Dish of Soviet bishops: history and recipe for Klyazma salad

In the 80-90s, the Klyazma salad decorated the holiday tables of Vladimir residents along with Olivier salad and herring under a fur coat. Any housewife could be woken up at night, and she would clearly say what and how this dish is prepared. Radish, carrots, onions, beef, egg and mayonnaise... But few of them knew that this salad was originally called “Bishop Salad”. It was created in the late 70s as a stylization of an ancient kitchen in Suzdal specifically for local restaurants as part of the Golden Ring project. And its name is in no way connected with the highest rank of the Orthodox monastic clergy, but is inspired by the Chambers of Bishops of the Suzdal Kremlin.

For ideological reasons, a similar dish in Vladimir was often called “Klyazma” salad. And not all restaurants in Suzdal flaunted the “bishop’s” name. For example, in the surviving menus of the Main Tourist Complex this dish is listed as the familiar “Klyazma” salad. Interestingly, these days the “Bishop” salad has again appeared in Suzdal restaurants, and many Suzdal residents consider this recipe to be an old, primordially Russian one. But the meat and mayonnaise give away the Soviet past of this dish. Monastic bishops are not allowed to eat meat at all, and there was no mayonnaise in the traditional cuisine of Suzdal.

However, despite this, the Klyazma salad, in my opinion, is undeservedly forgotten these days. It's easy to prepare, delicious and inspires experimentation. Beef can be replaced with chicken; smoked meat or sausage will give the salad a piquant taste. The vegetarian version of the dish is also good - without meat, especially if you replace factory mayonnaise with homemade one. A very delicate taste is obtained if you use green radish instead of black radish for the salad...
