To prepare mozzarella salad, tomatoes (200 g each) and 2 avocados are cut into large pieces. Next, the salad is mixed with a dressing based on olive oil (5 tablespoons), the juice of half a lemon, salt and pepper, and laid out on lettuce leaves. Fresh basil leaves are used for decoration.

Olivier without sausage and green peas - for lovers of original snacks

Not quite the usual presentation of the usual salad. Not only will there be no green peas, but the sausage will also be replaced with smoked chicken breast. Why not? because it turns out delicious and very satisfying. Even men will appreciate this version of a simple recipe.

What you will need:

  • Carrots, grated for Korean salads – 200 g.
  • 3 pre-boiled chicken eggs.
  • 2 cucumbers.
  • 100 g smoked chicken breast.
  • A couple of boiled potatoes.
  • 50 g mayonnaise.
  • Dill or parsley - for decoration.

For this Olivier recipe we will have fresh cucumber. However, if you prefer the classic, you can safely take the salty one.

How to cook

Cut the smoked breast into cubes and place in a bowl.

Cut the eggs into cubes and add them here.

Carry out the same manipulations with cucumbers and potatoes, add to the rest of the finished products.

Grate the carrots on a Korean salad grater. Mix all ingredients well. Then add salt and pepper and mix again.

  2. Onions are sautéed in olive oil until tender. At the end of cooking, white wine vinegar (3 tablespoons) is poured into the frying pan, a tablespoon of grainy mustard and a teaspoon of sugar are added. The contents of the pan are brought to a boil and poured over the potatoes in a bowl.
  3. A little fresh dill, salt to taste and finely chopped sun-dried tomatoes are added to the meatless salad. Serve the dish immediately, before the potatoes have cooled.

Olivier salad without sausage and mayonnaise - almost a classic recipe

Our first recipe will be the simplest. Here we will use vegetables that we always have on hand. And we will replace the harmful mayonnaise dressing with 10% sour cream and 33% cream, mixing them with herbs.

What you will need:

  • Potatoes – 500 g.
  • A can of canned green peas.
  • 200 g carrots.
  • Pickled cucumbers – a couple of pieces.
  • Onion head.
  • 4 chicken eggs.
  • Cream 33% - 150 ml.
  • Sour cream 10% - 60 g.
  • Fresh dill - a couple of sprigs.
  • Salt – a pinch.
  • Ground black pepper - a pinch.

Carrots and potatoes must be washed, peeled and boiled until tender. Then cool. If you have ready-made vegetables, you can make a salad in literally a matter of minutes.

How to cook

Boil the eggs. They must be placed in cold water, put on fire and after boiling, hold for 8 minutes. Place under running cold water, cool, and clean.

Peel, wash and cut the onion into cubes.

Peel the eggs, cut into small cubes.

Cut the boiled potatoes into small slices.

Cut the pickled cucumbers as finely as possible, or you can grate them.

Do the same with carrots. Chop the dill, but leave one sprig for decoration.

Combine all prepared products in a salad bowl.

Open the can of peas, drain the water, and add to other foods.

This salad will be appreciated by vegetarians and all mushroom lovers. For its preparation, fresh or frozen honey mushrooms, porcini mushrooms, chanterelles or more affordable champignons are used.

Mushroom salad without meat is prepared in the following sequence:

  1. Thinly sliced ​​mushrooms (450 g) are fried until tender. As soon as all the liquid has evaporated, the mushrooms are moved to the edge of the pan, and a piece of butter (15 g) and finely chopped shallots are placed in the center. When the onion becomes transparent, mix it with mushrooms, add salt, pepper and 60 ml of dry white wine. Fry the mushrooms and onions until the liquid has completely evaporated.
  2. Beat 100 ml of olive oil with a mixer with balsamic vinegar (3 tablespoons), Dijon mustard and honey (2 teaspoons each). The sauce should be thick and smooth.
  3. Place clean lettuce leaves in a deep bowl, add warm mushrooms and dressing on top. The salad is mixed and sprinkled with chopped goat cheese.

Lenten Olivier without sausage, but with mushrooms - when you want something else

If you don’t like salads with sausage, but quite like them with mushrooms, then this Olivier option will become your favorite. Delicious, satisfying, very appetizing with the unique taste of champignons - what could be better!

What you will need:

  • 2 large boiled potatoes.
  • One carrot.
  • 5 pickled cucumbers.
  • A pair of chicken eggs.
  • 100 g champignons.
  • Vegetable oil for frying.
  • Half a can of canned green peas.
  • Green onion.
  • Salt.
  • Pepper.

Instead of champignons, you can use any other mushrooms to your taste. They can be either pickled or fresh – whoever likes what you prefer.

How to cook

Potatoes, pre-boiled and cooled, cut into small cubes. Do the same with carrots (boiled), pickled cucumbers, and eggs.

Proceed with mushrooms as follows. Cut into slices, pour oil into the pan and fry until fully cooked along with the onion. If necessary, you can add salt. After frying the mushrooms, be sure to cool and drain the oil - there is no need for excess fat in the salad.

Place the finished products in a salad bowl, add green peas, drain the marinade, mix, taste for salt. Add salt if necessary and sprinkle with ground black pepper for taste.

Holiday salads without meat

For special occasions, hearty salads with meat and mayonnaise are most often prepared. It is believed that high-calorie dishes will definitely not leave guests hungry. We suggest preparing the following holiday salads:

  1. Greek classic. Traditionally, coarsely chopped tomatoes (0.5 kg), thin slices of cucumber (0.4 kg), large bell pepper strips and onion half rings are added to this salad. All ingredients are thoroughly mixed and combined with a dressing of olive oil (5 tablespoons), juice of ½ lemon, salt and pepper. On top of the salad are diced cheese (200 g) and large pitted olives.
  2. French salad with mayonnaise. Vegetarians will definitely appreciate this salad. It is prepared similarly to the famous New Year's salad, but without adding meat. The bottom layer is boiled potatoes (7 pcs.), grated on a coarse grater. The top is compacted with a spoon and greased with mayonnaise. The next layer is finely chopped champignons (200 g), fried in vegetable oil with onions. Coarsely grated eggs (3 pieces) are placed on top of the mushrooms, which are also greased with mayonnaise. Finally, the salad is sprinkled with cheese (100 g) and smeared with mayonnaise. You can decorate the salad with grated yolk or herbs.

Processing the ingredients

As you can see, the presented salad without meat and sausage includes a rather modest set of ingredients. But this does not mean that it turns out less satisfying than an appetizer using ham or chicken breasts.

Before you start creating such a dish, you need to open a canned jar of champignons, pour out all the brine, and chop the product into cubes or strips. You also need to get olives stuffed with lemon and cut them into circles. As for green leaf lettuce, it should be rinsed in cool water and then coarsely chopped or simply torn by hand.

Summer salad with Greek yogurt

Meatless salad with green beans is prepared as follows:

  1. Fresh green beans are cut into 2.5-3 cm lengths and boiled for 3 minutes. Then it is immersed in ice water for a couple of minutes, after which it is dried on a paper towel.
  2. Prepare a salad dressing from olive oil (50 ml), lemon juice and balsamic vinegar (3 tablespoons each), salt, garlic powder and ground mustard (¼ teaspoon). The finished dressing is cooled in the refrigerator for an hour.
  3. In a deep bowl, mix green beans, cherry tomatoes cut in half (450 g), red onion and feta cheese (100 g). Top the salad with chilled dressing and serve.

How to cook Olivier without meat and sausage - vegetable version

The famous Olivier can be prepared without sausage, and even without meat. This vegetarian option will appeal to those who don’t want to gain extra pounds over the holidays and then fight them off. Moreover, it only takes a short period of time to prepare this dish.

What you will need:

  • 3 large potatoes.
  • One carrot.
  • 2 chicken eggs.
  • Half a head of onion.
  • 3 pickled cucumbers.
  • A can of canned peas.
  • Salt - a pinch.
  • Ground black pepper - a pinch.
  • Mayonnaise – 50 ml.

The specified amount of products is enough to prepare a salad for 4 servings. If there are other dishes on the table, it will definitely not go unnoticed.

How to cook

Wash the potatoes and carrots and boil without peeling until fully cooked. Then let it cool and peel.

Boil chicken eggs for at least 10 minutes so that they are not liquid inside. Place under cold water and clean.

Peel the onion, wash and cut into 2 parts. We only need one half.
