After all, sometimes we have so little time to go shopping in search of the right ingredients, and then stand at the stove for a couple of hours. Therefore, we often resort to a lifesaver - simple dishes that require a minimum of time and effort to prepare. Buckwheat porridge with onions and sausage is just one of these.
Buckwheat with vegetables and sausage

Here are almost all the ingredients we will need. For the meat component, I have assorted boiled sausage; for a more savory dish, you can take smoked sausage, and for a more dietary dish, chicken breast.
Peel and chop the onion.
Place the onion in a preheated frying pan with a small amount of oil and let it fry over low heat.
Peel the carrots and grate them on a fine grater.
Add carrots to onions.
Chop the tomatoes into small pieces.
Place it in the pan too. Fry everything together until almost done.
Coarsely chop the sausage.
When the vegetable frying is almost ready, place the sausage in the frying pan.
Stir, add a little water and simmer until the sausage is cooked.
At the same time, boil the buckwheat until cooked, put it in a frying pan with the vegetables and sausage.
Mix everything and simmer over low heat for 5-7 minutes.
Ingredients:
- buckwheat – 1.5 multi-cups (210 gr.);
- water (or broth) – 3 multi-glasses;
- spices - to taste;
- bell pepper – 1 pod;
- large tomato – 1 pc.;
- small onion;
- sausage (we have “Ham”) and small sausage – 150 g each. each product;
- vegetable oil - about a third of a multi-cup.

Of course, it requires various additives (at least the same spices), but the main component is still pork (beef, horse meat, chicken, etc.).
A simple version of buckwheat with sausage and onions
If you need to whip up dinner with a minimum of ingredients, this recipe is just for you. After all, buckwheat, a piece of sausage and onions will definitely be found in your kitchen, and 20 minutes is not that long.
Take these products:
- 1 cup buckwheat;
- 1 large onion;
- 150 g boiled sausage;
- 3 tbsp. l. vegetable oil;
- 2 tbsp. water;
- 1–2 pinches of salt.
Let's start cooking.
- First, sort out the buckwheat, rinse and boil. To do this, pour the cereal (1 cup) into a pan, add 2 cups of water, add salt. Place over medium heat; when the water begins to boil, pour in 1 tbsp. l. vegetable oil.
Add a little vegetable oil to the pan with buckwheat to make the porridge crumbly
Cook the porridge until done
Fry the onion until half cooked
Fry the sausage and onions well
All that remains is to mix the buckwheat porridge with the toast
That's all. All that remains is to place the buckwheat with sausage and onions on plates and serve.
Add fresh herbs to the prepared buckwheat with sausage
By the way, I advise you to fry the onions not in vegetable oil, but in butter. 2-3 tablespoons is enough. And the onion can be cut not into cubes, but into half rings. It will become soft, light brown, almost transparent and very fragrant. When the sausage and buckwheat porridge are saturated with onion and creamy taste, you will understand how wonderful it is!
How to cook buckwheat in a frying pan
When starting to cook, add vegetable oil to the frying pan. Without waiting for the oil to warm up, you need to add water next. Pour buckwheat in there. We monitor the fire, it should be moderate.
Now, it’s the turn of “stale” sausages and/or sausages. They must be cleaned of the top skin.
Then we start cutting sausages and sausages. The pieces should be made into fairly large cubes, the size of which is at least 1x1 cm.
When the buckwheat porridge begins to boil in the frying pan, add chopped pieces and salt to it.
To make the buckwheat crumbly, be sure to cover the frying pan with a lid and turn the heat to very low. We will cook our dish for 15-20 minutes until the cereal is cooked. As soon as this happens, the dish is considered ready.
We will serve it on a portioned plate, adding butter and sprinkling with any finely chopped herbs.

Buckwheat with onions and smoked sausage
Of course, buckwheat porridge can be varied to suit your own taste. And if you love smoked meats, you won’t miss this recipe!
- 1 cup buckwheat;
- 300 g smoked sausage;
- 1 onion;
- 1–2 tbsp. l. tomato paste;
- 1.5 glasses of water.
Note! Instead of tomato paste, you can take several fresh ripe tomatoes, remove the skin from them (you must first scald the fruits with boiling water) and puree the pulp. If you add your favorite seasonings to the tomatoes, the finished dish will become even tastier.
Buckwheat with fried sausage
Ingredients:
- buckwheat - 2 cups
- water - 4 glasses
- fresh bacon slices - 6 slices
- onions - 1 pc.
- sun-dried tomatoes - 6 pcs.
- boiled sausage - 6 slices
- tomato sauce - or ketchup to taste
- butter - 30 g.
Cooking method:
Boil water, add buckwheat, cook until the water is absorbed.
Remove the pan with the cereal from the stove, add the butter and close the lid.
Cut the bacon into slices and fry in a dry frying pan.
Finely chop the onion and add to the bacon.
Add finely chopped tomatoes.
Chop the sausage and add to the rest of the ingredients, fry for another 5 minutes.
Pour in a small amount of tomato sauce or ketchup and stir.
Add buckwheat and stir.
Place the dish on plates and serve, sprinkled with chopped green onions. Bon appetit!
