Preparing the “moulds”. These should be the bottoms of cups or glasses. I chose different bottom widths to create different sized baskets. But for a buffet it is better to make small ones and all the same.

Place the cheese on the surface of a frying pan (or mold) with a non-stick surface.

Do not lubricate the surface!

I lay out 3 blanks. But it's best to start with one.

Thickness – you choose, but not thicker than 2mm. Otherwise, the bottom layer will burn, but the top layer will not melt yet.

Width – calculate that the diameter of the circles is 2 or more times larger than the bottom of the “mold”.

Readiness – if the layer is thin, the baskets will be golden in color. But it is very difficult to ensure that the cheese does not burn.

Therefore, I suggest this method:

  • lay out the cheese;
  • when the bottom layer begins to thaw, use a spatula to go around the edges, lifting it slightly;
  • set the pan aside and let the cheese cool slightly. Then it’s easy to remove the cheese wheel from the pan;
  • remove the cheese and place it on the glass so that the edges hang down. They themselves will acquire a wavy edge;
  • let it harden COMPLETELY. Only then will the basket not change shape.

If the basket breaks a little, no big deal. It’s even beautiful if there are some patterns.

Place the first filling on the bottom. We press it a little into the shape of the basket.

Place the second filling on top.

I showed this basket with a crispy golden crust.
