Among the many cupcake recipes, the most popular for many years is the widely known Stolichny cupcake. It is usually prepared in a large form, but it can also be baked individually in metal or silicone molds. We make the dough according to GOST.

Ingredients:

  • Butter – 250 g
  • Flour – 265 g
  • Sugar – 1 tbsp.
  • Eggs – 3 pcs.
  • Vanilla sugar – 1 pack
  • Baking powder – 1 pack
  • Dark raisins – 100-150 g

Step-by-step preparation of the recipe with photos:

The butter and eggs should be removed from the refrigerator in advance so that they are at room temperature.

Beat the softened butter into a fluffy mass using a mixer.

Continuing to work with the mixer, add sugar in parts.

Add eggs to the mixture one at a time, after each egg beat the ingredients for at least a minute.

Add sifted flour, vanilla sugar and baking powder into the mixture.

Pour boiling water over the raisins for a couple of minutes.

Dry the raisins with a napkin and sprinkle with flour. Add to the finished dough.

Grease muffin tins with melted butter and sprinkle with flour. Fill halfway and place in an oven preheated to 170 degrees for 30 minutes.

If using one large muffin pan, bake for 80 minutes to an hour and a half. You also need to make a longitudinal cut on the dough before putting it in the oven.

Bon appetit everyone!

It's hard to believe, but muffins are the bottom of the oldest foods. For the first time they were baked for wealthy Romans. True, in appearance, they were very different from modern ones. It was an ordinary barley cake with nuts, raisins and pomegranate seeds. Only in the 16th century was he able to make his way to Europe and win the hearts of the inhabitants.

“Capital” cupcake is a taste of childhood for many. Fragrant, crumbly and with a lot of raisins. How can you resist such a delicacy? And today in bakeries, bakeries and just on the shelves of grocery stores you can find this “hello” from the USSR. But some say that Stolichny is no longer as tasty as it was back then, during Soviet times. In order not to disappoint yourself and your loved ones, it is better to bake this product at home. Moreover, the recipe is very simple and does not require much time. And to make the recipe cheaper, you can use margarine or spread instead of butter. Or replace some of the butter with margarine.

Most often, this cake is baked in a large special mold with a recess, but you can also use small molds: both metal and silicone. Modern silicone molds are very convenient. They do not need to be greased, the baked goods come out easily and do not burn. If you want to give the muffins a festive look, you can use multi-colored paper cups. They will look good on a children's holiday table and will be more convenient to eat, since they are individually shaped and designed specifically for 1 serving. If you have a rectangular pan at home, you can bake in it. Then, when serving, the cake must be cut into portions, and some must be left uncut and served on a large, beautiful plate, carefully laid out.

In addition to raisins, you can add crushed walnuts to the dough. An unusual taste and amazing smell will be obtained if you add a little candied orange peel.

To make the cake especially tasty, you need to know some secrets of its preparation:

  1. The flour must be sifted.
  2. To make the baked goods crumbly, the butter must be thicker.
  3. The steamed raisins need to be dried with a towel and sprinkled with flour and only then added to the dough.

If you are serving baked goods on a holiday table, it is better to bake them in a large round pan. When serving, the top can be poured with melted dark chocolate with added butter or chocolate glaze, and sprinkled with multi-colored chocolate balls on top.

It is worth remembering that this dish is very high in calories (380 kcal/100 g). So you shouldn't eat it in large quantities at night.

Technology for preparing Stolichny cake

To create cupcakes, yeast and yeast-free dough are used. For example, in England, yeast is used to prepare this type of baking, and in America, yeast-free dough is used with the addition of various baking powders. Both options refer to butter dough. It is made from chicken eggs, butter, dairy products with the addition of flavors, fruits, dried fruits and nuts.

Traditionally, baked goods are heavy dough. To make it lighter, add yeast or baking powder. Yeast enriches the dough with bubbles of carbon dioxide, thereby increasing the volume of the batch by 2 times. Ready-made baked goods made from yeast dough are more porous than when using baking powder such as soda or ammonium. The industry uses slightly different chemical additives, which are approved by GOST. They increase the shelf life of products. At home, housewives use the technology of preparing Stolichny cake, without the use of such additives.

Preparing Ingredients

In its structure, yeast-free dough resembles biscuit dough. It should be baked immediately. Yeast dough needs time to rise. Cupcakes are baked in rectangular or round forms made of metal, silicone, small portioned rosettes made of parchment paper or foil. Metal molds are greased with vegetable fat and sprinkled with potato or corn starch. There is no need to prepare silicone molds.

Baking time depends on the volume of dough. The finished capital cake is first cooled, then removed from the mold and decorated with powdered sugar or icing. To ensure that your product is perfect in taste and appearance, follow the cooking technology step by step, follow the proportions specified in the recipe and use only the freshest and highest quality food products.

Cupcake “Stolichny” with raisins according to GOST

The Stolichny cupcake is easy to buy at a bakery. But there is an opinion that this is not exactly the same or not at all the same cupcake that was once sold in the USSR under the brand “Captain Capital”. Alas, GOST standards are not always followed today. But you can prepare these very “state standards” at home!

Cupcake is a simple pastry, and the strict definition of “metropolitan cupcake according to GOST” requires an intelligent face, a straight back, only the highest quality products and strict adherence to the recipe. Having opened a book with Gost recipes and finding a capital cupcake in it, I got a little worried. It was proposed to take all ingredients strictly in grams - chicken egg 173 g, wheat flour 287 g... In a word, everything is very, very serious.

So, of course, I rounded up the amount of bulk ingredients, and determined the eggs 173 g for myself in the amount of 3 pieces. As for the quality of the products, I had no confusion here - of course, it must be decent. Ideally, you should use natural butter and homemade eggs, in which the egg yolk has a rich orange color. But this is ideal, and the city dweller has to compromise.

Once all the ingredients were collected, I started cooking. Preparing the dough and baking the cake in strict accordance with GOST did not take too much time. But the result of a job well done was, alas, short-lived - the baked goods were gone from the table in an instant!

  • 3 large eggs;
  • vanillin on the tip of a knife;
  • 70 grams of chocolate drops;
  • 240 grams of high-quality wheat flour;

Technological process:

1. Using a mixer, combine butter with sugar and salt in a bowl. Beat the mixture for 7 to 10 minutes.

2. Next, add the eggs one at a time into the resulting mixture, grinding them with the butter mixture for three minutes.

3. Then add vanillin, slaked soda and flour, and mix the ingredients until smooth.

4. At the last stage, add chocolate balls into the finished dough, trying to distribute them evenly throughout the dough.

5. In order not to grease the bowl of the device, you can cut out a circle from parchment equal to the Ø of the bottom, onto which you will then place the dough and level the surface of the workpiece with a spatula or spoon soaked in water.

6. Having placed the bowl in the device, select the “Baking” mode on the panel and turn on the multicooker. Bake for one hour with the lid tightly closed.

7. After the beep sounds, check the baked goods for readiness, then remove from the bowl, cool and dust with powdered sugar.
