Sochni with cottage cheese: very tasty and tender cottage cheese sochni at home

Sochniki with cottage cheese, milk shortcake and a ring with nuts - oh, how delicious it is! I probably won’t exaggerate if I call these confectionery products iconic for an entire era...and forever. For an adult today it is a taste of childhood, for young people it is something real that parents so dreamily remember.

You can prepare this pastry at home. There are no exotic ingredients in the recipe; the only equipment required is an oven, a rolling pin and the hands of a cook. Sochniki with cottage cheese, prepared at home, turn out no worse than store-bought ones. And even better. To prepare them, quality products are selected, not a mixture of powders with the letter “E”, and they are made with love.

I often make these for the kids to take to school as a snack. And adults can drink coffee during their break with delicious homemade cakes. In any case, sweets are rich in carbohydrates, which in this case is good (if without fanaticism) - the brains of schoolchildren and workers will have something to nourish. But unlike the popular stuffed bear, the sochnik also contains cottage cheese, that is, protein. Let's compare: a bear contains 5 g of protein, 15 g of fat and 60 g of carbohydrates. And the juice contains 10 g of protein, 15 g of fat and 35 g of carbohydrates and not a single gram of chemicals.

Only the first time it seems that this is a complex pastry. An experienced housewife spends minimal active time preparing them. The dough is simple and manageable. There is no way that it won't work out. The dough always turns out! And the filling in this pastry is even simpler.

The only condition is that for success you need only high-quality products. In particular, cottage cheese must be natural. Cottage cheese from a vegetable surrogate will leak out during baking.

Curd juices at home in the oven - the easiest recipe to prepare

Homemade juices are not just tasty, but also healthy. Knowing a few professional chef secrets, you can prepare baked goods filled with pure cottage cheese, without starch and semolina. Cottage cheese lovers will love this option.

By the way, in different regions this wonderful delicacy has slightly different names. Somewhere it’s sochniki, and somewhere (for example, in St. Petersburg) it’s sochni (one thing is sochny).

Ingredients:

  • margarine (or any other cooking fat) – 150 g;
  • granulated sugar – 150 g;
  • sour cream – 0.2 kg;
  • flour - about 0.5 kg;
  • baking powder - 1 serving;
  • medium fat cottage cheese – 0.5 kg;
  • sugar for filling – 130 g;
  • eggs – 3 pcs.;
  • flavoring (vanilla sugar) – 1 serving.

Preparation:

1. The dough can be prepared using a food processor with a special hook attachment, but it is made easily and quickly, so you can get by with a spatula and your hands.

In a large bowl, mix softened butter and sugar. Add 2 eggs, salt and vanilla. Grind with a spatula until smooth.

2. Add sour cream to the mixture.

3. Then add flour in portions. It must be sifted, so the dough will come out tender and elastic.

4. At some point, kneading the dough with a spatula will become difficult. Sprinkle the work surface with flour and continue working with the dough on it, adding more flour if necessary.

When the dough begins to fall away from your hands, but is still soft enough, it should be covered and left to rest. You can put it in the refrigerator, the fat in its composition will harden a little, and the dough will become even more manageable.

5. The filling must be prepared immediately before it is time to fill the dough piece. This will avoid adding starch or flour. If you add sugar to the cottage cheese in advance, then after 10 minutes it will become water.

For the filling, divide the egg into yolk and white. Add protein and sugar to the cottage cheese, set aside the yolk for greasing.

6. Roll out the dough on a flour-dusted surface into a layer 0.5 cm thick. Cut out circles with a diameter of 7-12 cm.

7. Slightly stretching the pieces in one direction, place the filling on one half of the dough, covering the other. Cottage cheese can be added generously; it will not “crawl” out.

8. Place the juices on a baking sheet at some distance (during baking they will increase slightly in volume), brush with yolk.

9. Bake at 180-200 degrees until a pleasant blush color.

The filling in juicers prepared according to this recipe does not have a creamy consistency. But she has a natural homemade taste, like grandma's.

Classic recipe for curd juices according to GOST

Sochniki with cottage cheese (recipes for cooking with different fillings are described later in the article) in Soviet times were prepared exclusively with margarine. To get the original taste, you need to use it, and not butter.

What ingredients will you need?

The list of ingredients for making classic juicers is quite simple:

  • Wheat flour, premium - 400-600 g (you need to be guided by the consistency of the dough) and 90 g for the filling.
  • Sugar – 100 g for dough and 80 g for filling.
  • Egg C1 – 3 pcs.
  • Margarine – 200 g.
  • Baking powder – 1⁄2 tsp.
  • Salt – a pinch.
  • Soft cottage cheese – 400 g.
  • Medium fat sour cream – 1 tbsp. l.
  • Vanilla sugar – 1⁄2 tsp.
  • Powdered sugar - to taste.

  • Vegetable oil for greasing the baking sheet.

Step-by-step cooking process

The preparation of sochniki is divided into 3 main stages - kneading the dough, preparing the filling and assembling.

How to make the dough:

  1. You need to take the margarine out of the refrigerator in advance and let it reach room temperature, which will take about 1.5-2 hours.
  2. You need to mix 400 g of flour and baking powder. Then you should sift the mixture through a sieve - this will saturate the flour with oxygen. The juices will turn out crumbly.
  3. Place the softened margarine in a deep container and add 100 g of sugar and a pinch of salt.
  4. Next, you need to beat the margarine, sugar and salt at low mixer speed. It is necessary to achieve homogeneity of mass and light whiteness.
  5. Then add 1 egg and beat the mixture at medium speed for 1-2 minutes.
  6. Next, you need to beat the second egg into the total mass, continue beating it for another 1-2 minutes.
  7. You need to gradually add flour and baking powder to the mixture, passing the ingredients through a sieve.
  8. Now you should knead a soft dough. It should be thick and homogeneous. It also does not stick to your hands. The dough comes away from the sides of the bowl easily. If it blurs, you should add more flour.
  9. To achieve the desired consistency, the dough must rest. Cover the bowl with the dough and place it in the refrigerator for 30 minutes.
  10. The cottage cheese filling can be prepared while the dough is infusing.
  11. In a bowl, mix cottage cheese, 80 g of sugar, vanilla sugar, sour cream, flour and egg. Mix all ingredients thoroughly until smooth.
  12. It is necessary that the mass infuses for 15 minutes.
  13. The finished chilled dough should be slightly kneaded with your hands and rolled into a thin layer of dough.
  14. Then it is divided into parts. There are about 12 of them.
  15. Each part should be rolled into a ball.
  16. Now you need to lay out a sheet of baking paper and coat it with vegetable oil.
  17. From each ball you need to form a small cake. Its diameter is 11-12 cm.
  18. Next, each cake needs to be laid out 1 tbsp. l. fillings. It is laid out along the middle of the cake.

  19. The filling should be covered with the other side of the cake.
  20. There is no need to pinch the edges - in the classic version, the filling should slightly “peek out” from the dough.
  21. You need to turn on the oven in advance. It should warm up to 200 degrees.
  22. Using scissors, cut out a small square of parchment sheet on which the cake with cottage cheese lies. Repeat the action with the remaining areas.
  23. Bake the juices in the oven for 20-30 minutes. If the top of the jug is browned, it means the dish is ready.

Rules for serving dishes, decoration

The finished juicers need to be cooled slightly and sprinkled with powdered sugar on top. To serve, use a flat plate with a paper napkin placed on it. It will help remove excess oil from the juicer that was absorbed during baking. Sochniki are usually served with tea.

Sochniki with cottage cheese without sour cream - step-by-step recipe

If for some reason it is not possible to use sour cream (for example, you forgot to buy it or it wasn’t in the nearest store), it doesn’t matter, you can use the following recipe to make juicers. It has several advantages. For example, you can take cottage cheese with a lower fat content, and without adding sour cream (with a fat content of 10% or more), as a result, reduce the overall calorie content of the dish.

Ingredients:

  • creamy cottage cheese – 450 g;
  • margarine or butter – 200 g;
  • baking powder and salt - 1 pinch each;
  • powdered sugar – 100 g;
  • wheat flour – 480 g;
  • sugar – 80 g;
  • eggs – 3 pcs.

Preparation:

1. First of all, prepare the filling: mix cottage cheese, one egg, sugar and 60 g of flour using a mixer. Set aside. You need to wait for the flour to swell a little and start working.

2. For the dough, mix soft butter with powdered sugar, add the egg and beat at medium speed until light and smooth.

3. Continuing to work with the mixer, sift a little flour into the dough. When the technique stops working, knead the dough with your hands.

4. The dough should be very tender and soft. Divide it into portioned balls. Form flat cakes with your hands directly on the baking sheet, place the filling on them, and fold the dough into a jug. It is better to pinch the workpiece a little on the sides, leaving it open in front.

5. There are two options for decorating baked goods: brush with egg before baking to get a glossy surface, and do not mix, but sprinkle with powdered sugar before serving.

6. Bake for about 1/3 hour over medium heat. You can check the readiness of the juicers by their appearance. The dough here is thin, so if they look done, they are truly baked.

This is one of the simplest recipes. The juices turn out tender inside with a slightly layered structure. In this case, the set of products required is minimal. And even less labor is required.

Required ingredients:

  • flour – 2.5-3 cups;
  • margarine or spread – 100g;
  • sugar – 130 g (of which 50 g for the dough, the rest for the filling);

  • sour cream – 3 tbsp. l.;
  • salt, vanillin and baking powder - 1 pinch each;

3. Wrap the dough in a bag and put it in the refrigerator so that it cools and becomes tighter.

4. For the filling, beat one egg white with sugar (set aside the yolk, it will be needed for greasing). Add cottage cheese to the whites and mix. Add flour through a sieve (2 tbsp) and prepare a homogeneous filling.

Sochniki dough with cottage cheese according to GOST

GOST for baking implies a fairly strict recipe developed by food production specialists. This means that even a beginner can cook according to these descriptions, and the result is guaranteed to please.

Required ingredients:

  • wheat flour – 210 g;
  • butter (room temperature) – 100 g;
  • powdered sugar – 50 g;
  • fine salt – 1 pinch;
  • baking powder - on the tip of the knife.

Preparation:

1. Pour powder into warm oil and mix with a mixer until it becomes a whitish mass.

2. Mix flour with salt and baking powder and pour into a bowl, quickly knead the dough. It turns out so tender that you can mix it with a spoon until the very end.

Baked goods must be salted. The biggest and most common mistake of beginners is: “why add salt to sweet dishes?” Salt in this case works as a flavor enhancer; it allows all products to reveal themselves, so that in the end they are perceived by their own facets of taste, and not just by their general sweetness.

3. Wrap the dough ball in cellophane and put it in the refrigerator. Afterwards you can work with it.

Dough for sochniki, prepared according to GOST, is essentially a good version of shortbread dough. You can use it to make shortcakes, simple cookies, and even an open pie with some kind of thick filling, such as jam.

Recipe according to GOST

In this recipe, the quantity and range of all ingredients corresponds to state standards of Soviet times. It’s very easy to prepare delicious juice. Even a housewife who has never baked pies before can cope with this task.

Ingredients:

  • cottage cheese – 200 g;
  • chicken egg – 2 pcs.;
  • powdered sugar – 50 g;
  • granulated sugar – 40 g;
  • butter – 100 g;
  • baking powder for dough - on the tip of a knife;
  • table salt - on the tip of a knife;
  • wheat flour – 250 g;
  • sour cream (20% fat) – 20 g;
  • milk (2.5% fat) – 1 tbsp.

Preparation:

First, beat the eggs in a bowl until you get a light white foam. This can be done with a whisk, mixer or regular fork. Without stopping the process, gradually add powdered sugar. When the components are combined, add butter softened at room temperature. Be sure to add a little salt so that the dough is not bland.

Sift half of the flour into a separate container. So, it will gain oxygen and be lush. Add baking powder to it. Gradually combine the dry ingredients with the butter-egg mixture. At this stage, the dough will begin to thicken, so you need to continue kneading with your hands. Roll small balls from the entire volume, place them in a bowl and cover with a towel.

Krakow cheesecakes

Our recipe with step-by-step photos will help you prepare delicious homemade Krakow cheesecakes. They are somewhat similar to cheesecake...

To prepare the filling, in a separate container, mash the cottage cheese with a fork. Then add sugar and egg to it, a little vanillin for flavor. At the end, if a lot of liquid separates, add a little flour. Roll each ball into an oval shape, place on a baking sheet, and fill with filling. Brush the pieces with beaten yolk to get a golden brown crust at the end. Bake for 30 minutes at 185 degrees.

Delicious sochniki made with kefir at home

Therefore, the dough for the recipe turns out to be flaky-sandy. You can use it to make not only socni, but also cookies called gata. Sochniki will be very textured: the dough will be fragile and dry, and the filling will be soft creamy. The contrast makes for an interesting combination.

Ingredients:

  • flour – 500 g;
  • confectionery fat (oil is possible) – 200 g;
  • sugar – 50 g;
  • egg – 1 pc.;
  • salt and baking powder - 1 g each;
  • curd mass – 300 g;
  • starch or pudding mixture - 30 g.

Cooking process:

1. Grind cold butter with flour until crumbly.

2. Pour kefir into a glass, beat an egg into it, add salt, vanillin and baking powder and sugar. Mix.

You can easily use baking soda in this recipe. It will be completely quenched by kefir, will work as it should and will not leave an unpleasant aftertaste.

3. Pour the liquid into the flour mixture and prepare a soft, elastic dough. Send it to rest in the refrigerator for 20 minutes or more.

4. This dough can be prepared in large quantities and stored in the refrigerator for up to 2 days. You can also freeze it for a couple of months.

5. Prepare the filling to taste or use ready-made curd mass with the addition of a small amount of starch. Form saplings.

Bake them over medium heat for 20-30 minutes. Sprinkle with powdered sugar before serving.

It is important to use the powder immediately before serving, as it will begin to “melt” over time. The stores sell so-called “non-melting” powder - a chemical product with a plastic taste; I do not recommend trying it.

Very tender juices with cottage cheese, just like in childhood

Cozy homemade baking helps improve your mood, look at the world positively, and pause the frantic pace of life, at least for a few minutes. In general, homemade pies, juices and cookies work better than any psychologist or coach.

Prepare the juices according to the following recipe, try eating them with aromatic tea or a mug of warm milk, and you will understand everything!

Products for the test:

  • flour - approximately 380 g;
  • sugar – 120 g;
  • sour cream with a fat content of 20-25% – 130 g;

  • butter – 100 g;
  • salt and soda - a pinch each.

For filling:

  • cottage cheese – 350 g;
  • sugar – 100 g;
  • egg (white for filling, yolk for lubricant) -1 pc.;
  • sour cream – 50 g;
  • semolina and flour - 2 tbsp each. l.;
  • vanillin – 1 sachet.

5. Distribute the filling and shape. Brush the surface with egg yolk. Bake at 200 degrees for about 1/3 hour.

The dough is soft and tastes very similar to milk shortcakes. And the filling is simply incomparable.

Dietary curd sochni with banana (PP recipe)

The recipe for classic juicers is a good basis for the PP version. In shortbread dough, you can replace some of the flour with oatmeal, whole grain or corn. And take as a basis the recipe that contains eggs, which means less fat. It’s even easier to make the filling healthy: for sweetness, you can add honey, dried fruits or banana, and choose low-fat cottage cheese.

Ingredients:

  • butter – 100 g;
  • bananas – 2 pcs.;
  • powdered sugar – 1 tbsp. l.;
  • egg – 1 pc.;
  • whole grain flour – 50 g;
  • wheat flour - about 250-300 g (to the desired dough consistency);
  • low-fat cottage cheese – 200 g.

Cooking steps:
