Step-by-step preparation
- Since the cookies are two-colored, prepare the light dough first. To do this, mix one chicken egg, 100-120 g of cottage cheese, 130 g of granulated sugar and a teaspoon of vanilla sugar in a bowl. Pour approximately 80 ml vegetable oil, 40 ml milk and 90 g potato starch into a bowl. Mix everything well with a wooden spatula until smooth.
- Then gradually add 250 g of sifted wheat flour into the bowl and knead a homogeneous elastic dough. On a clean counter, roll the dough well with your hands so that it is smooth and does not stick to your hands.
- Set the light dough aside to rest and prepare the dark dough in the meantime. In a bowl, mix one chicken egg, 50 g of granulated sugar, 40 ml of vegetable oil and 20 g of cocoa powder, mix everything well with a spatula. Add about 70 g of chopped nuts of your choice to the stirred mixture - walnuts, hazelnuts or peanuts. Mix everything well with a spatula.
- Gradually add about 60-70 g of wheat flour into the same bowl and mix all the ingredients well until a homogeneous thick dough is formed. Leave the dark dough in the bowl for now.
- Place parchment paper on the table and lightly sprinkle with flour. Divide the light dough into 3 equal parts. Roll each of them with a rolling pin to the shape of a rectangle.
- Gradually drop the dark dough onto the edge of each rectangle using a teaspoon.
- Then carefully roll the dough into a roll so that it does not tear anywhere. Cut each roll into equal pieces approximately 3-4 cm in size.
- Place parchment paper on a baking sheet and place cut pieces of the beautiful two-color dough on it.
- Preheat the oven to 180ºC and bake the cookies for about 15 minutes. Sprinkle the finished cookies with powdered sugar. If you want, you can also decorate the cookies with grated chocolate or confectionery powder.
If you want to experiment, try adding a little cinnamon or lemon zest to the light dough for an even richer flavor. It is better to choose fresh homemade cottage cheese for cookies rather than store-bought. It should be greasy and crumble easily. Curd that is too sour or too wet can ruin your cookies.
Recipe without eggs
Another very interesting recipe. It requires a little more ingredients, but they are all available. This baking option is good because it does not require eggs or butter. These cookies are prepared in vegetable oil. The combination of flour, including whole grain, and oatmeal makes this dessert lower in calories and also more healthy.
We need to prepare the following components:
• 300 gr. low-fat cottage cheese; • 200 gr. wheat flour; • 60 gr. whole grain flour; • 40 gr. oatmeal; • 100 gr. vegetable oil and 15% sour cream; • 60-80 gr. Sahara; • 1-2 teaspoons of applesauce; • ½ teaspoon of soda; • vanillin to taste.
Take a spacious container. We combine cottage cheese, sugar, vanillin, vegetable oil, sour cream, oatmeal, applesauce in it. You can use jam instead of applesauce. Stir the mixture until smooth. It is advisable to leave this part of the dough for some time necessary for the oatmeal flakes to swell a little.
Now add wheat and whole grain flour in parts, as well as soda. Knead the dough, it should be elastic, but not dense. Also, it should not stick to your hands. Our dessert can be formed in several ways. For example, we tear off small fragments and form them into round cookies.
Another way is to also tear off small pieces of dough, form flat cakes with your hands, sprinkle or dip in sugar, then fold in half. After that, dip it in sugar again and fold it again. Thus, you should get an envelope. Place the pieces on a baking sheet and bake at a temperature of 180 - 200 0 C for about 20 minutes.

Cottage cheese cookies in the oven
Cottage cheese cookies without butter and margarine. Recently, a friend recommended that I try making cottage cheese cookies . It does not contain a single gram of butter or margarine, which means it is ideal for those who are watching their figure! And if you consider that there is little sugar in it, then you can safely give it to children.
To prepare cottage cheese cookies we will need:
- 400 grams of cottage cheese (any fat content)
- 4 yolks
- 3/4 teaspoon baking soda
- 3 or 4 tablespoons sugar (to your taste)
- 1 cup flour
Is it possible without flour?
You can make cottage cheese cookies without flour, replacing it with oatmeal. Of course, they will turn out completely different: denser, crispier, and not soft. If you love this type of baking, then feel free to use this recipe.
It will require the following ingredients:
• 200 grams of full-fat cottage cheese; • 4-6 tbsp. spoons of oatmeal; • sugar to taste.
In a bowl, combine all the ingredients and mix them. We form the dough, which should resemble plasticine in consistency. By the way, sugar can be replaced with stevia. This is especially good for those who are losing weight or counting calories in their diet. In this form, these cookies will not only not be harmful, but also useful.
Divide the dough into small pieces, roll into balls, and then flatten. Baking takes about 25 minutes at 180 0C. Cool the finished baked goods and serve.
Cottage cheese cookies are a wonderful delicacy that can be prepared without butter, without eggs and even without flour. The choice of recipes is so wide that everyone can find the most successful option for themselves.
Cottage cheese cookies without butter and margarine
First, divide the cottage cheese into two bowls. One will hold 300 grams, the other will hold 100 grams. We’ll leave a small part aside; we’ll deal with it a little later. Add the yolks and sugar to most of the cottage cheese and mix everything well. If your cottage cheese grains are large, you can grind them in a blender, which is what I did.
Now add baking soda, mix and leave for a few minutes. When you see that the mass has risen a little and become fluffy, you can continue.
Sift the flour in parts and knead the dough. It will soon become difficult to stir with a spoon, so you can put the dough on the table and knead it with your hands. If necessary, you can add more flour. But remember that if you use too much flour, the dough will end up being tough, so don't overdo it.
So, the dough is ready, let’s make a ball out of it and put it in the refrigerator to cool for 1 hour (this is necessary, otherwise the dough will be very sticky and tear!).
