The most delicious pancakes with meat and mushrooms will decorate your table. The pancakes themselves can be prepared with milk, whey, kefir or just water. Perfect and elastic pancakes are made using mineral water. And the filling is easy to prepare: fry all the ingredients and cool.

Minced meat is used from both pork and beef. But, of course, the most delicious meat filling for thin pancakes comes from homemade minced meat.

Every self-respecting cook should have a proven pancake recipe that always produces pancake dough. Pancakes prepared according to a special recipe can be supplemented with various fillings, not necessarily with meat. I want to share with you my favorite recipe, which I use most often to prepare pancakes.

If you like pancakes without filling, then I recommend creating a cake with an unusual aftertaste, for example, adding tender cottage cheese. They can also be chocolate pancakes or use a different type of flour.

Recipe for stuffed pancakes with meat and rice

Meat and rice are already a complete meal. And we will make it even more original by wrapping it in the most delicate pancake. It's very tasty and quite easy to prepare. See for yourself!

Ingredients:

Dough:

  • Milk – 1.5 cups
  • Salt - half a tsp.
  • Boiling water – 1.5 cups
  • Vegetable oil – 3 tbsp. l.
  • Granulated sugar – 1 tbsp. l.
  • Eggs – 3 pcs.
  • Flour – 250 gr.
  • Soda - a pinch

Glass volume – 350 ml. You can change the proportions of the liquid. For example, 1 tbsp. milk and 2 cups boiling water. In a word, there should be 3 cups of liquid.

Filling:

  • Any minced meat (in this case mixed) – 500 gr.
  • Boiled rice – 400 gr.
  • Pepper and salt to taste
  • Medium sized bulbs – 2 heads
  • Garlic – 3-4 cloves to taste

Preparation:

1. We will prepare the pancakes first. Break raw chicken eggs into a bowl. Pour salt, sand and soda here. Using a whisk, beat everything into a more or less homogeneous composition.

Next, pour in warm milk (room temperature) and mix again.

Now we take boiling water, arm ourselves with a whisk and, stirring constantly, begin to pour the liquid into the egg-milk mixture. If you pour it all at once, the eggs may curl from the sudden splash of boiling water.

2. Sift the flour and add it into the mixture fractionally. After each serving, mix thoroughly so that all lumps dissolve.

Finally, mix in the required amount of oil.

It is necessary for the products to be elastic. Plus, you don't have to grease the pan with oil before each batch of dough.

3. Let's start frying. Pour a drop of vegetable oil into a pancake pan and distribute it evenly over the entire bottom. When the pan is as hot as possible, pour a little dough into it, immediately pouring it by turning the handle into a thin pancake over the entire diameter of the bottom.

Fry over medium heat for about 1 minute on one side and 15-30 seconds on the other. Over time, the pan will heat up, causing the cooking time to shorten.

4. Now what we will stuff our preparations with. Cut the onion into medium-sized cubes, as for a regular fry. Finely chop the garlic with a knife or use a special press.

Pour about 3 tbsp into the pan. l. oils We also send onions here. Fry until soft and golden brown, about 10 minutes.

Then add minced meat. Fry together for about 20 minutes, until the meat product is ready. About 5 minutes before the end, add salt and pepper to the mixture. And 1-2 minutes before conclusion, add garlic. You should not fry it for a long time so that it does not lose its aroma.

Remove from heat and let the mixture cool slightly. Mix it with pre-boiled rice.

5. Now we need to fill all the pancakes. To do this, you can use any proven method. In this case, we placed a spoonful of meat mass on the edge, turned it 1 turn, covered it with two side edges and finally rolled it into a tight roll.

6. Heat a little more oil in a frying pan. Place the rolls seam side down. Fry on both sides until a more ruddy and appetizing crust appears.

  • Flour - 1 tbsp;
  • Eggs - 2 pcs.;
  • Milk - 1.5 tbsp;
  • Warm water - 1 tbsp.;
  • Sunflower oil - 50 ml;

  • Beef - 150 gr.;
  • Carrots - 1 pc.;
  • Onion - 1 pc.;
  • Cabbage - 200 gr.;
  • Tomato puree - 2 tbsp;
  • Ground black pepper - to taste.

Cooking method:

1. Pour flour into a deep plate, add salt and beat in eggs.

2. Next, pour milk, warm water and vegetable oil.

3. Knead the dough using a blender or mixer so that there are no lumps and leave for 10 minutes.

4. Heat the frying pan and grease it with oil. Using a ladle, pour out a portion of the dough and distribute around the circumference.

5. Fry until golden brown on each side.

6. Peel the onions and carrots and pass through a meat grinder.

7. Also pass the meat through a meat grinder, mix with vegetables and fry in vegetable oil for a couple of minutes.

8. Next, add shredded cabbage, salt and pepper, and simmer under the lid, stirring occasionally.

9. At the end, add tomato puree and simmer for another couple of minutes.

10. Place 2 tablespoons of filling on each pancake and wrap.

11. The dish is ready, serve hot!!

Pancakes stuffed with meat and mushrooms in the oven

Pancakes with meat and mushrooms are already delicious. And if you additionally brown them in the oven with sour cream and cheese, it’s a real song! Here I offer you just such a recipe.

Ingredients:

Pancakes:

  • Flour – 600 gr.
  • Eggs – 3 pcs.
  • Milk – 500 gr.
  • Unscented sunflower oil – 50 gr.
  • Salt – 1 tsp.
  • Granulated sugar – 2 tsp.

Filling:

  • Fresh champignons – 300 gr.
  • Minced chicken (or other) – 500 gr.
  • Onions – 2 pcs.
  • Hard cheese – 100 gr.
  • Butter – 10 gr.

Besides:

  • Sour cream – 30 grams
  • A little butter

Preparation:

1. In one bowl, mix the flour, sifted in advance, with salt and granulated sugar. Add vegetable oil and raw chicken eggs to the dry ingredients. Add milk little by little and begin kneading the dough. This can be done with a mixer or a regular hand whisk.

Ultimately, the mass should be quite liquid, then the pancakes will turn out thin.

Depending on your flour, it may take a different amount. Therefore, we introduce milk into the composition gradually and stir after each time. This is more reliable, because you can immediately see the consistency of the mass.

2. Heat the frying pan thoroughly with a small amount of vegetable oil. And when it warms up, pour in a little dough, immediately pouring it over the entire bottom of the dish. Fry on both sides until lightly browned. For subsequent servings there is no need to oil the pan.

3. When all the pancakes are fried, move on to the stuffing mixture. Peel the onion, then finely chop it. Heat a little oil in a frying pan. Here fry the onion for a couple of minutes until translucent.

4. During these two minutes you can prepare the mushrooms. If the champignons are large, then they need to be cleaned - remove the film from the cap. We wash them thoroughly and then dry them to remove excess moisture. Cut them into random small pieces. Fry with onions. Salt and pepper to taste.

Stir and cook for another 5 minutes over moderate heat. During this time, the mushrooms will release water and lightly stew in it. Transfer the minced meat into the same frying pan. In this case it is chicken. If you use another one, it will take a little more time to prepare it.

Salt and pepper. Mix thoroughly so that the minced meat disperses into small grains throughout the mass. Simmer for 10-15 minutes until fully cooked.

Be sure to taste it. If there is not enough salt and some spices, then adjust this point. You can also add fresh or dried herbs to taste.

10 minutes before readiness, I advise you to add butter - it will be tastier.

5. Let's move on to the final step. We take the form in which we will bake our rolls. Lubricate it from the inside with butter, quite generously. We wrap the filling in pancakes in any convenient way. We put the blanks in the mold. Pour sour cream on top, then sprinkle with grated cheese.

Place the pan with pancakes into the oven, preheated at 200 degrees. Let's brown the already prepared rolls for about 15 minutes. As soon as the golden top appears, you can take them out.

Recipe for stuffed pancakes with meat and egg

A simple and inexpensive way to feed the whole family. These stuffed pancakes are very tasty! The hand reaches out to take more. In this section I will show you how to prepare very tasty and elastic pancakes, and then stuff them with meat and eggs.

Ingredients:

Pancakes:

  • Eggs – 2 pcs.
  • Milk – 500 ml.
  • Flour – 180 gr.
  • Sunflower oil – 2 tbsp. l.
  • Salt - 0.5 tsp.
  • Granulated sugar – 2 tsp.

Filling:

  • Onions – 2 heads
  • Hard boiled eggs – 5 pcs.
  • Carrots – 1 pc.
  • Salt to taste
  • Boiled meat – 300 gr.
  • A little vegetable oil

Preparation:

1. Pour warm milk (room temperature) into a large bowl for further kneading. We also break the eggs here, which are also best taken out of the refrigerator in advance so that they have time to warm up slightly. Pour vegetable oil here and add the sifted flour. Mix everything thoroughly with a mixer until all the lumps are separated.

Check the consistency of the dough as you go. After all, there are different types of flour. It is important to understand that the mass must be quite liquid.

You can balance the consistency by adding flour or milk, respectively. This is the kind of flowing and homogeneous mass you should get.

2. You can use absolutely any meat for the filling. Boil it until tender, then cool and grind it with a meat grinder. Boil the eggs hard. Cool, peel and grate directly into a bowl of minced meat.

Finely chop the onion and grate the carrots. Sauté these vegetables in a small amount of vegetable oil until soft and golden brown. We transfer them into the general composition of the filling.

Mix and taste. Salt to taste and season at your discretion. Mix.

3. Back to pancakes. After kneading, the dough needs to rest for about 10 minutes. Next, heat the frying pan, oiling it a little. Pour out the first scoop of dough and spread it over the entire bottom. The pancake should be thin enough so that it is convenient to wrap the filling in it later.

When it picks up from below, turn it over and brown on the other side. We fill each piece with a previously prepared mixture of meat and eggs. Before serving, fry the envelopes on both sides in butter or vegetable oil.

Fry until cooked until the moisture has completely evaporated. Without cooling, transfer the fried mushrooms to a bowl. Add parsley and cream cheese. Mix everything thoroughly.

The cheese melts and you get a delicate, flavorful cheese sauce that is very refreshing for the juicy, fresh green onions.

All is ready! Now all that remains is to fill the baked pancakes with juicy minced meat.

Stuffed pancakes with minced meat and cabbage

I love pancakes with meat and cabbage. They will find their place of honor on any table. And they are prepared so deliciously that you can even make them for breakfast in a hurry.

Ingredients:

  • Onion
  • Carrot
  • Cabbage
  • Herbs and garlic optional
  • Chopped meat

All ingredients to taste

Pancakes:

  • Liter of whey
  • 4 tbsp. l. granulated sugar
  • Salt – 1 tsp.
  • 2 eggs
  • 0.5 tsp soda
  • Flour to desired consistency
  • 3 tbsp. l. vegetable oil

Preparation:

1. Pour a little oil into the frying pan. While it is heating, finely chop the onion and grate the carrots. We send these vegetables to fry.

2. Cut the cabbage into thin strips or cubes, as you prefer. We transfer it to the same frying pan. Fry together until the cabbage begins to brown. Only then can you add salt and season to taste.

Next, simmer it under the lid for 10-15 minutes, until cooked. Finally, add finely chopped herbs and, if desired, garlic.

3. Let's move on to the meat part. Heat a little oil in the frying pan again. Here we fry the finely chopped onion until translucent. Then add minced meat. You need to stir the mixture frequently so that the minced meat breaks into small grains. Cook until no raw pink marks remain.

Then add salt, pepper and brown for a few more minutes. Next, mix the cabbage with the meat. Let's taste it.

4. While the filling is cooling, fry the pancakes. Pour the whey into the bowl, add salt, granulated sugar and soda. We break the eggs here.

Mix with a mixer until smooth. We begin to introduce flour little by little. It is difficult to give an exact number, so look at the facts. The resulting dough should be quite liquid, like condensed milk. Add vegetable oil here.

Mix everything again. Now you can start frying. For the first product, grease the pan with oil. Then this will no longer be needed. Prepare thin pancakes.

We stuff each of them with filling and roll it into an envelope. If desired, they can additionally be fried in oil already rolled.

Simple and delicious pancakes stuffed with chicken

An easy recipe for lunch or dinner. Although you can even serve them on a festive table. After all, they look so beautiful and presentable. I suggest you try it.

  • Boiled chicken fillet – 150 gr.
  • Hard cheese – 70-80 gr.
  • Garlic - to taste
  • Sour cream – 3-4 tbsp. l.

Preparation:

As you already understand, we will not consider the pancake recipe. You can use your favorite method of preparing them or use any of the ones presented above.

1. Boil the chicken until tender in salted water. You can add spices to the broth to taste. Cool the meat, then cut into small cubes.

2. Chop the onion finely, then fry it in a small amount of vegetable oil until translucent and slightly browned.

3. In one bowl, mix meat with fried onions. Add garlic through a press. Next we transfer sour cream and cheese, grated with a fine grater. Salt, pepper to taste and mix.

4. Wrap the resulting mass into thin elastic pancakes.

In principle, you can eat them now. Alternatively, you can place it on a baking sheet and bake it with cheese. But I suggest frying them additionally until golden brown on both sides.

From minced meat and mushrooms

What’s surprising is that when you make the filling from minced meat, and not from pieces of meat, the taste is completely different. It seems like the same chicken, pork or beef, but the taste of minced meat and fried fillet will be completely different.

Personally, I like the minced meat filling better. It turns out juicy, tender, aromatic. By the way, here is her recipe, which I have been using for many years. You can use the minced meat that you like best. It can be made from one type of meat, or you can add chicken, pork and beef in equal proportions.

Here's my recipe:

  • 500 gr. champignons;
  • 2 medium onions;
  • 500 gr. minced pork, beef or chicken;
  • ground black pepper to taste;
  • vegetable oil for frying.

Fry the minced meat in vegetable oil over medium heat. Halfway through frying, add salt and pepper to the minced meat.

Cut the mushrooms into thin slices. Cut the onion into small cubes. Fry in vegetable oil until light golden brown.

Sprinkle mushrooms on top and add salt. Fry, stirring until done. Add them to the prepared minced meat, mix everything.
