- While the base is coming up, scald the washed dried fruits with boiling water, and after a quarter of an hour pass them through a meat grinder. If the dried apricot filling for the pie turns out to be sour, you can add sugar to taste.
- Knead the yeast dough. You may need a little more flour than indicated in the list of ingredients.
- We divide the base into two unequal parts, the larger of which we place in a heat-resistant container with high walls so that the dough hangs slightly over the edges.

To work you will need these components:
- butter briquette;
- a couple of glasses of granulated sugar;
- 4 eggs;
- 120 ml milk;
- 650 g flour;
- 220 g of dried apricots and the same amount of prunes.
Preparing a pie with dried fruits:
- We wash the dried fruits, add hot water and leave to stand.
- Crumble the butter with a knife and grind it with granulated sugar. You can do this using a blender.
- Add the egg yolks one at a time. You cannot beat in the next one until the previous one has completely “eaten” the dough.
- Pour in the milk, add flour, knead the stiff dough and leave it, covered with cling film, for about 20 minutes.
- While the dough is resting, drain the liquid from the dried apricots and prunes, and, if necessary, chop the dried fruits with a knife or meat grinder. You can add a little sugar and sprinkle the filling with cinnamon.
- Separate 2/3 of the dough, roll it out and place it on a greased tray.
- Distribute the filling evenly and place the dish in the oven for 20 minutes.
- While the pie is baking a little in the oven, beat the whites with sugar into a strong foam.
- We remove the dessert from the baking cabinet, carefully pour the protein mixture over the top, and tear the remaining dough with our hands and evenly cover the pie with it.
- Place the pan back into the oven until the top is golden brown.
You don’t have to cut the pie right away; the protein mass must harden a little, otherwise it will spread.
