Lazy pie with green onions and eggs: quick and tasty


Unexpected guests will not take an experienced hostess by surprise. If she has a recipe for jellied pie with herbs and egg in her arsenal, then the baked goods can be served both as an appetizer and as a main hot dish. Recipes for lazy pies are varied.

They got their name due to their simplicity and the short amount of time it takes to prepare them. The components for the dough (usually there are few of them) are mixed in one container, without separate manipulations. Then the liquid dough is poured into the filling.

Recipe for jellied pie with green onions and eggs

A classic jellied pie, tender, tasty and quick, prepared with kefir. For the test you need:

  • Break 2 eggs into a bowl, add a pinch of salt and 2 tbsp. l. vegetable oil, beat with a whisk or fork;
  • sift 1 tbsp. premium wheat flour, add ½ tsp. baking powder, mix with eggs;
  • pour in 200 ml of kefir, stirring at low speed with a mixer or whisk.

Mix the dough until smooth so that there are no lumps. Leave in the bowl for 15-20 minutes, during which time prepare the filling.

  1. Wash a bunch of green onions, dry them on a paper towel, finely chop them, and add salt to taste.
  2. Boil 2 hard-boiled eggs (10 minutes after boiling water), cool, peel, grate on a coarse grater.
  3. Mix green onions and egg.

Preheat the oven to 2000C. Grease the mold with vegetable oil. Pour a little dough onto the bottom (it should turn out liquid. If necessary, add kefir). Place the filling on the dough and fill it with the remaining dough. Place the pan in the oven and bake for 20-25 minutes. Sprinkle the hot cake with sesame seeds.

Recipe for cooking with canned fish

You can make a very tasty pie not only with a filling of herbs and eggs, but also with canned fish. For such a pie, you can take any fish, for example, saury, sardine or pink salmon.

Ingredients for the dough:

  • two cups of sour drink;
  • a spoonful of salt and fine sugar;
  • two raw eggs;
  • three tablespoons of vegetable oil;
  • 255 g flour.

For filling:

  • a bunch of green onions;
  • a jar of canned fish;
  • two large eggs;
  • pepper, salt to taste.

Cooking method:

  1. Using a mixer, stir the eggs with salt, sweet sand and sour drink. Then add the flour and mix well so that there are no lumps.
  2. All that remains is to add oil and stir everything again, the base is ready.
  3. For the filling we need boiled eggs, which we chop into cubes. Finely chop the onion, take the fish out of the jar and simply mash it with a fork.
  4. Combine all the ingredients of the filling, add salt and pepper.
  5. Assemble the pie (see recipe above) and bake for 45 minutes (temperature 180°C).

Sour cream pie

A pourable pie with herbs, eggs and cheese is very tasty and aromatic. Sour cream, unlike kefir, makes the dough more porous, airy and soft. To make the pie you need:

  • Break 2 eggs into a bowl, add a pinch of salt and a little paprika and black pepper;
  • add 300 g of fat sour cream to the eggs, stir well with a fork or whisk;
  • sift 1 tbsp. wheat flour, add 1 tsp. baking powder or soda;
  • pour the flour into the sour cream and eggs, stir so that there are no lumps.

While the dough is “resting” and gluten is forming in it, you need to prepare the filling:

  • wash a bunch of green onions. Together (or instead) you can take parsley, dill, sorrel, spinach, and other greens. Dry on a paper towel and finely chop. Lightly salt and pepper, knead with your hands to make the filling more juicy and soft;
  • hard boil 2 eggs, cool, peel, chop finely, add to greens;
  • grate 100 g of hard cheese on a coarse grater, mix with the rest of the filling ingredients.

Preheat the oven to 1800C. Line the pan with parchment paper or grease it with butter. Place the filling and pour a layer of liquid, well-mixed dough onto it. Place in the oven for 30-35 minutes. The pie should be baked, browned, and the cheese should melt. This pie is delicious both hot and cold.

Delicate pastries with sour cream and sesame seeds

The dough in this recipe will be prepared with sour cream, rich and very tasty. Well, the filling in all recipes is almost the same - we combine green onions with boiled eggs, which neutralize the bitterness of the onions and make it more tender.

Ingredients:

For the test:

  • sour cream - 350 ml
  • vegetable oil - 4 tbsp. l.
  • flour - 1.5 - 2 cups
  • salt - a pinch
  • eggs - 2 pcs.
  • baking soda, quenched with vinegar - 1 tsp.
  • sesame - 20 gr.

For filling:

  • green onions - 300 gr.
  • eggs - 6 pcs.
  • salt pepper

For the filling, we finely chop the green onions and grate the pre-boiled eggs on a coarse grater. Mix everything and add a little salt, you can add black pepper.

Please note that in the first recipe we slightly heated the onions in butter. I personally like this option better, but the choice is yours.

Prepare the dough. Beat the eggs until fluffy, add salt and vegetable oil and mix again until smooth.

Add sour cream and mix again.

Sour cream can be of any fat content, but the amount of flour depends on it. The fattier the sour cream, the less flour you will need.

Sift the flour through a sieve and mix into the dough in portions. We extinguish the soda with vinegar and also add it to the dough. Stir until smooth. The dough should look like pancakes.

Grease the baking dish with vegetable oil and pour out half of the dough.

Spread the filling and smooth it out with a spatula or spoon.

Pour the remaining dough on top and level it again so that the dough completely covers the filling.

Sprinkle sesame seeds on top. I love adding it to baked goods, it adds a special taste to the product.

Place in the oven and bake for about 30-40 minutes at 180 degrees.

Lazy pie in a slow cooker

Lazy pies are perfectly baked not only in the oven, but also in a slow cooker. It will take a little more time, but the result will certainly please you.

As an experiment - lazy mayonnaise pie with green onions, egg and rice. Before you start preparing the dough, you need to take care of the ingredients for the filling:

  • hard boil 2 eggs, cool, peel and crush with a fork;
  • wash and dry on a paper towel, finely chop a bunch of green onions;
  • boil 3 tbsp. l. rice until soft. You can salt the rice while cooking, then no longer add salt to the filling. Drain the water;
  • mix the filling components before the rice has time to cool, add 2 tbsp. l. butter.

To prepare the dough, mix 5 tbsp. l. mayonnaise, 2 eggs, 120 g wheat flour. The flour must first be sifted through a sieve and 1 tsp added to it. baking powder and a pinch of salt. Mix all ingredients to form a homogeneous flowing dough. Add the filling to it and mix again so that it is evenly distributed throughout the dough.

Grease the multicooker bowl with butter and dust it with wheat flour so that the cake does not stick to the walls and bottom. Place the dough into it, carefully level it and put the multicooker in the “Baking” mode. It will take a little over an hour to prepare the pie. There is no need to remove the pie from the multicooker immediately after cooking; let it simmer there for another 20-30 minutes. Then remove, turn upside down and serve.

Kefir jellied pie cooked in a frying pan

No oven - no problem! Because it is possible to bake a jellied pie with green onions and eggs on kefir in a frying pan. Such original baked goods turn out no worse than traditional ones.

Ingredients:

  • 300-350 g flour (premium);
  • 0.5 l of kefir (2.5%);
  • 6 eggs;
  • 1 sachet of baking powder;
  • 0.5 tsp Sahara;
  • 0.5 tsp salt;
  • 1 tbsp. sesame seeds;
  • 150 g hard cheese;
  • 4 large bunches of green onions;
  • 50 g butter.

Boil 4 eggs, peel and coarsely grate. Rinse the green onions, dry them and finely chop them. We turn hard cheese into large shavings.

Melt the butter in a frying pan, pour in the onion, simmer it for literally 30 seconds and put it on a plate. Add eggs to onions, throw in cheese shavings and some spices.

How to cook lazy pie in a frying pan

Lazy pie can even be made in a frying pan! The dough for it should be liquid, the layer should not be very thick so that the cake is well baked. The choice of frying pan is of great importance: if possible, you should give preference to a thick-walled cast iron frying pan. It heats up evenly and holds heat well; baked goods will not burn on the bottom while being raw on top.

It’s better not to complicate the filling, just basic ingredients – green onions and boiled eggs. For the dough you need to mix 1 tbsp. kefir, 1 egg, ½ tbsp. wheat flour. Sift the flour in advance, add salt and baking powder. Make sure the dough is homogeneous, without lumps. If you add not one, but two or three eggs to the dough, the pie will resemble an omelet.

Heat a frying pan and grease it well with vegetable oil. Pour out the dough and spread the filling on it. Cover the pan with a lid and bake over medium heat for 20-25 minutes, making sure that the cake does not burn.

Dietary lazy pie with onion and egg

For those who watch their figure and prefer low-calorie baked goods, a recipe for a light cottage cheese pie is suitable.

  1. Place a pack of low-fat cottage cheese in a bowl, add 5 eggs, and use a blender to bring the products to a homogeneous mass.
  2. Add 70 ml of low-fat kefir to the cottage cheese and mix well.
  3. Sift 100 g of rice flour, add 30 g of corn starch, 1 tsp. baking powder, a pinch of salt.
  4. Add flour to the liquid part and mix thoroughly.

To prepare the filling, you need to wash and dry 300 g of green onions. Heat a frying pan, pour 2 tbsp into it. l. vegetable oil and sauté the onion for 2 minutes. Cool.

Hard boil 5 eggs, cool, peel, finely chop, mix with onion. Add salt, pepper, and beat in 1 raw egg. Thanks to it, the filling will not spill out when cutting the pie. Instead of eggs, you can add grated cheese.

Preheat the oven to 1800C. Grease the metal mold with vegetable oil (there is no need to lubricate the silicone mold). Pour some dough into it, then lay out a layer of filling and fill it with the remaining dough. Baking time – 45 minutes.
