Cooking features

Of all the by-products, chicken hearts are the most delicious and healthy. They are low-calorie, low-fat, contain a lot of protein and minerals. They have a delicate taste that goes perfectly with mushrooms. But you need to know how to cook them correctly.

It is better to take chilled hearts rather than frozen ones. Frozen ones need to be defrosted on the bottom shelf of the refrigerator. Then you need to thoroughly clean them of films and fat. It is advisable to cut in half and clean out blood clots. You need to cook the hearts for 20-30 minutes. You can fry immediately, always covered.

Selection and preparation of ingredients

Purchasing products for the described dish is not particularly difficult, since they are available in almost every supermarket. For cooking, only the highest quality ingredients should be used, so vegetables and mushrooms must be fresh and free from traces of pests, putrefactive lesions, etc. Champignons are used as a mushroom component, but they can be replaced with any other mushroom.

Important! The sour cream for the dish must be natural; such a product contains exclusively cream and bacterial leaven, and is stored for no more than 14 days. Other signs indicate sour cream with artificial additives and preservatives, which are harmful to health.

The main ingredient is selected according to a similar principle, while a high-quality heart always has:

  • dark pink or burgundy color, other shades indicate a spoiled or previously frozen product;
  • pleasant sweetish smell;
  • wet and elastic surface of fabrics, sticky and dry covers indicate deterioration;
  • white fat layer, various shades of yellow indicate stale goods.

Preparing the products is quite simple:

  1. Vegetables and mushrooms must be washed, peeled and dried, then cut into thin half rings.
  2. In turn, each chicken heart should be rinsed in running water and then cut in half (lengthwise).
  3. From each half of the heart you need to cut off the top with the remaining fat layer, and also remove dried blood and other contaminants from the inner surface. After this, everything needs to be rinsed again and dried with paper towels.

Fried with onions

The easiest way to prepare chicken hearts with champignons, fried with onions. This dish goes well with soy sauce. It is hearty and goes well with any side dish. Spicy taste will appeal to spicy lovers.

Ingredients:

  • 600-700 g of hearts;
  • 300 g champignons;
  • 1 onion;
  • 3-4 cloves of garlic;
  • 3 tbsp. l. soy sauce;
  • green onions, parsley;
  • salt, pepper to taste.

This dish is quite simple to prepare and does not take much time:

  1. Simmer the peeled hearts in oil under the lid for 20 minutes.
  2. Separately, fry the onion rings for 2-3 minutes, add garlic and champignons, fry for another 5-7 minutes.
  3. Add the hearts, green onions, sauce and seasonings to the pan. Stir and simmer for 3-5 minutes.


Chicken hearts stewed in sour cream with vegetables and champignons

Ingredients

  • Chicken hearts – 400 g
  • Fresh champignons – 100 g
  • Sour cream 15-20% – 250 ml
  • Onion – 1 piece
  • Carrots – 1 piece
  • Salt – ½ teaspoon
  • Black pepper - to taste
  • Bay leaf – 1 pc.
  • Vegetable oil – 2 tablespoons

Cooking time 30 minutes + 20 minutes for stewing.

With potatoes in pots

Chicken hearts with champignons and potatoes are prepared in individual pots. This is an independent dish that does not require a side dish. Preparing such a hearty dinner does not take much time and does not require expensive ingredients.

Ingredients:

  • 600 g hearts;
  • 300 g champignons;
  • 1 kg of potatoes;
  • 1 carrot;
  • 1 onion;
  • 2-3 cloves of garlic;
  • 500 ml cream;
  • herbs, spices.

The preparation process is simple:

  1. Chop the carrots and onions, fry in vegetable oil for 3-5 minutes.
  2. Add peeled and sliced ​​hearts and fry for 5-7 minutes.
  3. Then add the mushrooms and simmer for another 10 minutes.
  4. In a separate container, mix diced potatoes with herbs and garlic.
  5. Place 2 tablespoons of stewed mushrooms at the bottom of each pot, then place the potatoes almost to the top, and add mushrooms on top again.

How to cook:

  1. Wash the hearts and cut them into halves, remove fat.
  2. Wash the honey mushrooms and cut them randomly.
  3. Peel the onion, cut off the roots, then wash.
  4. Finely chop with a sharp knife.
  5. Heat half the oil in a frying pan.
  6. Add the hearts and fry them, stirring occasionally, until golden brown for about ten minutes.
  7. Pour the remaining oil into the second frying pan and heat it too.
  8. Place the mushrooms and cook for five minutes until the liquid evaporates.
  9. Then add the onion and simmer together until done.
  10. Season the hearts with spices and sprinkle with curry powder.
  11. Move the honey mushrooms to another frying pan, combine everything and pour in sour cream.
  12. Reduce heat and cook the dish for ten minutes under the lid.
  13. Rinse the dill and chop finely.
  14. Sprinkle the prepared hearts with honey mushrooms over them and serve.

Tip: sour cream can be replaced with cream or yogurt.

Baked in creamy sauce

It turns out delicious if you bake chicken hearts with champignons under a cheese crust in the oven. This is not only a great dinner for the whole family, but also a holiday dish.

Ingredients:

  • 300 g hearts;
  • 100 g champignons;
  • 1 onion;
  • 1 bell pepper;
  • 50 g cheese;
  • 2 tbsp. l. mayonnaise;
  • spices, herbs, salt.

Before cooking, you need to fry the peeled and halved hearts, add salt and seasonings. The remaining ingredients are placed in the mold in layers. They need to be cut into thin strips, the onion into half rings. Place products in layers in the following order:
