Ingredients: 6 pieces
- 200 g applesauce (you can use baby or homemade)
- 130 g whole grain flour (wheat, oatmeal - to your taste)
- 1 egg
- 30 g walnuts
- 40 g raisins
- 1/2 tsp. cinnamon
- 1 tsp baking powder
- 1 tsp vanilla essence or natural vanilla
For sprinkling:
- 20 g walnuts
- 5 g coconut sugar
Preparation:
- Mix applesauce with yolk, separate the white into another bowl.
- Rinse the walnuts, pour boiling water over the raisins for 3 - 5 minutes, then dry everything slightly and cut equally so that the walnut pieces correspond to the size of medium-sized raisins.
- Add vanilla essence to the applesauce, then sift the flour with baking powder and ground cinnamon and mix.
- Stir raisins and walnuts into the dough, beat the whites into a thick foam with a pinch of salt and also carefully add to the dough, stirring in one direction.
- Divide the dough into silicone or paper muffin or cupcake molds.
- Rinse the remaining nuts, chop finely and mix with a spoon of coconut sugar, sprinkle on top of the muffins.
- Bake in the oven on the top - bottom mode at 180 C for about 30 - 40 minutes, let cool slightly without opening the door.

- 100 gr. powdered sugar
- 2-3 tbsp. l. sugar free cocoa powder

Preparing the right muffin dough

How to melt chocolate correctly

- Break the chocolate into a special container, trying to keep the pieces even.

A more labor-intensive, but most reliable way to melt chocolate is to use a steam bath. For this:
- Take two containers of approximately the same diameter. Fill the larger one with water and put it on fire.
- When the water comes to a boil, place a smaller saucepan of chopped chocolate on top. The container should not touch the liquid and no steam should penetrate into it.
- Melt the chocolate, stirring constantly with a silicone or wooden spatula.
If the resulting glaze seems too thick, add a knob of butter.
