Cut the dough into 4 equal squares, which in turn are cut diagonally into six triangles. Make a small cut along the edges in the center of each triangle.
Place 1 tsp on each triangle. condensed milk, then roll into croissants. Where the cut was made, move the edges a little, as if hugging the filling, and then simply roll it into a roll as usual.

What could be better than fragrant croissants for breakfast?
With strawberries, lemon jam, raspberries or even condensed milk... Moreover, if you consider that puff pastry, which takes too long to make at home, can be purchased at any store. The best dough is puff pastry with yeast. It makes very tasty croissants. By the way, the ready-made dough is very convenient to use, because, in fact, it only takes 10-15 minutes to bake croissants, and only 5 to cook!
As a result, this delicious dish can qualify as a complete quick breakfast! Croissants made from ready-made dough are easy to prepare and bake. At the same time, you will not feel any difference between the home test and the one you bought in the store.
Traditionally, a croissant is a crescent-shaped bagel and a privilege of French cuisine. Although this dish was first invented by the Viennese baker Peter Wendler. You can make croissants without filling, it all depends on personal preference.
Even though the process of making croissants is very simple, I personally find it very enjoyable. Let's cook!
1. First, defrost the dough. This process usually takes at least 30 minutes. Therefore, take the dough out of the freezer as soon as you wake up. I sometimes resort to tricks if I need croissants right “now”. I set the oven timer to 50 degrees and carefully defrost the dough. This usually takes 5-7 minutes. This is very convenient, since the top part of the dough defrosts the fastest, which can be used for 3-4 croissants, and the rest of the dough is sent back to the freezer.
2. Visually divide one sheet into three parts and cut it as well. The result is rectangles! Now we cut each of them with an oblique line: from the upper left corner to the lower right. You should get triangles.
3. Place some filling on the finished triangle. I almost never succeed at this point, since I like a lot of filling and, as a rule, it sometimes leaks out of the croissant. So don't repeat my mistakes)
4. After adding the filling, roll the croissant into a roll, starting from the wide part. It turns out to be a beautiful bagel, which we immediately coat with egg yolk.
5. Set the temperature in the oven to 200 degrees, and send the croissants to bake for 10-15 minutes, until the dough doubles in size and becomes a rich golden color.
Croissants can be topped with chocolate, lemon or orange glaze. They are very tasty with condensed milk. Bon appetit and come again!

Secrets of confectionery craftsmanship
Puff pastry is prepared with or without the addition of yeast. In any case, the baked goods turn out tender, tasty, aromatic and very porous. Not every housewife has enough free time, so we often buy ready-made dough and simply bake it.
Croissants made from this dough take 20-30 minutes to prepare, and their versatility lies in the fact that you can use absolutely any filling, in particular:
- cottage cheese;
- chocolate;
- berry;
- fruit;
- cheese;
- meat;
- caramel;
- sausage;
- fish, etc.
A few pastry tips will help you prepare croissants that will immerse you in the atmosphere of the narrow streets of Paris and the aroma of freshly baked buns in the nearest cafe:
- Before using, we defrost the puff pastry naturally.
- The dough is rolled out into not too thick layers, which are then cut into equal triangles.
- We spread the filling on the wide edge, and then pinch the loose ends tightly so that it does not leak out during the heat treatment.
- The optimal amount of filling for a croissant is 1 dessert spoon.
- To make croissants with a characteristic golden crust, their surface can be greased with a mixture of egg yolk and sugar or protein mass.
- For baking the dough inside, the optimal temperature threshold is 180°, and for obtaining a golden crispy crust - 210°.
- Croissants can be filled with caramel after baking using a pastry syringe or bag.
- The top of the croissants is decorated with sesame seeds, nut kernels, pieces of candied fruit, glaze, caramel, chocolate, and poppy seeds.
- Before baking, the dough should rise slightly, so let the croissants sit in a warm place for half an hour.
How to make chocolate filling for chocolate croissants
Probably everyone loves baked goods with chocolate filling. You can easily make chocolate croissants at home. It is important that the filling is not too liquid and does not leak out. There are several secrets for this case.
Ingredients:
- powdered sugar – 200 gr.
- cocoa powder 3% fat – 50 g.
- butter – 100 gr.
- honey – 50 g (if necessary)
Preparation.
Pour powdered sugar into a container, add cocoa and mix.
Add melted butter and stir well again.
Afterwards, mix the mixture with your hands, rubbing it between your fingers.
I would like to draw your attention to the fact that sugar cannot replace powdered sugar, since it does not dissolve in oil and when baking, the filling will turn into one lump.
As a result, after mixing, the filling should turn out crumbly, like coarse sand. This can be achieved due to the fact that the cocoa used contains a minimal amount of fat. If you take cocoa with a higher fat content, for example, 17 or 20%, you will end up with a thicker mass, which can also be used without adding anything else.
If the result is a dry mass and does not stick together (this happens when the cocoa fat content is low), you need to add a little liquid honey and stir.
The result is a very elastic chocolate mass. It feels like plasticine to the touch. During baking it will gradually heat up without leaking.

The benefits of croissants
The high calorie content of the dish speaks for itself when it comes to the usefulness of such baked goods. Croissants are very nutritious, so we can say with confidence that a couple of these crescents for breakfast can charge the body at the beginning of the working day until lunch. And in the fight against stress, the chocolate present in the filling helps to cope. So it turns out that our homemade croissants are an ideal antidepressant and energy replenisher “all in one”. We prepare the dish on the weekend, eat it for breakfast (in moderation) and enjoy such a wonderful start to the day.
So our story about croissants and the difficult recipe for making them has come to an end. If it is not possible to knead homemade puff pastry, then go to the store for it and prepare croissants in a faster version. But, most importantly, prepare and delight your loved ones with a delicious and nutritious breakfast, as real French people do!
The French have blessed the world with many of their dishes and some culinary traditions. One of them can be considered the so-called continental breakfasts. And even though many of our tourists frown if the hotel offers them exactly this, many people do not refuse to eat a warm krussanchik in the morning, even while at home. Over time, people began to modernize this dish, invent new fillings for it and experiment with others. Now you can find a recipe for croissants (at home, of course) that the French could not even dream of.

By the way, if you don’t have an egg, there are also many options for greasing the top for savory baked goods. You can add a pinch of turmeric to each of these spread options to give the crust a yellowish tint.

Options and rules for top lubrication
We have already figured out how to make a croissant. But even if everything is done strictly according to the rules, you may end up with some pale (albeit very appetizing-smelling) products. And why all? Because the dough will not voluntarily turn brown in the oven. The classic way to achieve a delicious blush on the buns is to brush them with beaten egg on top. But keep in mind: in this case, the film seems to tighten the surface of the baked goods; The croissant, meanwhile, has a very delicate dough, so the crust will not be very aesthetically pleasing. Improved option: brush your goodies with whipped yolks. They will allow the croissant to simply brown without creating ugly wrinkles on the surface. However, there is a truly French way to decorate homemade croissants. The recipe is simple: a small amount of milk is whipped into foam with a large spoon of sugar. This mixture is used to coat baked goods.
Consider the nuances. If you coat your “buns” with egg or yolk, you should do this about ten minutes before the end of baking. If you prefer milk and sugar, grease them before placing the baking sheet in the oven.
Strawberry croissants
Berry fillings are attractive in any baked goods. Of course, you can just take jam, preserves or marmalade, but you definitely won’t get the same taste as with natural berries. So at the height of summer it is better to take fresh gifts from the gardens - for example, strawberries. Since the fruits themselves, without added sugar (like in jam), are not sweet enough, it is better to combine them with chocolate, and white one at that. The same strawberries are taken in half with a sweet additive, the berries are cut in half (if they are not too large, but large ones can be smaller). The chocolate is either heated in a water bath and poured into the croissant (which is not very convenient), or grated and poured into the cut.
Unsweetened fillings
Who said that treasured bagels have to be sweet? Not everyone likes sweets; some prefer something sugar-free for breakfast. As an option, stuff the croissants with arugula (a handful is enough), combined with a couple of chopped radishes, two tablespoons of cottage cheese and a teaspoon of vegetable oil. Salt, pepper and bake.
A good option with mushrooms. The champignons are cut into slices, the onion into cubes, and everything is fried together. Boiled meat - chicken, pork, beef - whatever you have - is chopped, mixed with vegetables and seasoned with mayonnaise. You can add this filling before baking croissants, or you can add it to already prepared ones.
Chocolate fantasy
Most people believe that it is necessary to prepare it specially, including a lot of additional ingredients. General delusion! Here's how to do it correctly: tiles of your favorite variety are broken into small pieces and placed in a “shell.” By the way, the taste will become much more piquant if you combine the popular sweet with orange. Wedges are not suitable for this; they are too juicy, and your bagel will be loose and may fall apart. The zest is removed from the citrus without the slightest trace of “white”; You can carefully remove it using a grater. The zest is added to the chocolate and the croissants are placed in the oven. There the chocolate will melt evenly - and you will get a simply divine treat.
