Pumpkin pie

This bright autumn dessert with a pronounced nutty and honey aroma will not leave indifferent even those who are skeptical about home baking. To make it in your own kitchen, you will definitely need:

  • 1 egg.
  • ½ package of butter.
  • 200 g ordinary wheat flour.
  • 1 tbsp. l. water.
  • 1 pinch of salt.

To make the filling for baking with walnuts, you will have to additionally prepare:

  • 500 g peeled pumpkin.
  • 100 g walnut kernels.
  • 100 g of flower honey.
  • 3 eggs.
  • ½ lemon.
  • ½ tsp. ground cinnamon.

Add frozen butter cubes to a bowl of sifted salted flour. All this is chopped with a sharp knife until crumbs are obtained, and then poured with the required amount of cold water and kneaded by hand. The resulting dough is rolled out into a round layer and placed in a mold, not forgetting to build high sides. The resulting base is pierced in several places and placed in the refrigerator for 20 minutes. After the specified time has passed, it is baked at 180 °C. After a quarter of an hour, remove from the oven and evenly cover with a filling made from baked pureed pumpkin, lemon juice, nuts, honey, cinnamon and beaten eggs. All this is returned to the oven and cooked at 170 oC for 35-40 minutes. Before use, the product must be cooled and only then cut into portions.

Pomegranate Turkish Delight

Translated from Turkish, the name of this dessert sounds like “Turkish delight.” The delicacy can be made from starch, molasses (honey, sugar), water, and sometimes coconut flakes - this is the so-called white delight. Walnut delight is widely used when whole or crushed nuts are added to such a mass.

To prepare oriental sweets with nuts for 5 people, we will need:

  • 1 tbsp. pomegranate juice;
  • 1.5 tbsp. hazelnuts;
  • ½ tbsp. sesame;
  • 800 g sugar;
  • 1 tbsp. corn starch;
  • 2 tsp. citric acid.

Place sugar, ½ of the total amount of citric acid in a small saucepan, and pour in a glass of water. Heat until thickened for half an hour. In another container, mix starch, 400 ml of water, juice and the remaining citric acid, bring to a boil and cook for 3-5 minutes. Combine the starch mass and sugar syrup, keep the mixture on low heat for 30–35 minutes, it should turn into a homogeneous, smooth mass. Add sesame seeds and nuts to the pan, stir and pour the mixture into the mold. Cover the product with film and put it in the refrigerator for one night. In the morning, cut the oriental sweet with nuts into cubes. By the way, the calorie content of such a dessert is quite high and amounts to 510 kcal/100 g. It will take you about 10 hours to prepare.

Cake

This delicate and very aromatic pastry with nuts has an extremely airy texture and quite presentable appearance. Therefore, it can be used as a sweet addition to a children's party. To prepare it yourself at home, you will definitely need:

  • 150 g brown sugar.
  • 150 g ordinary wheat flour.
  • 150 g potato starch.
  • 150 g peeled nuts.
  • 4 eggs.
  • 1 pack of butter (82.5%).
  • 1 tsp. baking powder.
  • Salt and vanillin.

To prepare the dough for baking with nuts, you need to soften the butter in advance. To do this, take it out of the refrigerator and keep it at room temperature. When it melts, combine it with brown sugar and beat thoroughly. Salt, vanillin, eggs, bulk ingredients and toasted nuts are added to the resulting mass. All this is re-processed with a mixer and laid out in a tall, greased form. Bake the cake at 180 °C for 45-55 minutes. If desired, it is decorated with powdered sugar or melted chocolate.

Ingredients:

  • eggs – 3 pcs.;
  • flour, sugar, sour cream - 300 g each;
  • nuts, raisins, poppy seeds – 100 g each;
  • soda – 0.5 teaspoon;
  • sour cream – 500 g
  • powdered sugar – 180 g;
  • vanillin.

Preparation:

  1. Beat eggs with sugar.
  2. Add sour cream, flour with quenched soda.
  3. Divide the dough into 3 portions.
  4. Add nuts to one, raisins to another, poppy seeds to the third, bake the cakes at 180 degrees for 25 minutes.
  5. Beat sour cream with sugar and vanilla, coat the cakes with cream.

Bagels

Those whose household loves products made from yeast dough should not ignore the recipe for baking with walnuts discussed below. To repeat it yourself, you will have to stock up in advance:

  • 100 g fat sour cream.
  • 100 g chopped walnuts.
  • 110 g butter.
  • 3 eggs (2 added to the dough, remaining for brushing).
  • 2 packets of granulated yeast.
  • 2 cups farm milk.
  • 6 cups plain wheat flour.
  • ½ cup cane sugar.
  • 1 tsp. kitchen salt.
  • 1 tsp. powdered cinnamon.
  • 1 tsp. unsweetened dry cocoa.
  • 1 tbsp. l. brown sugar.

Place the butter in a pan filled with milk and melt over low heat. When it melts, it is supplemented with salt, sugar, yeast, beaten eggs and flour. All this is thoroughly kneaded by hand and left to rise. Not earlier than an hour later, the risen dough is rolled out and cut into sectors. Each of them is covered with a filling consisting of sour cream, chopped nuts, cocoa, sugar and cinnamon, rolled into bagels and placed on a baking sheet. The resulting products are brushed with beaten egg and baked at 180 °C for 20-25 minutes.

Cake with walnuts and sour cream

The nut cake, the recipe for which will be presented next, acquires juiciness and a special taste by adding grated apple pulp to the dough. The palette will be complemented by a pleasant texture, delicate and airy cream. It can be made from sour cream or cream with a high fat content.

Ingredients:

  • eggs – 4 pcs.;
  • apples – 3 pcs.;
  • sugar – 500 g;
  • flour – 130 g;
  • starch – 100 g;
  • baking powder - 1.5 teaspoons;
  • nuts – 150 g;
  • butter – 250 g;
  • sour cream – 500 ml;
  • vanilla.

Preparation:

  1. Grind butter with sugar (250 g), stir in eggs.
  2. Add finely grated apples and nuts.
  3. Add starch and flour with baking powder, mix, divide the dough into 2 parts.
  4. Bake the cakes at 200 degrees for 25 minutes, cool, and cut.
  5. Beat sour cream with sugar and vanilla, coat the cakes.

Roll

This festive pastry with nuts, the photo of which does not convey its taste characteristics, is prepared on the basis of soft curd dough, harmoniously combined with aromatic sweet filling. To treat your family and friends with it, you will need:

  • 225 g cane sugar (75 g for the dough, the rest for the filling).
  • 300 g ordinary wheat flour.
  • 150 g of fresh grain cottage cheese.
  • 200 g chopped walnuts.
  • 1 egg.
  • ¾ stick of butter (100 g for dough, 50 g for greasing).
  • 8 tbsp. l. liquid cream.
  • Milk (for lubrication).

The cottage cheese is ground with sweet sand, and then supplemented with eggs, butter and oxygen-enriched flour. All this is intensively kneaded by hand and rolled out into a not too thick layer. The resulting product is covered with a filling consisting of caramelized sugar, cream and nuts. All this is rolled up, transferred to a baking sheet, sprinkled with milk, poured with melted butter and baked at 180 ° C for 45-50 minutes. The browned roll is decorated at your own discretion and cooled.

Cake with prunes and walnuts

Walnut cake acquires unusual flavor notes when prepared with the addition of prunes. Seedless dried fruit is washed, soaked if necessary, and then chopped by passing through a meat grinder or processed with a blender. The surface of the cake can be decorated with whole dried berries.

  • yolks – 4 pcs.;
  • flour – 240 g;
  • sugar – 400 g;

  1. The yolks are ground with sugar (200 g) and butter (100 g).
  2. Add sour cream, soda, flour, divide the mass into 3 portions, mix cocoa into one of them.
  3. Cakes are baked.
  4. Beat butter and sour cream separately, adding equal amounts of sugar.
  5. Combine both mixtures, add nuts and prunes.

  • 150 g cane sugar.
  • 100 ml kefir of any fat content.
  • 170 g ordinary wheat flour.
  • 2 eggs.
  • 1 cup chopped nuts.
  • 2 tbsp. l. natural flower honey.
  • 1 tsp. baking powder.

Beat the eggs with sugar and then add honey and kefir. Bulk ingredients and chopped nuts are added to the resulting mass. Everything is stirred vigorously, poured into a tall greased form and baked at 160-180 oC for 35-40 minutes.
