  • 200 g applesauce (you can use baby or homemade)
  • 130 g whole grain flour (wheat, oatmeal - to your taste)
  • 1 egg
  • 30 g walnuts
  • 40 g raisins
  • 1/2 tsp. cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla essence or natural vanilla

For sprinkling:

  • 20 g walnuts
  • 5 g coconut sugar

Preparation:

  1. Mix applesauce with yolk, separate the white into another bowl.
  2. Rinse the walnuts, pour boiling water over the raisins for 3 - 5 minutes, then dry everything slightly and cut equally so that the walnut pieces correspond to the size of medium-sized raisins.
  3. Add vanilla essence to the applesauce, then sift the flour with baking powder and ground cinnamon and mix.
  4. Stir raisins and walnuts into the dough, beat the whites into a thick foam with a pinch of salt and also carefully add to the dough, stirring in one direction.
  5. Divide the dough into silicone or paper muffin or cupcake molds.
  6. Rinse the remaining nuts, chop finely and mix with a spoon of coconut sugar, sprinkle on top of the muffins.

  2. When the water comes to a boil, place a smaller saucepan of chopped chocolate on top. The container should not touch the liquid and no steam should penetrate into it.
  3. Melt the chocolate, stirring constantly with a silicone or wooden spatula.
