- Chicken egg - 3 pcs
- Cane sugar - 50 g
- Yogurt – 150 g
- Lemon juice - 2 tbsp. l.
- Baking powder - 6 g

- Salt - 1 pinch.
How to cook:
Set aside 1 tablespoon of oatmeal. Grind the remaining flakes into flour in a blender.
Using a mixer, beat the yolks with sugar until foamy.
Add yogurt, lemon juice, mix with a spoon. Mix oatmeal with baking powder and add to the mixture. Mix. Add whole oat flakes and ground nuts and mix.
Beat the whites with a pinch of salt until stiff peaks form. Gently fold into the dough, 2 times at a time.
Turn on the oven at 180 degrees. Place the batter into the prepared muffin pans, filling 2/3 of the pan's volume. We bake at 180 degrees. 30 minutes. Moreover, do not open the oven for the first 20 minutes.
Place the finished muffins, still hot in the molds, on a work board. Once cooled, remove from the mold. This is how they turned out... cute. You can make tea! Invite guests! Let them guess... what kind of flour did such beauty come from?
With cottage cheese
The following ingredients will be required:
- 150 g wheat flour.
- 100 g oat flour (you can take oat flakes and grind them).
- 50 g butter.
- 250 g low fat cottage cheese.
- Two eggs.
- A teaspoon of baking powder.
- Two tablespoons of cognac.
- A teaspoon of lemon zest.
Preparation of curd-oatmeal cake:
Oatmeal muffins with cottage cheese can be baked in silicone molds.
Chocolate cupcakes with cherries
Surprisingly, even muffins with chocolate can be not only appetizing, but also healthy. These cupcakes combine bitter cocoa flavor with tart cherries.
Ingredients:
- egg - 3 pcs.;
- banana - 1 pc.;
- oat flour (or any other) - 70 g;
- kefir 0-1% fat - 100 ml;
- cocoa powder - 25 g;
- chocolate (bitter) - to taste;
- baking powder - 1/3 tsp;
- cherries - to taste.
Preparation:
- Peel the berries and mash the banana.
- In a separate container, beat banana, kefir, two egg yolks and one whole egg with a mixer until smooth. Add flour, cocoa and baking powder. Add cherries.
- In a separate bowl, beat two egg whites with a mixer until white foam. Add them to the mixture with a spoon.
- Pour the dough into the molds.
- Bake at 180°C.
You can add the finishing touch by melting dark chocolate and drizzling it over the top of the cupcakes.
Making muffins
You can use brewed porridge or flakes, as well as regular rolled oats. The amount of flour varies by adding/reducing flakes.
Place the flakes in an enamel container, pour kefir over them, and do not cook. Leave for 30 minutes at room temperature so that they absorb the liquid, thereby becoming larger in volume.
Then you need to add a chicken egg and vegetable oil to the resulting mass (it is best to take refined oil so that the aroma of the seeds does not interrupt the taste of other ingredients). All contents are mixed well.
The raisins are poured with boiling water for 1-2 minutes, then placed in a colander to get rid of excess liquid. After this, it must be added to the mixture and mixed again. If the honey is too thick, you can heat it to make it smoother, then add it to the other ingredients.
Separately mix flour and baking powder with ginger and cinnamon. After this, combine the resulting dry mixture with the flakes and mix until a homogeneous dough is obtained. If it turns out liquid (like for pancakes), then it is recommended to add a little more flour.
The baking dish should not be filled completely, leaving about a third of free space. Future muffins can be decorated with nuts, berries or cereal on top. Baking time is 20 minutes, temperature is 180 degrees.
Curd-oat muffins
Curd muffins are the most delicate delicacy. Sweet, aromatic, light, airy. They are perfect for morning coffee or evening tea. In addition, there is scope for culinary imagination. By changing fillings and flavoring additives, you can constantly get new tastes of baked goods. Ingredients:
- Cottage cheese – 250 g
- Butter - 50 g
- Sugar - 100 g
- Vanillin - sachet
- Eggs - 1 pc.
- Orange zest - 0.5 tbsp.
- Oatmeal – 100 g
- Coconut flakes - 2 tbsp.
- Cognac - 2 tbsp.
Preparation:
- Combine cottage cheese with butter and beat in a blender until fluffy.
- Gradually add sugar and vanilla and continue beating until the sugar dissolves.
- Beat in the egg and beat the mixture for another half a minute.
- Add oatmeal, coconut, orange zest and mix. Leave the dough for half an hour.
- Pour in the cognac, stir and fill the molds with dough.
- Preheat the oven to 170°C and cook the muffins for half an hour.
Oatmeal-curd muffins
If you don’t have wheat flour at home, but want to treat yourself to delicious homemade baked goods, don’t worry, because you can make delicious muffins without flour. We will replace wheat flour with oatmeal, which we will grind using a hand blender. And cottage cheese will make the texture of the cupcakes more tender. Oatmeal-curd muffins are quite simple to prepare and even a novice housewife can handle them. If desired, you can also add raisins, dried fruits, nuts or candied fruits to the dough for these delicious and healthy muffins.
Ingredients
To prepare oatmeal-curd muffins we will need:
- butter – 50 g;
- cottage cheese – 180 g;
- sugar – 100 g;
- eggs – 2 pcs.;
- oat flakes – 200 g;
- baking powder – 1 tsp;
- vanilla sugar – 10 g;
- cinnamon – 1 tsp.
Cooking steps
Remove the butter from the refrigerator in advance so that it becomes soft. Place cottage cheese and soft butter in a bowl and mash with a fork.
Add sugar and eggs to a bowl. Beat the mass with a blender.
Grind the oat flakes in a blender (or in a food processor), add to the bowl with the curd mass, and mix well.
Also add baking powder, vanilla sugar and cinnamon. Mix the dough and leave for 20 minutes until it thickens.
Then distribute the dough into the molds. I used silicone muffin pans for baking and did not grease them. If you have iron molds, be sure to grease the molds with butter. The molds can be filled with dough almost to the very top, since oatmeal-curd muffins will not rise much during baking.
Preheat the oven to 170 degrees and bake the muffins for 35-40 minutes.

- Sugar - 180 g
- Eggs - 2 pcs.
- Butter - 100 g
- Bananas - 2 pcs.
- Baking powder - 2 teaspoons
Preparation
The preparation is very, very simple. Let the oil warm up, we need it melted.
Peel the bananas and use a blender to puree them.
Let small pieces still remain.
Add sugar, melted butter and eggs to bananas. Mix flour with baking powder.
Combine liquid and dry ingredients.
Let's start filling out the forms.
I got 12 pieces from this amount of dough. Place in the oven at 180°C for 20-30 minutes.

- A teaspoon of honey.
- A teaspoon of soda.
- 100 g nuts.
- 100 g powdered sugar.
- 200 g butter.
Preparing the oatmeal cake:
- Place honey and soda in a water bath.
- Melt butter in a bowl.
- Break the eggs into another bowl, add sugar and beat.
- Add melted honey and soda to the egg mixture and stir.
- Pour in the melted butter.
- Add flour and chopped nuts and stir.
- Grease a cake pan, place the dough in it and place in the oven for 50 minutes. Readiness to check with a wooden stick.
Remove the finished oatmeal cake from the oven, cool, then sprinkle with powdered sugar. Nuts in this recipe can be replaced with dried fruits.
PP cake with oatmeal and kefir
Pour oatmeal into a deep container and fill with warm kefir. There is no need to heat it up. You just need to remove the product from the refrigerator an hour before cooking. Mix the components.
In another container, mix chicken eggs, honey, salt. If the honey is candied, then it needs to be melted in a water bath. We take eggs of categories C1 or C0. If only small ones are available, then you need to take three eggs. Beat everything with a fork, whisk or mixer.
We combine both mixtures: oatmeal-kefir and egg-honey.
Add soda. It can be extinguished with lemon juice or a spoon of kefir.
Mix everything, add oatmeal. It can be made at home or bought in a store. In the first case, we use a coffee grinder.
Pour boiling water over the dried apricots and raisins for a couple of minutes, then drain the water and wash the dried fruits. If there are tails in the raisins, remove them. Cut dried apricots into strips. Place the prepared ingredients in a bowl with the dough.
If we are using a silicone mold for the first time, then grease it with oil. If in the second and subsequent ones, then there is no need to lubricate. Pour out the dough.
Bake the cake in an oven preheated to 180 degrees for 40 minutes. Check readiness with a wooden skewer. If it comes out dry, then it’s time to remove it.
Serve the finished oatmeal cake cooled.
If desired, portions can be topped with honey or berry sauce. Delicious simple baked goods can be gluten, sugar and oil free.
Lenten pumpkin muffins
An excellent option for vegetarians and vegans. To prepare lean oatmeal muffins you need to take:
- 200 g oat flour (you can buy flakes and grind them).
- 400 g fresh pumpkin.
- 250 ml hot water.
- 30 g flaxseed.
- 100 g whole grain wheat flour.
- 100 g sugar.
- 10 g baking powder.
- 50 g raisins.
- 10 g dried ginger root.
- 50 g sunflower seeds.
- Two tablespoons of vegetable oil.
Preparing Lenten cake:
- Peel the pumpkin, cut into cubes, add hot water and boil until soft for about ten minutes.
- While the pumpkin is cooking, grind the flaxseed and oat flakes into flour.
- When the pumpkin has cooled, grind it in a blender along with the liquid.
- Rinse raisins in cold water.
- Add ginger, sugar, raisins, baking powder to pumpkin puree and stir.
- Add oatmeal with ground flaxseed.
- Pour in sunflower seeds, pour in vegetable oil.
- Add whole grain wheat flour and mix well.
