  • Cut the boiled carrots, like potatoes, into cubes.

  • Combine all products. Salt and pepper. Mix.

Ingredients:

  • Honey mushrooms (salted – 500g;
  • Corn (canned) – 400g;
  • Korean carrots – 100g;
  • White beans (canned) – 400g;
  • Tomatoes (small, maybe cherry) – 200g;
  • Vegetable oil – 1-1.5 tbsp;
  • Salt;
  • Parsley or lettuce for decoration.

How to cook:

  • Drain water from canned foods.
  • Wash and chop the mushrooms.
  • Cut the carrots into 4-5 cm pieces.
  • Combine all ingredients.
  • Be sure to taste before adding salt. All products are already salted. Perhaps there is no need to add salt to them.
  • Season with oil. Mix.
  • Top with tomato halves and lettuce leaves. You can make small dots on the “fly agaric caps” from white peppercorns.

  • Garlic – 2 teeth;

  • Wine vinegar – 2 tbsp;
  • Salt pepper.

Preparation:

  • Peel the oranges. Remove the film. Cut the slice in half.
  • Dry the bread in the oven or toaster. Before slicing, grate with garlic.
  • Make the sauce: combine oil and vinegar. Salt and pepper.
  • Wash and tear the salad. Place a layer on a plate.
  • The next layer is avocado. It can be cut. You can also break off small pieces with a spoon.
  • Then a layer of orange slices.
  • The top layer is bread.
  • Just before serving, pour over the sauce.

Vegetarian New Year's salad Olivier with soy meat

Ingredients:

  • boiled potatoes in their jackets, medium size - 6-7 pcs.
  • boiled carrots, medium size - 3 pcs.
  • peas - 1 can 0.5 l.
  • small pickled cucumbers - 5 pcs.
  • smoked cheese - 100 gr.
  • Lenten maonnaise - to taste
  • black salt - 1 tsp.
  • dry soy goulash - 200 gr.

Seasonings for soy:

  • asafoetida - 3/4 tsp.
  • seasoning for meat - 1 tsp.
  • ground coriander - 1 tsp.
  • paprika - 0.5 tsp.
  • salt - 1 tsp. when cooking, 3/4 tsp. after
  • vegetable oil - 4-5 tbsp.

Boil the soy goulash, cut into cubes, add spices, mix

Place in a frying pan and fry the soy goulash in vegetable oil until cooked.

Cut the boiled vegetables into cubes.

  • Medium potatoes 5 pcs
  • 2 medium carrots
  • Adyghe cheese 150 gr
  • Hard cheese 50 gr
  • Cheese cheese 100 gr
  • Homemade mayonnaise 150-200 ml
  • Can of black olives 1 piece
  • Raw seitan 200 gr
  • Pickled cucumbers 3 pcs
  • Salt

Spices:

  • coriander,
  • nutmeg,
  • asafoetida,
  • paprika,
  • black pepper,
  • black salt

Preparation:

Boil potatoes and carrots in their jackets. Then prepare the seitan. After kneading the dough, wash it in water until only gluten remains. Boil in spice broth for 30 minutes. Squeeze the seitan and cut into thin strips. Fry it for 5 minutes with seasonings (coriander, paprika - 1/2 teaspoon each, nutmeg, asafoetida - a pinch each). You can add a little more salt.

Grate the boiled and cooled potatoes on a fine grater. We also grate Adyghe and hard cheese. Mix potatoes, cheeses and 1-2 tbsp. spoons of mayonnaise. Add salt and mix well. Get a thick sticky mass. We clean and grate the boiled carrots. Salt and pepper. Add 1-2 tbsp to seitan. spoons of mayonnaise. Cut a piece of cling film 30x70 cm, place it on the table and press down so that it sticks. Pour in the potato mixture and distribute evenly. Grease with mayonnaise. A layer of carrots. Lubricate. Olive rings.

A layer of cheese grated on a coarse grater. Lubricate. We make a strip of seitan in the middle. We connect the edges of the potato layer to make a roll. We avoid rolls in the form of a snake. Ingredients:

  • Bell pepper 3 pcs assorted
  • Olives 150 gr
  • Tomatoes 2 pcs
  • Cucumber 1 piece
  • Lettuce leaves
  • Chees Feta
  • Lemon juice
  • Olive oil

Preparation:

We make a base of lettuce leaves in small vases or bowls. Coarsely chop the tomatoes. Then cut the cucumbers into cubes and place them on top of the tomatoes. Cut the olives into rings and place them on the cucumbers. Cut the pepper into cubes. Salt, pepper, add basil, lemon juice and olive oil. Cut the feta cheese into cubes on top and decorate with olives, lemon and tomato slices.

A simple and delicious salad with avocado for the holiday table

A very hearty, spicy salad with beans, corn and avocado, ready in 10 minutes. It looks festive and bright.

Ingredients:

  • Canned beans 1 can
  • Canned corn 1 can
  • Avocado (ripe) 1 pc. (400 g)
  • Tomatoes 200 g
  • Red onion 120 g
  • Chili pepper 1 pc. (taste)
  • Cilantro bunch

Salad dressing:

  • Lemon (lime) juice 3 tbsp.
  • Olive oil 3 tbsp.
  • Garlic 2 cloves
  • Sugar 1 tbsp.
  • Salt 1 tsp (to taste)
  • Black pepper ½ tsp. (taste)

We are preparing the dressing. Squeeze lemon juice, garlic into the oil, add sugar, salt and pepper.

Cut the tomatoes into quarters. Thinly slice the onion.

Add finely chopped chili peppers, greens, and diced avocado to the salad.

Add beans and corn. Mix the oil dressing again and pour it into the satat. Mix carefully. You can garnish with a slice of lemon.

Before moving directly to salads, you need to understand who vegetarians are and what foods they eat.

Many consider this to be prejudice, but in fact, vegetarians are people who invest something more into the process of consuming food. Some of them preach a certain ideology, others consider vegetarianism a good diet. Opinions vary regarding the motivation that makes people give up meat, as does the interpretation of the concept of “vegetarianism.” One of them sounds like this:

“Vegetarianism is eating plant and animal foods and avoiding meat.” Some versions of this “diet” exclude the consumption of dairy products, but include eggs in the diet.

Many chefs call vegetarians people “with a different culinary religion.” And there are really many varieties of such teaching:

  • Lacto-vegetarians consume foods containing lactose (dairy), but avoid meat, fish and eggs;
  • Ovo-vegetarians - do not eat milk and meat, but eat eggs and honey;
  • Veganism is the strictest form of vegetarianism, excluding the consumption of animal products (including milk and eggs). Not synonymous with "vegetarianism".

Doctors say that such a diet should be balanced, because only in this way will the body receive benefits and not harm.

Advantages:

  • getting a large amount of vegetable protein and fiber;
  • refusal to kill animals.

Flaws:

  • disturbance of intestinal microflora;
  • protein deficiency;
  • hormonal imbalances, etc.

What to replace meat with?

What do vegetarians prefer to eat and how do they get the microelements contained in meat? The answer is simple: from vegetable protein. Here is a list of good alternatives to meat products:

Useful alternative

  1. Soy, which is at the top of the list of favorite foods for many vegetarians who have just begun this difficult path of changing eating behavior. Full of vitamins, minerals and fiber that help fight many diseases. If the taste seems strange at first, try the best soy products: tofu and natto.
  2. Hemp seeds and quinoa. Despite the fact that they seem to be just an addition to the main food, these are ideal protein foods. 180 g of quinoa contains 9 g of vegetable protein. According to doctors, these seeds should be on the plate of everyone who is looking for a meat replacement.
  3. Whole grains. An excellent source of protein, fiber and gluten, vitamins, minerals and antioxidants. Ideally, combine them with fresh vegetables or nuts for better absorption. So, you can get a real “bomb” of vitamins.
  4. Mushrooms are an excellent source of protein. Low in calories and perfect for a weight loss diet. Their only drawback is that they are difficult to digest, so you should not consume them daily.
  5. Cereals are rich in proteins and can completely replace meat. By the way, buckwheat has the maximum protein value among cereals (12%). In addition, they can be consumed by both children and pregnant women.

Dubious alternative

Very often, only when switching to vegetarianism, people begin to consume foods that only seem healthy at first glance. Nutritionists have identified 5 products that are the worst replacement for animal protein:

  1. Vegetarian burgers and nuggets without meat. They are semi-finished products that almost every vegetarian has in their freezer. However, their composition is very questionable: despite the soy meat, they are full of salt. For example, some companies' products contain up to 400 g of sodium per patty.
  2. Protein powder, a favorite of many athletes. Measurement is very important here: despite the fact that it is a good accelerator of muscle work, protein in this form cannot replace complete protein. Better are products with natural ingredients.
  3. Roasted salted nuts. Contain healthy fats that are coated with a large layer of salt. They do not bring any benefit to either the body or the figure. They contain a lot of carbohydrates. It is better to choose options that have not undergone heat treatment.
  4. Tofu meat. Despite its apparent usefulness, many manufacturers add huge amounts of salt to it.
  5. Cheese. A very nourishing and tasty product, in some situations it can replace meat. However, its key drawback is its high calorie content.

How to make the transition to vegetarianism at different ages?

Many vegetarian parents want to introduce their children to this diet. In addition to the benefits, such a transition may have certain consequences. The children's body has characteristics that are different from adults, and the lack of nutritional enzymes is especially difficult to bear. Plant foods are not a natural need of the body; a child on a vegetarian diet will constantly feel hungry. Doctors also note that vegetarian children experience underweight, poor health, decreased activity and poor resistance to various diseases. Therefore, it is worth allowing the child, already an adult, to choose his own type of nutrition.

Should you give up your beliefs about vegetarianism and start eating meat during pregnancy? According to doctors, during pregnancy women especially need protein, which is found in animal products. The main thing is to forget about your principles and listen to your body.

If an adult has firmly decided to become a vegetarian, then it is necessary to make a smooth transition from the usual diet to a new one. This way, the possibility of harming the body will be reduced to a minimum. A month after such a diet, you should pay attention to your own well-being: if it is positive, then you can continue to eat plant foods. However, if you are concerned about any ailments, it is better to consult a doctor immediately. This type of diet may not be right for you.

Delicious snack for the New Year without meat “Ratatouille”

Not quite a salad, but quite an excellent appetizer.

Ratatouille is a traditional Provençal dish. A simple step-by-step recipe will help you make this incredibly tasty dish.

Ingredients for the sauce:

  • Tomatoes – 900 gr
  • Pepper – 250 gr
  • Onion – 200 gr
  • Carrots – 200 gr
  • Celery stalk – 100 g
  • Chili pepper – 50 gr
  • Ghee butter – 40 g (can be replaced with butter)
  • Garlic – 2 cloves
  • Provençal herbs – 1 tbsp.
  • Salt – 1 tbsp.
  • Sugar – 1 tbsp.
  • Thyme
  • Basil

Top layer ingredients:

  • Zucchini – 500 gr
  • Eggplants – 500 gr
  • Zucchini – 500 gr
  • Tomatoes – 300 gr
  • Potatoes – 200 gr
  • Onion – 200 gr
  • Sweet pepper red, yellow, green – 150 g (3 pcs)
  • Olive oil – 60 ml
  • Salt – 2 tsp.
  • Thyme

Preparing the sauce:

Make slits in the tomatoes and pour boiling water over them for 10 minutes.

Puree the tomatoes in a blender.

Peel the peppers and place in the oven at 180°C for 20 minutes.

Fry onions, carrots and celery stalks in olive oil. Add ghee.

Pour in tomato puree and add bay leaf.

Peel the peppers, chop and add to the pan.

Add Provençal herbs.

Add garlic and chili pepper.

Cover with a lid and simmer over low heat for 60 minutes, then remove the lid and simmer for another 30 minutes.

Slice the vegetables thinly (3-5 mm). Salt the eggplants and zucchini and cover with water for 20 minutes.

Add thyme and basil, grind the sauce a little with a blender.

Place the sauce in the mold, arrange the vegetables, alternating the sequence

Add thyme, salt and pepper to olive oil. Drizzle seasoned oil over vegetables.

Cover the pan with foil and place in the oven at 160°C for 90 minutes.

Remove the foil and bake for another 40 minutes.

Serve hot sprinkled with Parmesan and parsley. Bon appetit!

  • Oil (olive, flaxseed, sesame or peanut – 1 tbsp;
  • Ground black pepper - a pinch;
  • Sugar – a pinch.

Preparation:

  • Grate the carrots on a coarse grater.
  • Peel the oranges. Cut into pieces and remove membranes.
  • Crush the nuts.
  • Mix all products. Drizzle with oil and juice. Spice up. If necessary, add malt.

Contains pepper. This ingredient makes the taste of the dish very bright and unusual. You can replace it with a pinch of ground coffee.
