General cooking principles

Few people know how to make beef liver soup. There is no need to cook it in advance, as it cooks very quickly. The offal has a rich aroma and taste, so it is enough to put only 200 g per 1 liter of broth. Liver soups (chicken, beef) are prepared with the following ingredients:

  • legumes;
  • vegetables;
  • eggs;
  • cereals;
  • pasta.

If you want to make a gentle soup, use poultry liver: turkey, chicken or duck. If you want the dish to have a rich taste, take beef liver.

If cereals take a long time to cook (for example, peas), then the liver should be added to an almost finished dish. The offal takes the same amount of time to cook as buckwheat, potatoes or millet. But you don’t need to put all the ingredients together, it’s better to take turns, letting each product boil and cook for a couple of minutes.

You can prepare the first dish with or without sautéing. Sometimes, in addition to vegetables, liver is also fried, which gives the soup a more pronounced taste and aroma. Liver also goes great with garlic, but it is best added to the plate fresh.
