How to prepare instant noodles “Rolton” and “Doshirak” - 7 original recipes

Over the past couple of decades, the number of Russians who travel abroad has grown every year. Italy, of course, is among the top tourist countries - a country with a romantic aura and rich culinary traditions. And although more than 60% of trips are to nearby countries that can be reached within a couple of hours, there has been an increase in interest in destinations such as Israel and Mexico.

Despite the fact that today many tourists are forced to postpone their trips until better times, there is an opportunity to let the hot breath of Mexico and the aromas of the Mediterranean into the kitchen. We invite you, together with Alexey Cherkasov, brand chef (BIGBON) and member of the Russian Guild of Chefs, to take a virtual trip and prepare three dishes from different countries for lunch. They are united by ease of preparation, availability of ingredients and excellent taste.

What are instant noodles made from and how are they packaged?

Instant noodles are a portion of pasta in the form of thin, spiral-shaped strips of dried dough. This is compressed into rectangular portioned briquettes. It usually comes with two sachets of various seasonings and a disposable fork.

For ease of consumption, this portion of noodles is usually packaged in a plastic or foam plastic container with a lid. It does not melt under the influence of hot water. Each container is packed in food grade polyethylene film.

There is also a budget packaging option - this is a simple packaging bag containing a briquette of pasta and seasoning. In terms of cost, it is much cheaper, but when preparing it you must have a deep bowl or plate with a lid.

Noodle dough

Instant noodles are made from premium wheat flour, water and vegetable oil, usually palm or soybean oil. For elasticity, thickeners in the form of modified starch, emulsifier, gluten, and stabilizers are added to the dough. For an attractive taste, flavor enhancers, dried onions, kelp powder and various spices are added to the dough.

Seasoning

Dry seasoning is a mixture of ground red and black peppers, crushed paprika, herbs, carrots, pieces of vegetables, natural dried meat or tofu, and other spices.

Liquid oily seasoning is made from concentrated meat broth, soybean or palm oil, whey, flavor enhancers, a variety of peppers, onions, garlic, sugar, and salt.

Range

Manufacturers offer a huge range of instant noodles. There are many different flavors with varying degrees of spiciness:

  • With chicken, with stewed chicken and onions.
  • Beef.
  • Veal.
  • Pork, with spicy pork.
  • Bacon flavored.
  • With shrimps.
  • Mushrooms.
  • Cheese.
  • With seafood.
  • With Thai sauce.
  • With kimchi (Korean cabbage) flavor.
  • With Chinese sauce.

Manufacturers of instant noodles offer different packaging:

  1. Briquette in a soft bag 65 gr.
  2. Rectangular plastic tray or food-grade foam 90 g.
  3. Cups of 65-70 gr.
  4. In round bowls made of food-grade plastic, like a large soup plate, 90 grams each.

Instant noodles include:

Wheat flour from durum wheat of the highest grade consists only of wheat grains crushed to a powder state. In the highest and first grade flour, the starch content is less than in low grade flour, the content of vitamins in such flour is preserved, gluten is almost 30%, this ensures excellent baking qualities. Flour contains vitamins B1, B2, B9, PP, A, E and microelements useful for the body such as phosphorus, potassium, sodium, chlorine, molybdenum, sulfur.

Vegetable soybean oil is produced by cold pressing from soybean seeds. Contains vitamins, especially a lot of vitamin E, which is responsible for the immune system, prevents heart disease and kidney dysfunction. Soy prevents the formation of cancer.

Palm oil is produced from the fruits of the oil palm tree. Contains large quantities of fatty acids, omega acids - 3, 6, 9, almost the entire spectrum of vitamins A, B, D, E, K and essential minerals - iron, phosphorus, copper, selenium, zinc, calcium, magnesium, potassium.

It is not recommended to consume in large quantities by older people, those with vascular problems, and young children, since it is difficult for a young body to absorb fatty acids.

Potassium and sodium polyphosphate is an additive that prevents product caking.

Modified starch. Has nothing to do with GMOs. Used in the food industry, produced from ordinary potato or corn starch. Contains potassium, magnesium, phosphorus, non-fatty organic acids. Does not cause any harm to health.

Baking powder (potassium carbonate, sodium bicarbonate), or, more simply, ordinary baking soda, is absolutely safe.

The dye B-carotene can be synthesized chemically or produced from natural vegetables. Gives the product an attractive color and has an orange pigment. It is an antioxidant and does not harm a healthy body. But for smokers, alcoholics, and people susceptible to cancer, eating it is highly discouraged. Synthetic beta carotene is permitted in Russia and Ukraine.

Nutritional supplements:

Potassium carbonate, potassium bicarbonate (E 501) is a salt of potassium and carbonic acid, does not harm the body in moderate quantities, is allowed in food production, is used as an acid regulator, leavening agent and stabilizer of substances.

Guar gum is the best stabilizer, increases the viscosity of products, is resistant to freezing and defrosting, is a natural substance, produced from Indian acacia.

This stabilizer is compatible with most plant colloids. Removes heavy metals and harmful bacteria from the body, reduces appetite, and does not cause allergies. Despite its natural origin, its use in production is very limited.

The seasoning for instant noodles includes:

  • Regular salt.
  • Sugar, glucose.
  • Monosodium glutamate (flavor enhancer).
  • Concentrated meat broth.
  • Dried meat, lard or seafood.
  • Instead of actual dried meat, the seasoning may contain pieces of soy protein.
  • Soybean paste.
  • A mixture of peppers: red, black, paprika.
  • The vegetables in the seasoning are dried and finely chopped; these are usually carrots, peas, garlic, onions, bell peppers, parsley and dill, bay leaves, and seaweed.
  • Flavoring.

Mexican cuisine

Have you ever thought of adding avocado with its nutty and pine flavor to your soup? But Mexican housewives do this often. In the summer, they prepare a light chicken soup with avocado accompanied by lime and spicy ingredients. All products are perfectly balanced, and their taste and aromas are in harmony.

Mexican chicken soup with avocado

You will need:

  • Rollton “Chicken Broth” - 1.5 tsp.
  • Water - 1 l
  • Onion - 1 pc.
  • Chili pepper - 1 pc.
  • Garlic - 3 cloves
  • Ground cumin - 1 tsp.
  • Dried oregano - 1 tsp.
  • Adobo sauce - 1 tsp.
  • Canned peeled tomatoes - 1 can
  • Chicken breast without skin - 1 pc.
  • Canned corn - 1 cup
  • Sea salt and freshly ground black pepper - to taste
  • Olive oil - 2 tbsp. l.

To submit:

  • Feta cheese - 100 g
  • Avocado - 1 pc.
  • Nachos (corn chips) - for topping
  • Fresh cilantro leaves
  • Lime – 1 pc.

1. Cut the onion into cubes, the chili pepper into thin rings, the avocado into slices, and the lime into 8 slices. Finely chop the garlic. Divide the chicken breast into thin strips. Break the feta cheese into small pieces with your hands.

2. Heat oil over medium heat. Add onion, chili pepper, garlic, spices, salt. Stir and simmer for 3-4 minutes.

3. Add water, tomatoes, Chicken Broth Rollton and Adobo sauce. Simmer over low heat for about 5 minutes.

4. Add chicken strips and corn to the soup and cook for about 5 minutes (until the chicken is done).

5. Ladle the soup into bowls, garnish with nachos, crumbled cheese, avocado slices, cilantro and serve with lime wedges.

Instant noodles - benefits and harms

The calorie content of instant noodles is not high, approximately 420-440 kcal. per 100 gr. product. Since the dough in the process of making vermicelli is processed and dried at high temperatures, it therefore contains a minimum amount of proteins and fats. And almost only carbohydrates remain.

If you cook the noodles without seasoning, the calorie content will be approximately 410 kcal. If we consider that an active adult requires approximately 2400 kcal per day, then a tray of Rolton or Doshirak is a complete lunch.

Pasta with canned tuna and avocado in creamy sauce

You will need:

  • Rollton “Classic egg noodles” – 130 g (2 briquettes)
  • Canned tuna in oil - 160 g
  • Butter - 40 g
  • Onion - 1 pc.
  • Red bell pepper - 1 pc.
  • Avocado - 1 pc.
  • Milk – 100 ml
  • Flour or starch - 1 tbsp. l.
  • Lemon juice – 50 ml
  • Salt, ground pepper - to taste

For serving:

  • Parmesan cheese (grated) - 100 g
  • Fresh basil - 2-3 sprigs
  • Lemon zest - to taste

1. Boil the noodles for 2 minutes. Then rinse in cold water.

2. Chop the onion finely and the bell pepper into cubes.

3. Melt the butter and fry the onion in it until transparent. Add bell pepper, salt and pepper.

4. Sprinkle with flour and stir. Pour in the milk, cover with a lid and, stirring, simmer until the sauce thickens.

5. Place the noodles in the prepared sauce, stir and immediately remove from the stove.

6. Cut the avocado into cubes and sprinkle with lemon juice. Divide the tuna into pieces and mix with the avocado.

These two fast food brands compete with each other. There is a constant struggle between them in the market for the consumer. It is impossible to definitively answer which noodles are more popular; both brands enjoy great popular love.

“Rolton” and “Doshirak” noodles cannot be considered a complete meal; these fast foods are intended for a quick snack in extreme conditions, and not for regular meals.

Salad with Rollton noodles and crab sticks

Compound:

  • Rollton noodles with shrimp flavor;
  • Crab sticks, one pack;
  • Three eggs;
  • One cucumber;
  • Classic mayonnaise;
  • Sour cream;

Break the dry noodles into small pieces and add a few tablespoons of mayonnaise and sour cream and set aside for 20 minutes.


Boil the eggs, cool and peel. Cut them into small cubes along with crab sticks.

Chop the cucumber.


Combine all ingredients and add noodles softened in sauce. Mix thoroughly again, the salad is ready!

Caramel apple noodle kugel

You will need:

The basis:

  • Rollton “Homemade egg noodles” – 400 g
  • Milk – 200 ml
  • Butter - 100 g
  • Cream cheese - 120 g
  • Sugar - 80 g
  • Vegetable oil - 1 tbsp. l.
  • Orange zest - 2 tsp.
  • Lemon juice - 2 tsp.
  • Vanilla syrup – 0.5 tsp.
  • Ground nutmeg - 0.25 tsp.
  • Egg - 1 pc.

Filling:

  • Green sour apple - 3 pcs.
  • White sugar - 3 tbsp. l.
  • Ground cinnamon - 1 tsp.

Topping:

  • Corn flakes - 1 cup
  • Butter - 50 g
  • Caramel sauce - for decoration

1. Boil noodles for 4 minutes. Then rinse in cold water.

2. Combine milk, half the butter and cream cheese in a small saucepan. Cook for 5-7 minutes over low heat, stirring occasionally, until smooth. Remove from heat.

3. Melt 50g butter and mix in a bowl with sugar, egg, vanilla syrup and nutmeg. Add lemon juice, orange zest and ground nutmeg.

4. Combine the milk-cream and egg mixtures. Mix thoroughly.

5. Add noodles to the mixture in small portions and mix gently.

6. Grease a baking dish with vegetable oil.

7. Place half of the noodle mixture into the pan.

8. Peel the apples and cut them into small cubes. Mix with white sugar and cinnamon. Then put it on the noodles.

9. Cover the apples with a second layer of noodle mixture.

10. Grind the corn flakes and melt the butter. Mix them in a bowl with brown sugar. Sprinkle this mixture over the second layer of noodles.

11. Preheat the oven to 180°C, then bake the kugel for 50-60 minutes.

12. Garnish with caramel sauce and serve warm.

Pizza

Products:

  • 3 packs of instant Rollton noodles;
  • 3 eggs;
  • Ketchup;
  • Mayonnaise;
  • Tomato:
  • Sausage;
  • Cheese;

Boil the noodles, then drain the water.


Beat the eggs and mix with the noodles.


Place the “dough” on the pan and smooth it out.


When the eggs are slightly fried, brush the circle with a mixture of ketchup and mayonnaise. Cut the sausage and tomato into slices and place on top. Grate the cheese and sprinkle it on the pizza.


Close the lid and cook for 10 minutes.
