- You need to gradually add flour and baking powder to the mixture, passing the ingredients through a sieve.
- Now you should knead a soft dough. It should be thick and homogeneous. It also does not stick to your hands. The dough comes away from the sides of the bowl easily. If it blurs, you should add more flour.
- To achieve the desired consistency, the dough must rest. Cover the bowl with the dough and place it in the refrigerator for 30 minutes.
- The cottage cheese filling can be prepared while the dough is infusing.
- In a bowl, mix cottage cheese, 80 g of sugar, vanilla sugar, sour cream, flour and egg. Mix all ingredients thoroughly until smooth.

You can keep it in the refrigerator for several days and bake the items as they disappear. The dough can be frozen. The taste of the baked goods does not deteriorate at all after these manipulations. When the hour comes, you just need to take the dough out of the freezer and prepare the juices.
Ingredients:
- butter – 70 g;
- high fat sour cream – 4 tablespoons;
- flour – 400 g;
- sugar – 1 glass;
- egg – 1 pc.
- salt and soda - a pinch each.
Preparation:
1. In the bowl of a food processor, mix sour cream with sugar, then add the egg.
All products should be at room temperature.
2. Add butter to the resulting mixture and continue whisking.
3. Add 2/3 of the flour. Beat at medium speed. Remove the dough from the whisk and place it on a floured surface.
4. Knead the dough by hand so that it remains soft, but sticks well to your hands.
That's it, the dough is ready. It must be divided into portions and put into bags. If you need to prepare the juices right away, the dough should rest in a cool place for about 20 minutes.
Dietary curd sochni with banana (PP recipe)
The recipe for classic juicers is a good basis for the PP version. In shortbread dough, you can replace some of the flour with oatmeal, whole grain or corn. And take as a basis the recipe that contains eggs, which means less fat. It’s even easier to make the filling healthy: for sweetness, you can add honey, dried fruits or banana, and choose low-fat cottage cheese.
Ingredients:
- butter – 100 g;
- bananas – 2 pcs.;
- powdered sugar – 1 tbsp. l.;
- egg – 1 pc.;
- whole grain flour – 50 g;
- wheat flour - about 250-300 g (to the desired dough consistency);
- low-fat cottage cheese – 200 g.
Cooking steps:
1. Mash one banana with a fork, add egg, powdered sugar, butter and mix.
2. Gradually adding flour, knead the dough. The consistency should be like sand, just slightly crumbly (not sticky).
3. For the filling, grind banana with cottage cheese.
Form products. It will be unusual to work with such a test. If you make blanks on a work surface, then it is better to transfer them to a baking sheet with a spatula so that they do not fall apart. Bake as usual for 20-30 minutes at 190 degrees.
Sochni with raisins
Instead of raisins, you can take dried apricots or prunes, it turns out very tasty!
Mix 2.5 cups of sifted flour with 1 tsp. soda, add one stirred egg, 100 g of butter, a glass of sugar, ¾ glass of sour cream and a pinch of salt. Knead the dough until it is slightly sticky to your hands. Make the filling from 200 g of cottage cheese, 1 tbsp. l. sugar, 150 g of soft raisins, chopped dried apricots, prunes or dates.
Roll out the dough, cut out flat cakes with a glass, add a teaspoon of filling and fold in half. Bake the juices for half an hour at 220°C on oiled baking parchment.
