    Step-by-step recipe for fried meat pies in a frying pan

    1. Pour 250 g of warm kefir into a bowl.

    2. Add 8 g of dry yeast, 2 eggs and 2-3 tablespoons of sifted flour.

    3. Stir this mass, cover with a napkin and leave in a warm place for 15 minutes. This is how the dough is prepared. When it increases in volume and becomes porous, you can proceed to the next step.

    4. Add a pinch of salt to the dough and add twice-sifted flour in parts (500 g without two spoons).

    5. Now knead the dough and leave it to rise in a bowl under a napkin. It should double in size.

    6. Prepare the filling. Pass 500 g of pork through a fine-mesh meat grinder.

    7. Add black pepper and salt to taste. Stir.

    8. Pour 2 tbsp into the pan. l. vegetable oil and put on fire.

    9. Peel and finely chop 4-5 shallots. Carrots can be grated. Place vegetables in a frying pan with heated oil.

    10. Fry the vegetables for 1-2 minutes, then add all the minced meat. Fry the filling for 3-4 minutes until the meat turns white. Then add salt to taste.

    11. Cut a small piece from the risen dough. Then roll it into a roller and cut into equal pieces. The size of the pie will depend on the size of the piece.

    12. Roll out each piece with a rolling pin into a thin cake.

    13. Place some of the cooled filling in the center of the cake, then pinch the edges. Lightly press the patty with your palm to give it a flattened shape.

    14. Form all the pies in this way.

    Secrets of successful fried mince pies.

    1. Since the dough of these pies will be prepared with dry yeast, you should approach their choice responsibly. When purchasing dry yeast, pay close attention to the production time. Never use expired yeast or add it to your baked goods!
    2. To make the dough soft and airy, knead it a couple of times. You can do this: wait for the dough to rise a couple of times, knead it with your hands, wait for it to rise again, knead a little more and you can start shaping the pies!
    3. You should not put raw minced meat in these pies. It must be fried until half cooked. But you need to fry very delicately so that all the liquid does not evaporate and the minced meat does not dry out.
    4. It is best to cook over moderate heat. This way the crust will become golden brown and the inside will be perfectly cooked! During the process, you should use a lid so that the oil does not fly in different directions during frying.

    First, let's prepare the dough for the pies. I’ll say right away that this process is slow and very labor-intensive. But the result you get will definitely be excellent!

    Take a deep bowl and pour warm milk into it. Add the required amount of granulated sugar and dry yeast.

    Stir and let this liquid stand in a warm place for 15-20 minutes. During this time, a characteristic yeast foam should appear on the surface. It indicates that the dough dough is ready and quite suitable for further use.

    Melt a piece of butter in a water bath or using a microwave oven, add it to the dough. By the way, you can completely replace butter with high-quality margarine. The result won't get any worse!

    Break a small chicken egg into a bowl.

    Sift the flour using a regular sieve. This can be done gradually, stirring the dough each time. It should not become hard at the end of adding flour.

    Make the dough so that it retains its sticky texture. This may require a little more or less wheat flour!

    By the way, if you want to use minced meat from the freezer, don’t forget to defrost it first!

    Separately, fry the onions in a tablespoon of vegetable oil. First, the vegetable should be peeled and finely chopped with a knife.

    In a deep bowl, mix the half-cooked minced meat, fried onions and the required amount of table salt. Mix the filling thoroughly and let it cool.

    3. Wrap the finished dough in cling film and refrigerate for 1 hour.

    4. Prepare the filling. To do this, peel and chop 1 onion, then fry it in vegetable oil.

    5. Pepper and salt 400 g of minced meat to taste. When the onion turns golden, add the minced meat and fry over low heat for about 10 minutes.

    6. Mix fried minced meat with 400 g of boiled rice. Stir the filling and add salt to taste.

    7. Remove the dough from the refrigerator and form it into small balls.

    8. Roll out each bun with a rolling pin. Since the dough is quite soft and slightly sticky, roll it out on a surface that is heavily floured.

    The dough is kneaded with kefir, does not require long proofing, and is very pleasant to work with. For the filling, fried meat is used - pork, beef or a mixture of both. For piquancy, onions and aromatic spices are added to the minced meat. The recipe will appeal to busy housewives. You can take the pies with you on the road or on a picnic. They are perfect for lunch with borscht or broth. All dough products must be at room temperature before cooking. Ingredients: Dough:

    • egg – 1 pc.;
    • butter – 40 g;
    • kefir – 120 ml
    • wheat flour – 350 – 370 g;
    • sour cream – 1 tbsp. l.;
    • salt - a pinch;
    • sugar - a pinch;
    • soda – 0.5 tsp.

    Filling:

    • fried pork – 300 g;
