Steps
- Cut four hundred grams of champignons into thin slices.
- Three hundred grams of onions, quartered.
- Seven hundred grams of peeled and washed potatoes, grated on a coarse grater.
- Two hundred and fifty grams of cheese, grated on a fine grater.
- Cut the pork into thin slices, about one centimeter thick and lightly beat on both sides, add salt and pepper.
- Over medium heat, without oil, in a well-heated frying pan, fry the champignons.
- As soon as the moisture comes out of the mushrooms and they begin to fry, add oil, pepper, salt to taste, add onion and fry until transparent.
- Place grated potatoes in a baking dish and spread evenly over the bottom.
- Place the meat evenly over the potatoes.
- Place fried mushrooms and onions on the meat.
- Mix grated cheese with two hundred grams of mayonnaise and cover the mushrooms and onions with it.
- Place the dish in an oven preheated to 200°C for 30-40 minutes. After which, we take out the finished dish and serve it to the table.

Captain's meat - general cooking principles
Pork is mainly used for the dish. The meat is cut into thin slices from 0.5 to 1.5 centimeters and beaten with a kitchen hammer. Then the pieces are rubbed with spices, sometimes sauces are used and left to marinate.
Onions are an essential ingredient in the dish. A lot of it is added. The onion is cut into half rings and placed on a baking sheet in the first layer, then comes the meat and only after that the potatoes. It is laid raw or pre-boiled until half cooked.
What else can you add to the dish:
Pour the dish with sauces based on mayonnaise or sour cream. Sometimes bechamel milk sauce is used. And on top everything is covered with a layer of cheese. The dish is being prepared in the oven. Typically at temperatures between 180 and 200 degrees.
CAPTAIN'S MEAT
An old Sakhalin recipe.
Required:
- 300-400 grams of pork
- 4 medium potatoes
- 1 medium onion
- 50 grams of butter
- 1 tablespoon flour
- 1 cup milk
- 100 grams of any hard cheese
- Salt
This dish is prepared by baking in portioned frying pans or any other portioned baking dish. Serve directly in the same bowl.
Peel four potatoes. Place in a small saucepan, fill with water. Add some salt.
Place on the fire and cook after boiling for about 15-20 minutes.
Then drain the water and cool the potatoes.
Separately, prepare the béchamel sauce. Melt a piece of butter in a small saucepan.
Add one tablespoon of flour.
Stir the flour well with a whisk. Wait until white foam appears and immediately pour in cold milk, continuing to stir with a whisk so that there are no lumps.
Season the sauce with a pinch of salt.
Continue heating and whisking until the sauce begins to thicken.
Immediately remove the sauce from the heat. You don't need to wait for it to boil. The consistency of the sauce should be similar to pancake batter.
Grind the cheese on a grater.
Cut the potatoes into slices. Onion - thin rings.
Divide the meat into two parts. You can cut the meat into smaller pieces if it's more convenient for you to beat. The meat layer in this dish can be assembled from several pieces.
Beat the meat well on both sides. Assemble the dish in a portioned bowl.
First place a layer of onions on the bottom of the pan or mold. Half an onion per serving.
Place the chops on top of the onions.
Lightly season the meat with a pinch of salt.
Place boiled potato slices in an even layer on top of the meat.
Pour the sauce over the potatoes.
And carefully, with a spoon, cover the entire surface of the potatoes with sauce.
Sprinkle the top with cheese.
Place the molds in an oven preheated to 200 degrees for 20-25 minutes.
Remove and serve immediately.
Recipe 3: Captain's meat with mushrooms
The recipe is very aromatic and tasty captain's meat, to which no potatoes are added. But the dish is prepared with mushrooms. We take ordinary champignons, fresh.
Ingredients
• 0.5 kg of champignons;
Preparation
1. Wash the pork, remove pieces of film from the surface, leaving the fat. Cut into one-centimeter slices and beat on both sides.
2. Rub the pieces with pepper and salt, put them in a bowl and let them sit for a while.
3. Cut the mushrooms into slices and fry in a frying pan with vegetable oil for about ten minutes, no more is needed. Then add sour cream and spices and stir.
4. Peel the onions and cut into half rings.
5. Grease a baking sheet and place 2/3 of the onion on it.
6. Place pieces of meat on the onion.
7. Now sprinkle with the remaining onion half rings, and place the fried mushrooms with sour cream on top.
8. The final touch is grated cheese. The chips should be large so that the crust does not burn prematurely.
9. Place the dish in the oven, in which we bake at 190 degrees until fully cooked.
Captain's meat with potatoes and cheese
A classic recipe for captain's meat, which requires raw potatoes. We use pork, it tastes best from the tender neck, but you can use any other part of the carcass.
Ingredients:
- 500 grams of pork;
- 220 grams of Dutch cheese;
- 50 grams of mayonnaise;
- 50 grams of sour cream.
Preparation
- Take a little vegetable oil and grease a baking sheet.
- Cut the peeled onions into rings and place them in the first layer.
- The pork should be cut into slices, as for chops. Tap on both sides with a hammer, rub with spices, lay out in an even layer on top of the onion rings.
- Peel the potatoes, wash and cut into thin strips. There is no need to make it large for this dish, otherwise the pieces will remain raw. Mix with salt and pepper right in the bowl and place on top of the pieces of meat.
- We dilute mayonnaise and sour cream in water, stir well and pour the sauce into a baking tray.
- Sprinkle with finely grated cheese and place in the oven at 200 degrees.
- Previously, the dish was covered with a second baking sheet so that the cheese did not dry out and the potatoes had time to bake. But today everything is simpler, you can use foil.
- As soon as the potatoes begin to pierce easily, remove the protective cover and fry the captain's dish until crusty.
Recipe 4: Captain's meat with bechamel sauce
Many people believe that to cook real meat like a captain, you need bechamel sauce. In fact, this is one of the most popular versions of this dish. Bechamel ensures the juiciness of the potatoes, which are used boiled.
Ingredients
• 2 onions;
• 50 grams of butter;
• 20 ml vegetable oil;
• 20 grams of flour;
Preparation
1. Melt butter in saucepans and fry flour in it. Add milk in a thin stream and stir vigorously with a spatula. Add salt to the sauce and cook until slightly thickened. Turn it off.
2. Boil the potatoes until almost done, cool, peel and cut into 4 mm slices.
3. Chop the onion into half rings. Place on a baking sheet with vegetable oil.

Today I want to show and tell you how it was prepared in my parents’ family; accordingly, this is the form in which I received the recipe. My parents cooked captain's meat and potatoes in the oven on weekends, because the process is quite long, but the result is worth it. The dish is really very tasty, filling and high in calories.
