Vinaigrette without cabbage - a juicy salad with amazing acidity

Home Salad Vinaigrette

Vinaigrette without cabbage with substitute ingredients is no less popular and appetizing than with salted or sour cabbage. It can be decorated so impressively that it will outshine all other dishes on the table.

The vinaigrette looks bright because of the beets and carrots included in its composition. It will look even more beautiful if there are contrasting colors - yellow corn, young green peas or greenery. It is decorated with lettuce leaves, sprigs of dill or parsley.

Instead of cabbage, pickled mushrooms, more pickles or pickled apples are added to the vinaigrette. They also make a vinaigrette with fresh apples and cucumbers. Beans, fish or meat products are often added to the vinaigrette.

The taste of the vinaigrette largely depends on the dressing. Vegetable oil is most often used. Finely chopped herbs, mustard or lemon juice, and sometimes soy sauce are added to it. Vinaigrette can be served as an independent appetizer or as a side dish.

To prepare the vinaigrette, choose medium-sized beets of the salad variety. It is brighter, contains more vitamins, and tastes better. Carrots with a red-orange hue are healthier than those with a yellow-orange color. Boil vegetables separately. They have different cooking times. It is better to bake vegetables, this way more nutrients are preserved.
