

There are many options for how to cook condensed milk in the microwave, but not all of them are correct. Many housewives, using a microwave oven to prepare boiled condensed milk, complain that during cooking the delicacy begins to “run away” over the edge, lumps form, spoiling the whole appearance. And yet, condensed milk thickens so much and becomes hard, which is why the product has to be thrown away, along with the dishes, since it is almost impossible to wash them. So how to make dumplings so that they are sure to turn out well? Let's find out!

Traditional preparation of boiled condensed milk (in a can)

If you purchased the mentioned sweet in a tin can, then making the most delicious dumplings out of it is quite simple.
To do this, remove the label from the product and then immerse it in a pan filled with water. Place the pan over high heat and wait until the liquid boils. After this, the temperature must be reduced and the pan must be closed with a lid. At the same moment you should note the time.

Two-component composition of real condensed milk

Initially, this product contained the following products:

  1. Real whole milk.
  2. Sugar.

The list of ingredients ends here, but nowadays many manufacturers add various emulsifiers and replace standard ingredients with identical ones, which makes it difficult or impossible to cook such a product.

A little history

Many believe that condensed milk first appeared in the Soviet Union.
But in fact, the recipe for this yummy belongs to G. Borden. It was he who thought about processing milk that would be safe for both small children and those who suffer from lactose intolerance. Condensed milk was patented back in the 1850s, and it was then that its mass production began. When the production of condensed milk began in the Union, a strict GOST for this product appeared, according to which it could only contain milk, cream, as well as sugar and ascorbic acid (see photo). The packaging was also specified: a tin can, decorated with a blue and white label. This is no coincidence, because the product easily absorbs harmful substances from plastic. If any of the points is not true, the product can no longer be called condensed milk and must be given a different name.

Previously, condensed milk, a product of the state reserve, was not so easy to get. Today it can be found in almost any grocery store and supermarket. It is added to coffee or tea, cream and many other delicacies are made from it.

Can you cook condensed milk in the microwave?

The cooking algorithm is very simple:

  1. Take a can of condensed milk and pour its contents into a ceramic or glass container.
  2. Microwave for 2 minutes at 650–700 W.
  3. Remove the container and mix the condensed milk thoroughly.
  4. Repeat steps 2 and 3 several more times. Usually the process takes a total of 10 to 20 minutes, but everyone’s technique is different and different models of microwave ovens will require different amounts of time. And everyone has their own favorite consistency of boiled condensed milk, and stirring the mass every 2 minutes will make it possible to control the process and achieve the degree of product readiness you need.

Microwave cooking

Another option for condensed milk is boiled. Previously, to get a delicate beige fudge, an unopened can of condensed milk was boiled for 2-2.5 hours in a pan of water. Today this process takes only 15 minutes. To do this, you need to have a microwave oven with a power of 600 to 750 W, and a ready-made condensed product. It can be either homemade or store-bought. In the second case, the main thing is that it be of high quality.

The secret of preparation is as follows: choose a glass container of such a size that the milk poured into it occupies 2/3 of the volume. It is unacceptable to use dishes made of ceramics or silicone - they are not suitable for this purpose.

Then boil the milk for 2 minutes, remove the container and mix the product well. Repeat this way another 4-6 times until the mass acquires the required consistency and color. You should not leave the microwave at this time: to avoid unforeseen situations, it is best to completely control the entire process.

Attention! If the condensed milk did not turn out, then either the original product was of poor quality and contained many additives, or a low-power oven was used. In the first case, nothing can be corrected, but in the second, the mass can be cooked to the desired appearance and taste.

Cooking features

  • Some housewives complain that their experiment in preparing boiled condensed milk in a microwave oven was unsuccessful. The reason is not always a violation of the technology for preparing the delicacy, although it is also important to follow this, but rather the use of a low-quality product. The likelihood of an unsuccessful outcome will be minimal if you use high-quality condensed milk that does not contain anything unnecessary, including vegetable fats. Real condensed milk consists of only whole milk or cream and sugar. It is acceptable to contain powdered cow's milk, ascorbic acid, stabilizers and drinking water. Classic condensed milk contains 8.5-8.8% fat.
  • Often a problem when preparing boiled condensed milk in the oven arises due to the wrong choice of dishes. Almost everyone knows that metal objects cannot be placed in a microwave oven. This applies not only to enameled bowls and saucepans, but also to dishes on which metal is present only as part of the dye that is applied to the container with a pattern or border. However, when preparing caramel from condensed milk in the microwave, there is another limitation when choosing dishes, which not many people already know about. Plastic containers should not be used for this purpose, even if they are marked that they are suitable for a microwave oven. Boiled condensed milk sticks to the plastic so tightly that it can be difficult or even impossible to remove it. As a result, the used container has to be thrown away.
  • Milk, including condensed milk, has the ability to boil violently, run away and burn. All these troubles can happen when cooking it in the microwave. To avoid problems, filling the container with condensed milk no more than 20-25 percent, stirring the product regularly (every 1-2 minutes) and using a lid or parchment with several holes made in it for steam to escape. Also, to prevent the finished caramel from hardening too much, it is recommended to cook it at low power.

If you bread and use condensed milk for cream, it is better to slightly undercook it, otherwise it will become too dense and unsuitable for its intended use. Experienced chefs say that it is better to make boiled condensed milk for cream in the traditional way or buy it ready-made. Condensed milk boiled in the microwave is ideal for making homemade sweets.

Recipe

I found this option on the Internet. Condensed milk is poured into a container that is approved for a microwave oven. Then set the power to 700W and cook. Moreover, every 2 minutes the container is taken out and the product is mixed. Cook condensed milk according to this recipe for 20 minutes.

It seems like there is nothing complicated. But many housewives, having tried this option, complain that:

  • the milk immediately begins to run over the edge;
  • lumps form;
  • When cooking, condensed milk hardens so much that it is easier to throw away the dishes than to wash them

By the way, here are the reviews of those who tried it:

Lina: Why did you fall for the speed? I ruined everything... I had to stir it not every 2 minutes, but every 15-20 seconds. Can you imagine what it was like? I opened it, stirred it, closed it and again... I thought I was going crazy. As a result, the milk came out in grains.

Lilya: This is an unsuccessful attempt that I will remember for the rest of my life. I didn’t really know how to cook. I poured condensed milk into a plastic container. But it was not written about the need to stir the milk. So, I turned on the microwave and went... I came to my senses when the apartment was filled with the acrid smell of synthetics. But it was too late - the product was spoiled, the container was destroyed, and the microwave was dirty.

Svetik: I cooked it with condensed milk at medium power. stirred after 1-1.5 minutes. But it still ran away. And the condensed milk did not become darker - it remained as light as at the beginning of cooking. It tastes kind of like boiled condensed milk, but still not the same. It tastes better on the stovetop. But that is not all. When my work cooled, it became wooden. You can't pick it out with a spoon... and the taste has changed - now it looks more like caramel.

General rules

To prepare boiled condensed milk in the microwave, you need to take into account all the nuances. It is also worth considering the features of each specific microwave.

Rule 1

Condensed milk for cooking should have a fat content of 8.5-8.8% and a natural composition. Ideally, this is milk and sugar, but the addition of cream, dried dairy products, ascorbic acid and stabilizers is allowed. But there should be no vegetable fats in the composition, otherwise you simply won’t be able to get boiled condensed milk.

Rule 2

You cannot use plastic containers for cooking, as the condensed milk in the microwave will react with the plastic and it will be impossible to separate it from the walls of the container. You need to choose a glass container or a ceramic one. To prevent milk from running over the edges when boiling, take a larger cup.

Rule 3

You should never cook all the condensed milk at once. Take half a jar or even less first.

Rule 4

Do not put the microwave on maximum power when cooking, because the composition of condensed milk is essentially water. And foods with a high water content are cooked in the microwave very quickly. If the power is too high, the moisture will instantly evaporate, and instead of a tasty “vareny” you will get hard toffee, which, moreover, will be difficult to remove from the cup where the product was prepared. However, it should be remembered that everyone’s microwave is different: there are some with grill, some with convection, and some that are quite simple, so there are no equal rules for power, but we should start with the very minimum and constantly make sure that our milk does not run away.
