  • rye crackers - 1 sachet;

  1. Cut the smoked sausage into medium-sized squares. You can try making this salad with ham sausage or dumplings, but it will taste best with smoked sausage.

  • chicken breast – 370-400 g;
  • sausage, carrots and onions – 220-240 g each;
  • mushrooms – half a kilo;
  • pickled cucumbers – 3-4 pcs.;
  • kefir and mayonnaise – 80-100 g each;
  • crackers - 1 pack;
  • oil, salt and spices, herbs.

  1. Chicken breast in a saucepan is filled with salted water. The bird is sent to cook until fully cooked. You need to check the inside of the meat by cutting it with a sharp knife. The cooked chicken will turn completely white. It is advisable to leave it to cool directly in the broth. Then the meat component in the recipe will be especially juicy and tender.
  2. The carrots are washed, peeled and dried. The vegetable is chopped. You can grate it coarsely or cut it into cubes.
  3. Onions without peels are cut into arbitrary small pieces.
  4. Prepared vegetables are poured into a frying pan. They are fried together in a small amount of vegetable fat. As a result, the onion and carrot pieces should become soft and slightly golden. The process will take 2-3 minutes.
  5. Mushrooms are fried in a separate bowl. First, the top thin skin is removed from the champignons. It is also advisable to update the cut on the legs.

  6. Mushrooms are cut into small pieces and poured into a frying pan with heated oil. All excess liquid should evaporate from the champignons.
  7. The finished mushrooms are left to cool completely. It is worth transferring the champignons to a separate plate so that they do not absorb excess fat.
  8. The sausage is removed from the film and cut into pieces. Their optimal diameter is 1-1.5 cm. Already cooled boiled chicken breast is chopped in the same way.
  9. The greens are washed, dried and cut with culinary scissors.
  10. For the sauce, kefir and mayonnaise are mixed in a separate bowl. You should get a homogeneous mass. She's salty. You can supplement the mixture with spices.

  • canned beans (white) – 100 g;

The peeled sausage is cut into strips as thin as possible. The beans are strained from the brine. Fresh cucumber is washed, cut into slices and chopped into strips. If the skin of the cucumber is rough, you can peel it. The greens are sorted, washed and dried.

Place the carrots in a well-heated frying pan with sunflower oil and sauté for 5 minutes, add the onion, and continue cooking for another 10 minutes. Vegetables are cooled.

Advice! When sauteing vegetables, you need to make sure that the temperature of the pan is not too high, not higher than 110 ° C, otherwise they may burn and will not have time to soften.

Strain red canned beans. Smoked peeled sausage is cut into neat oblong strips. The gherkins are freed from brine and cut into strips. Garlic cloves are peeled, washed and chopped.

Advice! To sauté vegetables, it is better to use non-stick cookware. In this case, you can reduce the amount of oil and the salad will not be too high in calories.

  • 300 gr. champignons;

  • 200 gr. canned corn;
  • 100 gr. mayonnaise.

  1. The mushrooms are prepared first. They are washed well and crushed a little so that they are well fried later. After this, they are placed in a hot frying pan, in which the oil has already been heated, and fried.
  2. The eggs are boiled for about ten minutes until hard-boiled, then peeled and cut into cubes.
  3. The onion is cleaned, chopped into smaller pieces and filled with water for half an hour, after which the water is drained, and the onion itself is squeezed out of excess moisture by hand.
  4. The sausage is cut into very small cubes.

  • mayonnaise – 2-3 tbsp. l.;

  • vinegar 9% – ½ tbsp. l.;
  • onion – 50 g;
  • vegetable oil – 2-3 tbsp. l.;
  • sugar – 1 tsp;
  • coriander (grains) – 1 tsp;
  • salt – ¼ tsp;
  • ground red pepper - to taste;
  • garlic – 2 cloves.

Advice! To reduce the calorie content of this dish, buy lean or light mayonnaise with low fat content.

How to prepare “Obzhorka” salad with beans, smoked sausage, croutons and pickles

The salad is prepared very quickly. Let's start with the simplest thing - beans. For this version of the salad, you can take absolutely any beans: red or white, in their own juice or in tomato. Open the jar and place the contents in a sieve (colander). Then rinse the beans thoroughly with cool water. Afterwards, shake off the water and, so that the beans dry a little more, leave them in the sieve while the rest of the salad components are prepared.

Now you can start slicing. All ingredients for the salad are cut depending on the shape of the croutons - into strips or cubes. Here is the second option, cubes. The size of the cubes, accordingly, is approximately adjusted to the size of the crackers or a little smaller. Cut the sausage.

Next is cheese. We also cut it into cubes or, if the crackers are long, chop it on a coarse grater. You can use any hard/semi-hard or sausage cheese – it will also look very cool in this salad.

There are several options for the Obzhorka salad recipe. Since this is a meat salad, the main ingredient is meat. It can be boiled beef or fried pork. Perfect for cooking liver or chicken fillet. A simplified version is prepared with sausage.

The rest of the salad ingredients also vary. As a rule, the list of ingredients includes carrots, pickled or fresh cucumbers, cheese, and mushrooms. The parts are added with crackers (preferably homemade) and prunes.

The salad can be mixed, but some home cooks prefer to layer the ingredients, layering the layers with dressing. Mayonnaise is used for dressing. And to make the salad less calorie, you can mix mayonnaise with sour cream.

Peel the onions and carrots. Chop the onion into thin half rings and grate the carrot into long strips. It is best to use a grater for Korean salads. Place the onions and carrots in a frying pan with oil and fry until soft. If desired, add 1-2 cloves of garlic, chopped into small cubes, to the vegetables. At the end of frying the vegetables, add salt and pepper. Cool the prepared vegetables.

Using two forks, separate the chicken fillet into fibers or cut it into small cubes. Cut the pickled cucumbers into short strips. Mix chicken meat with cucumbers and fried vegetables, season the salad with mayonnaise.

Since our salad is made from ready-made products, we add salt and pepper at the end according to our own taste.

Ingredients:

  • Sausage – 450 g;
  • 2 carrots;
  • 2 pieces of onion;

  • Vegetable oil for frying;

Preparation:

Since our meat salad with sausage is a ready-to-eat product, we start by frying it. Sauté the chopped onion, and as soon as it has caramelized, add the shredded carrots. A pinch of salt. Sauté for 2-3 minutes over medium heat. Remove from heat.

We also cut cucumbers.

Peel the onions and carrots and rinse well. Chop the onion into halves of rings, grate the carrots or cut them into thin cubes. Fry vegetables in vegetable oil until soft. Salt and pepper the prepared vegetables.

Cut the pickled cucumbers into thin slices, and cut the meat across the grain into small cubes. Mix beef with cucumbers and completely cooled vegetables. Season with mayonnaise.

Pork option

Another version of the salad is prepared with pork. You need to take lean pork; tenderloin is ideal.

  • 700 gr. pork pulp (raw weight)
  • 4 onions;
  • 4 carrots;
  • 3-5 pickled cucumbers;
  • 5-6 tablespoons of canned peas;
  • frying oil;
  • mayonnaise and salt to taste.

First you need to cook the meat. It can be boiled in water with salt and spices. You can bake pork in the oven; it is best to bake it in foil or a special bag so that the meat remains juicy. Cool the finished pork and cut into small cubes.

While the meat is cooking, you need to prepare the vegetables. Finely chop the chopped onion and grate the carrots into thin slices. Fry the vegetables in oil until tender, add salt and pepper. If desired, you can add finely chopped garlic at the end of frying. Cool the vegetables completely.

Mix pork with vegetables. Add pickled cucumbers cut into small cubes and canned green peas. Mix and season with mayonnaise.
