Millet kulesh with homemade stew

Kulesh (kulish) is a very famous dish of Ukrainian cuisine. The Zaporozhye Cossacks spread and popularized this dish, preparing it in the field over a fire during their military campaigns. That is why kulesh has a second name in Ukraine, which is no less popular: field, camp porridge.

This is precisely porridge, and not soup, as some cooks mistakenly believe, not understanding where it came from and why it could not have been too liquid (like soup) in those field conditions. Therefore, kulesh, unlike soup, is quite thick, and its consistency is something between the consistency of very thick borscht and ordinary thick millet porridge.

Since kulesh had to be prepared on the field, very quickly and from available products, it consists of millet, potatoes, frying and herbs. And also what the Cossacks managed to get that day: fish, game, meat, mushrooms, poultry. Each Cossack constantly carried a linen “bag” with millet, as well as a piece of salted lard, with him, tied to the saddle of his horse. Therefore, he could prepare himself a hearty and tasty lunch when the need arose, without depending at all on the general supply of food and on other Cossacks.

Today we will prepare the fastest, but nevertheless very tasty version of kulesh with stew.

Helpful Tips and Tricks

  • • Don't be afraid to add all kinds of spices. Slavic kulesh goes well not only with black pepper, but also with oriental, Caucasian spices, Italian herbs, and aromatic roots.
  • • If you need to prepare a low-calorie version of kulesh, the easiest way is to replace the lard with olive oil, reducing the amount. Boiled potatoes and cereals with broth will have little energy value.
