Many people think that when preparing meatballs or cutlets, catering workers add soaked loaves to the minced meat. This is not true: they add it instead of minced meat. But we will not abandon this Soviet invention, otherwise the meatballs will turn out to be rubber, and if they fall off the table they will funny jump on the floor. You won't believe it, but you can even add water to the minced meat! The main thing is to beat him off well. Yes, just like dough! Have you ever beaten dough? You can also add boiled rice, finely chopped onion and garlic to the minced meat. I have no doubt there was a lot of minced meat. Our natural laziness forces us to make large meatballs - this way there is less fuss. We need to fight this. Using a tablespoon, “pinch” equal portions of minced meat and place these ugly pieces on a table sprinkled with flour. Never use breadcrumbs! Flour or crackers are a qualifying feature that distinguishes meatballs from cutlets (except for stewing in gravy, of course).
Now these small pieces need to be rolled in your palms. The process is long and tedious, so you can chant mantras or remember the multiplication table by nine. Having rolled them in flour, place them on a large flat plate in the amount calculated by the formula (4mx Q) + 4m+ 3, where n is the number of eaters, Q is the additive coefficient, m is unexpected guests, 3 is a visit to the refrigerator at one in the morning.
There are still blanks left, so we put them in a polystyrene container (from minced meat) and put them in the freezer.
Sauce. Not to be confused with table gravy (a source of heartburn), which is prohibited by the Geneva Convention relative to the Treatment of Prisoners of War. Have on hand: onions, cream or sour cream, flour, broth, spices, deep frying pan (wok possible), blender. We don’t use tomato paste as a matter of principle. Firstly, a tomato is for a cook like cocoa for a cook: add it everywhere and you will hide any shortcomings in taste. Secondly, modern tomato pastes with vinegar and enhancers will not allow you to enjoy the delicate taste of meatballs. For the future: if tomato sauce is so necessary, make it yourself from store-bought tomato juice, boiling it in a saucepan over low heat, adding spices.
Fry the flour in a dry frying pan. As soon as the flour has browned, pour in the broth, cream, and spices, stirring continuously. Add sour cream. In another frying pan, fry finely chopped onion until golden brown, you can even chop fresh champignons here. Mix our simple sauce with this delicious roast and grind in a blender.
Unfortunately, most men practice only three methods of cooking: cooking less than necessary, cooking longer than necessary, and frying with special effects (splashes of fat and smoke). I'll have to learn how to stew. Like in that joke:

Garnish. Excluding French fries and buckwheat, it can be anything: mashed potatoes, boiled vegetables, porridge, even pasta.
