Our new competition, Our Grandmother's Recipes, has stirred up memories for me. I myself have been a grandmother for a long time, but lately I’ve been remembering my grandmother - after all, she raised me, I didn’t go to kindergarten while my grandmother was alive. It's a pity that my grandmother passed away when I was 5 years old. How many memories could you carry over your own long life? Not many, but they are there.

I often try again and again to remember what it was about our food that my grandmother spoiled me with. And only two favorite delicacies remain in my memory (let me remind you - this was the beginning of the 50s, only the first few years passed after the end of the war).

The first is a piece of white bread, spread with butter and sprinkled with granulated sugar on top. Nothing was tastier - although in those years both bread and butter were indeed tastier than they are now.

And the second thing I remembered was this kind of homemade “chocolate”: a mixture of cocoa powder and sugar, which my grandmother made when she brewed cocoa as a drink. I loved this dry sweet powder more than the cocoa drink.

Everything is so modest, without any frills. There were no super dishes in those years; everyone was glad that there was plenty of bread, that there was milk and butter.

But time passed, I grew up, became a mother, and sometimes my children dined with their grandmother. My mother was not a big cook - she had neither the time nor any special desire for it. But there were still some dishes that the children remembered and then asked them to do something “like grandma’s.”

You will need oatmeal (soup is also made from cereal, but this is completely different), onions, carrots, potatoes, tomatoes, salt. You can - spices to taste, milk, herbs, crackers.

Preparation

For oatmeal - both for soup and porridge - we use only cold water (and not boiling water, as it was written on the Hercules box, which I remember from childhood).

Place the flakes in cold water over low heat so that the heating proceeds slowly. When they boil, turn down the heat. And let our flakes boil thoroughly so that the oat mucus stands out.

Now add the onion (who doesn’t like boiled onions - whole, so you can take them out later, those who like - chopped).

Next - carrots. And here there is a small nuance that we discovered experimentally: carrots must be grated and not cut with a knife. On a coarse grater, you don’t need to grind it too much either.

After a while, when our brew boils a little more, we send in the potatoes, cut into cubes. It will be better if the cubes are smaller.

And when the potatoes are almost ready, add a tomato to the soup (without the skin, of course), which also needs to be grated on a coarse grater.

Boil again, add salt and turn off. And it’s good if this soup sits a little longer before lunch. You can add fresh herbs. Season with sour cream or butter - to taste.

If someone likes it with milk, you can add a little milk. If the soup turns out to be liquid, small homemade croutons are perfect for it.

This soup is healthy (the benefits of oatmeal have been proven by scientists), dietary and tasty.

My grandchildren, who grow up in a time of abundance, like all children, are spoiled by food and eat first courses rather poorly, but they treat this family miracle well and always willingly eat oatmeal soup, which now grandfather cooks best of all.

We suggest preparing oatmeal soup for lunch. This soup is quite nutritious, filling and flavorful. The main set of vegetables is potatoes/carrots/onions, we suggest adding them without fail, but as for champignons, it’s a matter of taste. You can use any mushrooms, or you can do without them at all. You can also make oatmeal soup with turkey or chicken broth, but we offer a leaner and lighter option. At the end of cooking, a generous handful of chopped herbs is certainly added to the soup. You need to take your favorite oatmeal. So, we suggest going to the kitchen and cooking an unusual soup for lunch.

  • Oatmeal 2 tbsp.
  • Water 1.5 l
  • Potatoes 2 pcs
  • Carrot 1 piece
  • Onion 1 piece
  • Champignons 3 pcs
  • Butter 30 g
  • Salt 0.5 tsp
  • Ground black pepper 0.3 tsp.
  • Parsley (greens) to taste
  • Vegetable oil 1 tbsp

Prepare the entire vegetable set - peel young potatoes with a stiff brush, do the same with carrots, wash mushrooms and young onions in cool water. If desired, remove the top layer from the champignon caps. Dry the vegetables.

Take a frying pan, heat it on the stove and set the burner to medium heat. Literally pour in a spoonful of oil. Chop the prepared vegetable set - choose the cutting method that is more preferable for yourself.

Fry the vegetables for five to six minutes until the first golden brown crust appears. You don't need to fry it too much, but don't simmer it either. At the same time, boil approximately 1.5-1.6 liters of clean water. It is better to cook such light soups for one, maximum two times.

Place the browned vegetables in hot water and cook for about 8 minutes. In addition to this vegetable set, you can always use ingredients that are on hand. So, for example, you can add young green peas or corn to oatmeal soup. It will also be delicious with green beans or broccoli, in general, it all depends on your preferences for vegetables.

At the end of cooking, pour oatmeal into the pan. Stir and simmer the soup for just two minutes. But here also look at your oatmeal, if it is flakes - 2-3 minutes is enough, if it is whole grain oatmeal - you need to cook it according to the recommendations on the package. Add salt and pepper to taste, you can also add a pinch of paprika or your favorite spices.

At the very end, add a small piece of butter to the soup. Stir and take a sample, if necessary, adjust the taste to the desired level.
