  2. Add kefir to the dry mixture (it should be at room temperature).
  3. Knead the dough. Form it into a ball and leave it under the film for 20 minutes.
  4. Boil the potatoes. Mash into a puree. Add butter, 1 egg and finely chopped onion.
  5. Roll the dough into a sausage. Cut it into flatbreads. Roll out each of them thinly. Place 2 tablespoons of filling in the center. Pinch the edges into an accordion - make the tucks at the same distance.
  6. Add the yolk and a pinch of salt to the sour cream. Lubricate the gates.
  7. Bake for 20 minutes at 190°C.

From rye flour

  • rye flour, wheat flour – 130 g each;
  • egg – 2 pcs.;
  • butter – 120 g;
  • salt - to taste;

  2. Next, both types of flour are poured into kefir and salt is added.

  4. You should get an elastic, dense mass. The lump is wrapped in cling film and left for 15 - 20 minutes.
  5. Then the dough is made into a rope. It is cut into 14 parts.

1. Wickets are prepared in different sizes, but almost always of the same shape. They can be 4, 5 or even 7 coal. First, mix baking powder, salt, flour and warm milk.

2. I used two types of flour. If you don’t have rye, you can use crusts from rye bread by soaking them for 15 minutes in warm water. After softening, you need to remove excess water and add the resulting mass to the main wheat flour. You need to knead the dough for about 15 minutes so that it does not stick to your hands. Then let it sit for about half an hour.

3. The dough turns out very elastic. Once you have practice making wickets, you will be able to feel the dough.

4. Meanwhile, boil the potatoes in their jackets. Please note that the puree, the filling for the gates, is prepared from just such boiled potatoes.

5. Do not add water or milk to the puree, but only one or two tablespoons of oil.

6. Now comes the most important stage... Cut the finished dough into strips, rolling them well. After this, divide the strip into equal balls, roll each of them out.

7. I made an oval shape, and the thickness of the dough was like pies. After the puree has cooled a little, you can sculpt the gates: place a tablespoon of filling on each slate (if desired, you can add an egg to the puree before beating). The edges need to be pinched or folded, leaving the middle open.

8. Grease a baking sheet with vegetable oil and place the gates on it. I greased the surface of each gate with yolk beaten with a few tablespoons of milk. You can also grease it with salted sour cream - but this is a matter of taste.

9. The gates are baked in the oven for about 20 minutes at a temperature of 180 degrees. As soon as you remove from the oven, brush the edges and surface with butter.
