Cherry is a seasonal berry and, unfortunately, its shelf life is short. Although fruiting lasts for almost two months and you can enjoy fresh berries from mid-June until almost September. But, fortunately, cherries freeze well and defrost just as well, after which they do not leak or spread.

Therefore, both in winter and spring, when vitamins are scarce, you can easily prepare dumplings or bake a pie from frozen cherries, and it will taste little different from the summer version.

So, always during the season, do not be lazy to pit and freeze one and a half to two kilograms of cherries in portions in bags or plastic blisters - depending on the number of family members. Then in winter it’s enough to take out the dough, defrost it, prepare the filling and bake a quick, tasty and aromatic pie - to the delight of your loved ones and guests.

Important point! To freeze, do not take the first harvest of cherries - they are very juicy. It is better to take from the second wave, large, dense, from which the seeds are easily removed.

There are many recipes for pies, but first, we will tell you how to prepare frozen cherries for the pie so that it is not sour, wet and bakes well.

Cherry pie with kefir

For flavor, add a pinch of cinnamon and vanilla sugar to the dough.

You will need:
5 eggs, 2 cups flour, 1 cup sugar, 1 cup kefir, 1 tsp.
soda, 400 g cherries, 2 tbsp. semolina, 50 g butter. Preparation:

Beat eggs with sugar and, continuing to beat, add kefir. The next step is slaked soda, and then sifted flour. Grease a baking sheet with oil and sprinkle with semolina, lay out the cherries and pour the dough evenly. Bake for 45 minutes at 180 degrees.

Curd pie with cherries

Decorate the top of the open pie with a beautiful mesh of dough.

You will need:
3 eggs, 50 g butter, 300 g cottage cheese, 7 tbsp.
flour, 100 g of powdered sugar, a pinch of salt, 100 g of cherries, a pinch of soda. Preparation:

Mix the eggs with salt, add melted butter and half the cottage cheese. Stir and add 2 more tbsp. powdered sugar, and then flour. Put the dough in the refrigerator for 15 minutes, in the meantime, mix the cherries with the remaining cottage cheese and powdered sugar.

Pinch off a small piece and place the rest of the dough in a mold with sides and bake it for 10 minutes at 180 degrees. Place the curd filling, cover it with beautiful strips of dough and bake the pie for another 25 minutes.

Sour cream pie with cherries and almonds

If desired, add other nuts, dried fruits or even candied fruits.

You will need:
100 g butter, 100 g sugar, 175 g flour, 80 g sour cream, 2 eggs, 50 g chopped almonds, 1 tsp.
baking powder, a pinch of salt, 150 g cherries. Preparation:

Using a whisk, mix the eggs with sugar, salt, sour cream, softened butter and almonds. Stir in the sifted flour and baking powder and knead the dough to the consistency of thick sour cream. Pour it into the mold and lightly drown the cherry.

A little more almonds, 1 tbsp. sugar, 1 tbsp. butter and 2.5 tbsp. Grind the flour into crumbs and sprinkle the pie on top. Bake it at 180 degrees until a beautiful golden color.

Fried kefir pies with frozen cherries

This is a very simple dough recipe that doesn't even contain yeast. It is prepared quite easily and quickly. At the same time, pies with cherries turn out to be very airy, tender, with an appetizing crispy crust, a soft inner part of the dough and a juicy sweet and sour filling.

Additionally, take flour to knead the dough. The cherries in the recipe are already pitted, and it is better to defrost them in advance. Do not make all the pies at once - it is better to form as many as will fit in the pan, as the cherries may leak.

You will need for the test:

  • kefir – 500 ml;
  • flour – 800 gr.;
  • chicken egg – 2 pcs.;
  • vegetable oil – 3 tbsp. l;
  • sugar – 1 tbsp. l.;
  • soda – 1 tsp;
  • salt – 1 pinch;
  • vegetable oil for frying.

You will need for the filling:

  • cherry – 500 gr.;
  • sugar to taste.

Cooking stages.

Pour room temperature kefir into a deep bowl. Add baking soda and stir.

Then add salt and sugar and stir again. Beat in the eggs and mix with a whisk.

Pour in vegetable oil. Stir. Then sift the flour in several stages, kneading the dough.

Knead a dense but soft dough with your hands - you need to knead for about 5 minutes. Cover and leave for half an hour.

The cherries need to be thawed and the juice drained. To do this, keep it in a sieve.

When the dough has rested, sprinkle the counter with flour and divide the dough in half. Place one part back in the bowl, covering with film. Roll the second part into a sausage.

Cut the sausage into approximately equal pieces.

Take a piece and roll it into a flat cake. Place the filling in the center and sprinkle with sugar.

Seal the ends and turn the pie over, seam side down. Press down lightly. Repeat with all blanks.

Pour vegetable oil into a frying pan and heat thoroughly.

Place the pies in it and fry until golden brown on all sides over low heat.

Place the finished pies on paper napkins to allow excess oil to drain.

Cherry and mascarpone pie

This Italian pie is best eaten not just cold, but cold.

You will need:
200 g flour, 70 g butter, 50 g sugar, 100 ml water, 200 g mascarpone, 100 g powdered sugar, 20 ml cream, 2 tsp.
baking powder, cinnamon, 200 g frozen cherries (do not defrost). Preparation:

Grind the softened butter with sugar and mix with flour. Add warm water and cinnamon, knead the dough without lumps with the consistency of thick sour cream.

Separately, mash the mascarpone and mix it with cream and powdered sugar. Combine both masses, add baking powder and pour half of the dough into the mold. Lay out the frozen cherries, pour on the second layer and bake for half an hour at 200 degrees.

You will need:
1 egg, 0.5 cups sugar, 1 cup flour, 0.5 tsp.

Grind the yolk with warmed butter and half the sugar. Add sifted flour with baking powder and knead the shortbread dough. Place it in a mold, make sides, make a couple of punctures and put it in the refrigerator.

100 g flour, 150 g sugar, 200 g oatmeal, 330 g cherries, 5 eggs, vanilla.

Pie with cherries in chocolate glaze

For the dough:
200 g butter, 4 eggs, 150 g powdered sugar, 10 g baking powder, a pinch of salt and vanillin, 130 g flour, 2 tbsp.
cocoa, 200 g cherries. For cream and glaze: 200 g sour cream, 50 g powdered sugar, 20 g cocoa, 30 g sugar, 40 g butter, 2 tbsp. milk.

Preparation:

Beat eggs with butter and powdered sugar until fluffy. Add the sifted flour and the rest of the dry ingredients, divide the dough in half, and add cocoa to half. Pour the light dough into the mold, lay out some of the cherries, pour in the dark dough, and then pour in the rest of the cherries.

Bake the cake for 40 minutes at 180 degrees, and then cool without removing it from the pan. Beat the sour cream with powdered sugar until fluffy, and heat the milk with sugar and cocoa separately. When the glaze is smooth, remove it from the heat and add the butter. Grease the pie with sour cream and randomly decorate with glaze.
