This quick recipe for cooking cabbage soup will be very useful to you at the dacha or on a hike; they can also be prepared at home. Delicious summer cabbage soup with stew cooks much faster than if you cook it with meat

Step by step recipe

Prepare potatoes and cabbage. Peel the potatoes and cut into small pieces. Finely chop the cabbage.

Let the potatoes and cabbage cook. Pour the chopped potatoes into a 3-liter saucepan, pour boiling water about 4-6 cm below the edge of the saucepan and bring to a boil. Place cabbage in boiling water, stir, bring to a boil, cover and reduce heat.

Prepare a fry of onions, carrots and tomatoes. Open a can of stew, place the fat in a cold, dry frying pan and melt over medium heat. While the fat is melting, peel the onion and cut into small cubes. Place the onion in the melted fat, stir, reduce heat and cover with a lid. Peel the carrots and grate them on a coarse grater or cut them into thin strips. Pour the carrots into the onions, mix, cover and simmer, stirring occasionally. While the onions and carrots are stewing, finely chop the tomato. When the carrot pieces can be easily broken with the edge of a spoon, pour the tomato into the frying pan, stir and simmer until the tomato turns into a homogeneous red mass. Remove the frying pan with the finished frying from the heat and leave it under the closed lid.

Check the readiness of potatoes and cabbage. When the potato pieces can be easily mashed with the back of a spoon on the side wall of the pan, and the cabbage pieces can be easily broken off with the edge of the spoon, you can continue.

Place the stew and fry into the cabbage soup. Stir, bring to a boil, cover with a lid, reduce heat and let simmer for 2-3 minutes.

While the cabbage soup is cooking, chop the onion and dill.

Add onion and dill to the cabbage soup and add salt. First, pour the onion and dill into the cabbage soup, stir, taste for salt, add salt as needed, stir again, bring to a boil, cover with a lid, reduce heat, let simmer for 2-3 minutes and remove the pan from the heat.

The first step is to boil the chicken along with the whole onion. Then pour the chicken broth into the pan where you plan to cook the cabbage soup. Place on medium heat. Add sauerkraut. If cabbage was fermented together with carrots, then carrots should not be added separately to the soup.

Cut the potatoes into cubes and cook the soup until done. Leave to simmer for a while, then add spices to taste. Don't forget that you added sauerkraut, so don't overdo it with salt.

How to cook cabbage soup from fresh cabbage with stewed meat

1. Peel the potatoes, cut them lengthwise into 4 slices, then cut them into cubes and chop them into small cubes. Heat 1.5 liters of water.

2. Cut the tomato into cubes, cloves of garlic - finely, onions - not very finely, grate the carrots coarsely.

3. Place the prepared potato cubes and bay leaves into a saucepan with water and cook at medium temperature while we prepare other vegetables.

4. Open the can of stew, put the congealed fat in a frying pan and, if there is not enough of it, add oil. The less fat, the more oil.

5. Place the prepared carrots and onions in the fat and butter, cover and fry over low heat for 6-8 minutes until reduced in volume.

6. Cut the cabbage into strips or squares.

7. Place it in a saucepan with potatoes and add a little salt. Cook over low heat.

8. Add tomato cubes, chopped garlic and tomato paste to the fried onions and carrots. Stir and simmer at medium temperature, stirring, for 2-3 minutes. The tomato should release its juice and become soft.

9. Place the aromatic vegetable mixture in a saucepan and cook the vegetables until all are soft. It will take 10-15 minutes. If we are preparing a dish from late varieties of cabbage, then increase the time to 20-25 minutes.

10. Place the pieces of stewed beef on a plate and use a fork to separate them along the fibers into medium pieces.

11. Place the pieces of beef and jelly that is in the jar into the pan.

12. Add chopped dill, ground peppers, cook at low temperature for 2-4 minutes and taste for salt. During this time, the meat will release all its flavors to the broth and the cabbage soup made from fresh cabbage will turn out very tasty.

13. Remove the thick, aromatic cabbage soup with stew and fresh cabbage from the heat and serve in deep bowls with homemade buns, flatbreads or white crusty bread. To add sourness, you can supplement them with a thin slice of lemon, and for taste with sour cream or mayonnaise.
