Recipes for spelled pilaf: with chicken, with meat, with mushrooms

Hello! Today I will tell you how to prepare spelled with mushrooms in a slow cooker. This dish is well suited for a lean diet. It is advisable to purchase small mushrooms, then you get neat pieces. The mushrooms need to be freed from the film on the stems and the top layer on the cap.

First you need to fry the onions until golden brown. Then you need to add the champignons. The products are fried for approximately 4-5 minutes. The ingredients must be mixed with a spatula so that they are evenly fried.

If it is difficult to find spelled on sale, then you need to look in the department for diabetics. This is where this product is usually sold, and it even comes in crushed form. The cereal must be filled with hot water. You can cook using the “Stew” option. The cereal will absorb all the liquid, resulting in the most delicate taste. In this function, spelled porridge is cooked for 1.5-2 hours.

Spelled with mushrooms turns out quite aromatic, tender and appetizing. You can eat this dish with both meat and fresh vegetables. For the first time, you can cook a small amount of cereal, since not everyone may like such porridge. It tastes very similar to wheat porridge. Any porridge goes well with butter and finely chopped herbs.

Cereal pilaf can be prepared using chicken, beef or pork. An interesting recipe is made with vegetables or mushrooms that do not require the addition of meat. You can choose any spices for spelled pilaf.

Benefits of Achar Plava

Traditional Armenian acharov plav is not only a hearty and tasty, but also a very healthy dish. The benefits of achar cereal are obvious - it contains a complex of B vitamins, vitamins E and PP, as well as potassium, magnesium, zinc, sodium, copper, selenium, phosphorus. In addition, achar helps improve hair, nails, skin, strengthens memory, relieves anemia, helps improve digestion and balance weight, strengthens the immune system, and improves blood circulation.

Achar is also a dietary cereal, but it contains gluten, so people suffering from allergies should eat it carefully. Acharovplav is prepared in chicken broth, which is also good for digestion. If acharov plav is prepared with mushrooms, it is useful for vegetarians, or during fasting, as the main dish of any meal. Vegetable pilaf from spelled with mushrooms

To prepare delicious pilaf, you need to use a lot of oil so that the grains absorb all the flavor of the dish. You will need at least 250 ml of vegetable oil per 1 kg of champignons and 1 cup of cereal. Also take 3 onions, black pepper and salt.

Important! Mushrooms greatly decrease in volume, and spelled increases. That's why these proportions are taken.

The specified number of components is enough for 5-6 servings of pilaf with mushrooms and spelled. Vegetable oil can be replaced with ghee.

The process begins with boiling the mushrooms:

  • The champignons are cleaned and cut into quarters, including the stem and cap;
  • boil in water, but do not drain the broth (it is important to use natural mushroom soup, not cubes);
  • it is important to do everything very quickly so that the mushrooms do not darken;
  • after 15 minutes, add salt and mix;
  • While the mushrooms are boiling, sort out the cereal, there is no need to soak it;

  • the cereal is washed in 4-6 waters until the water is clear;
  • heat the frying pan (or use a deep cauldron for pilaf);
  • add 3 tbsp. l. oil, add cereal and fry for 5 minutes;
  • pour in 2 cups of mushroom broth, which has just been boiling;
  • bring to a boil and set to minimum power, cooking spelled time is at least 30 minutes until soft, but the grains should not fall apart;
  • there is no need to stir the dish;
  • add broth if there is none left in the pilaf preparation. To do this, use a slotted spoon to remove the layer of cereal from the edge; if there is liquid, there is no need to add anything;

  • do not forget that spelled is cooked on minimal heat throughout the entire cooking time;
  • while the cereal is simmering, cut the onion into cubes, fry, add mushrooms to it;
  • Some of the mushrooms are set aside for decoration, and the rest is added to the cereal and mixed gently.


Serve the dish by placing it in a heap on a plate and decorating it with neat mushrooms on top.

Vegetable pilaf with spelled

An interesting recipe for vegetarians - pilaf with spelled and vegetables in aromatic spices. Take for cooking: 2 tbsp. l. chickpeas, 1 cup spelled, a pinch of saffron, ground chili pepper, 2 cloves, ground coriander, 5 tbsp. l. olive oil, 1 tsp. paprika pepper and a pinch of cumin. The vegetable basket consists of carrots, tomatoes, sweet peppers, and 1 onion. everyone. You also need to take 3 cloves of garlic.

Vegetable pilaf is prepared easily and quickly; first, you need to soak the chickpeas overnight. Spelled is washed and soaked 30 minutes before cooking. Legumes and cereals are washed and allowed to drain before adding to the pilaf.


Saffron pour 2 tbsp. l. hot water for 20 minutes. Then start cooking:

  • Heat the oil in a cauldron, add a clove of garlic and 1 bay leaf with clove inflorescences;
  • when the garlic turns golden, remove all the spices from the oil, add chickpeas and spelt;
  • simmer for 5 minutes, add water 3 fingers higher than the cereal and boil;
  • reduce power to minimum, cook for 10 minutes;

  • onions are fried with pepper, garlic and carrots;
  • divide the tomato into 2 parts, add to the vegetables, cover with a lid and simmer for 5 minutes;
  • Place the fried vegetables on top of the spelt, add saffron and the remaining spices; there is no need to stir the dish.

Turn off the stove, add a cut clove of garlic to the dish, and leave the pilaf for another 20 minutes.

Spelled pilaf with chicken

Spelled makes a delicious pilaf with chicken. For 4 servings you will need: 1.5 cups of cereal, 1 kg of chicken, 3 onions, 100 g of butter, pepper and salt to taste. You can use any parts of the carcass or fillet.

Process:

  1. Preparation of cereals. The spelled is washed and sorted. Then pour it into a saucepan and cook for 25 minutes after boiling. You need to simmer the cereal over minimal heat, and when it has already absorbed almost all the water (at the rate of 1 to 2), add 2-3 tbsp. l. butter.

  2. Preparing the chicken. If a carcass is used, it is chopped into pieces without touching the hollow bones. Add pepper and salt and fry separately in butter until crispy. You need to fry the meat on all sides for at least 10 minutes in total time.

  3. Onion preparation. They tend to vegetables while the chicken is fried. The onion is cut into half rings and added to the meat; it should fry until transparent.

  4. Final preparation. Spread the cereal onto the fried pieces of chicken with onions, add more pepper and spices to taste, and cover with a lid. Simmer for at least 15 minutes.


Serve garnished with greens or without them. The meat can be placed on top of the cereal, or the contents of the pan can be stirred before serving.

Spelled pilaf with beef

To prepare spelled pilaf with beef, take: 300 g of meat, 100 g of cereal, 2 cloves of garlic, 1 large carrot and onion, 3 tbsp. l. refined grape seed oil, salt and pepper. You can use seasonings for pilaf.

The main ingredients need to be washed and dried: beef, carrots, onions, cereals. Cut everything into cubes, the onion into half rings. The garlic is squeezed out with a press at the time of adding. Heat the oil in a frying pan and fry the meat until crusty. Then add onions to it, after 3-4 minutes - carrots. Cover with a lid, reduce the heat and simmer for 25 minutes. You can add water if the ingredients are too dry.


Then the washed cereals and spices (for example, cumin with barberry) are placed on top. Pour water 1 cm above the cereal, simmer for another 20 minutes until cooked.

Spelled pilaf is a healthy and tasty dish, characterized by high nutritional value and a delicate nutty flavor.

The most unusual recipes are made with mushrooms and vegetables, but you can prepare a dish with the addition of beef or chicken.

History of achar

“Armenian treasure” is what people call achar. Cereals for preparing traditional dishes of Armenian cuisine are obtained from wild spelt; the grain is not peeled to remove its hard skin, and this gives the dish a “zest”. Due to the special way achars are processed, plav was usually prepared especially for holidays. Then the Armenian women gathered in the evening, sorted the grain, washed it in several waters, and soaked it overnight.

At the same time, the women sang traditional songs and often danced, so the acharov melt turned out special, soaked in the warmth of the hands that prepared it, and imbued with positive energy. And in the morning, after slightly drying the grain, we began preparing this delicious dish. Achars were often cooked in tonir. A cauldron with achar was placed on the coals, and a carcass of meat was hung on top, the fat from the meat flowed into the achar, the dish with the achar melt turned out to be stewed and aromatic. Nowadays, it is difficult for us, city dwellers, to observe all the customs of our ancestors, however, we should definitely try to cook this healthy, satisfying and tasty dish of Armenian cuisine and fall in love with it once and for all.
