You always want to please your loved ones with delicious food. But this does not always work out usefully and on a budget. Today I want to draw your attention to a wonderful dish - chicken hearts in sour cream. They can act as a gravy for any side dish. And also be an independent dish.

Chicken is the most inexpensive type of meat, and its by-products are even more affordable. Not long ago we made chicken liver pate. Remember? If you still have liver or gizzards left, you can also stew them with hearts in sour cream.

Most often, a deep frying pan is used to prepare this dish. It is convenient to fry and then simmer all the ingredients. So as not to dirty several dishes.

You can use any sour cream for the recipe. But be sure to check the expiration date of the product.

Ingredients for 1 kg of chicken hearts:

  • 300 g sour cream,
  • 2 onions,
  • 4 cloves of garlic,
  • salt pepper.

Let's deal with offal. Drain them in a colander and rinse well under running water.

We cut off the fat and blood vessels from them. Then cut each piece in half lengthwise. We do this with all the hearts and rinse them well again under running water.

Peel the onion and cut into cubes.

Pour some vegetable oil into a frying pan, heat it and fry the onion until soft and transparent. Approximately 3 minutes on high heat.

Then add offal. Fry everything together and stir occasionally so that they do not burn.

The meat will release a lot of juice, and at this time add finely chopped garlic.

Salt and pepper. Then cover with a lid and simmer over medium heat until the moisture has completely evaporated. Then add sour cream and mix. Cook the ingredients for another 5 minutes.

Then turn off the heat and go eat a hot and aromatic dish. You can add any spices to taste.

With mushroom flavor

Mushrooms will add a unique taste and aroma to the hearts - the easiest way is to use fresh champignons.

Ingredients for stewing:

  • hearts – 700 g;
  • champignons – 200–300 g;
  • sour cream – 200 g;
  • onion – 1 pc.;
  • oil, herbs, salt, seasonings.

Stages of the culinary process:

  1. By-products are washed and cleaned. Cut each heart in half.
  2. The processed mushrooms are cut into pieces. The onion is chopped.
  3. Take 2 frying pans: mushrooms and onions are fried in one of them, and hearts are fried in the other. The offal is heated for 8–10 minutes. over high heat until browned.
  4. Bring the mushrooms until half cooked, transfer them to the frying pan next to the hearts (reduce the flame). Salt the ingredients of the dish, add spices, season with sour cream, and mix.
  5. Simmer covered over low heat for about 15 minutes. (readiness is determined by the degree of softness of the hearts).

Sprinkle with fresh dill and serve.

How to cook chicken hearts in a slow cooker so that they are soft and juicy

I'll start with the simplest cooking option. For this we will use my favorite assistant - a slow cooker. I can’t do without her at all. I cook everything in it: from canning to casseroles. Its most important advantage is that you don’t have to run around and monitor the cooking.

Ingredients:

  • 800 g chicken hearts,
  • 2 onions,
  • 3 tbsp. sour cream,
  • 1 tbsp. vegetable oil,
  • 1 glass of warm water,
  • salt.

Let's start with preparing the products.

Peel the onion and chop finely. The shape of the pieces is not important, do as you are used to. For example, I like it when the onion is almost invisible in the dish, so I cut it into small pieces.

Let's take out the hearts. It doesn’t matter whether they are purchased from you or homemade, be sure to wash them under cold water. This is important to do, especially when the offal is chilled and has released a lot of blood.

We cut out the veins from the hearts and trim off the fat. If they are young, then there is little fat there and you can leave it. It is also advisable to cut them in half to remove any dried blood from inside.

Pour oil into the bowl, turn on the “Frying” or “Fry” program (whose menu is in English) and add the onion.

After 7 minutes, pour the offal into it.

Salt them and immediately add sour cream. Pour a glass of warm water on top.

Turn on the “Stew” or “Stew” mode for 25-30 minutes. There is no need to cook them longer so as not to spoil the taste.

The dish is prepared in a liquid gravy, so it will go well with a dry side dish, such as mashed potatoes.

For the dish you need to take:

  • potatoes – 6-7 tubers;

  • onion, clove of garlic - 1 pc.;
  • sour cream - 3.5-4 tbsp. l.;
  • salt, oil.

As for the spices for such a treat, ground black pepper will be enough.

The cooking process includes several stages:

  1. The hearts, cleared of films and washed, must be thoroughly dried with paper napkins.
  2. You need to heat a small amount of any vegetable oil in a frying pan and pour the prepared offal onto it. The hearts will fry with frequent stirring for 10-12 minutes.
  3. Then you need to add miniature onion cubes to them and cook until the vegetable is browned.
  4. Potatoes, cut into cubes, are placed in a saucepan and filled with water. Immediately after the mass boils, you can transfer the fried onions and hearts into it, and also add sour cream, salt, pepper and crushed garlic.

The saucepan is closed with a lid and the treat is simmered until the potatoes are soft.

The finished dish is served hot in portions. It is worth complementing it with assorted bread so that it is convenient to taste the aromatic gravy.

Hearts fried with onions in sour cream sauce

Now let's look at how to make sour cream sauce. It turns out thicker. Two new ingredients are added - flour and water.

The flour absorbs excess moisture as the gluten swells. the sauce thickens. You can use regular flour, or you can use toasted flour if you have it.

Ingredients:

  • 500 g hearts,
  • 1 tbsp. flour,
  • salt, seasonings,
  • 3 tbsp. sour cream,
  • 1 onion,
  • 100 ml water,
  • vegetable oil.

Finely chop a small onion.

Pour a little oil into a deep frying pan and place the hearts. Fry them for 3 minutes. Add onion pieces to them and simmer until the juice evaporates.

Then add salt and pepper. It's time to add flour. Add sour cream and mix everything. Add a little water and simmer for another 15 minutes.

The sauce will become more viscous. It is very tasty to dip a piece of white bread into.

Chicken hearts fried in tomato-sour cream sauce - a spicy option

And this is a very interesting dish that looks and smells even more interesting. But it will take practically no time and effort.

Ingredients needed

  • chicken hearts - 500 g;
  • salad red onion - 1 medium head;
  • sour cream with a fat content of 20% or higher - 3 large spoons;
  • tomato paste or tomato puree – 1-2 large spoons;

Step 4. Let's start preparing the tomato-sour cream sauce. Pour a glass of water or cold chicken broth into a small container, add sour cream and tomato paste. Add a spoonful of flour there and mix.

It remains to simmer the hearts under the lid over moderate heat for another quarter of an hour. At this stage, add all the spices and salt.

A simple recipe with mushrooms in a frying pan

We are now in mushroom season. We have already pickled milk mushrooms and boletus. And then we were treated to a small pile of mushrooms and I decided to add them to the offal.

Ingredients:

  • chicken hearts - 1 kg,
  • onions - 3 pcs.,
  • sour cream - 3 tbsp.,
  • mushrooms - 200 g,
  • garlic - 3 cloves,
  • salt pepper to taste.

We wash the hearts and clean them of everything unnecessary.

Cut the onion into half rings.

We wash the mushrooms, sort them and finely chop them. I immediately throw away all unfamiliar and questionable mushrooms to avoid poisoning.

Pour some oil into the frying pan. Sauté the onion on it for 1 minute. Then add the mushrooms to it.

  • sour cream - 250 g,

For seasonings, I most often use coriander, nutmeg, suneli hops or herbs de Provence. They are not expensive and the composition is natural. I prefer to avoid seasonings with flavor enhancers and preservatives.

Fill the clay pot with food to the brim, pour in a third of a glass of water and add 2 tablespoons of sour cream on top. If yours is oily and homemade, then you can get by with just one spoon.

  2. Coarsely grate the carrots and finely chop the onion.

Bake at 190 degrees for 35-45 minutes.

Every housewife should know how to choose the right chicken hearts. In stores, this offal can be seen chilled or frozen. It is preferable to buy chilled giblets, since with such storage they retain all their beneficial properties.

When choosing chicken hearts, you must adhere to the following rules:

  1. First, you should carefully examine the packaging. There should be no damage to it. There must also be markings with the production date and expiration date.
  2. Frozen hearts should not have a lot of ice, as this will indicate that they have been defrosted several times.

  • chicken hearts – 400 g;
  • garlic – 3 cloves;
  • wheat flour – 2 tbsp. l.;
  • sunflower oil;
  • leek – 150 g;
  • sour cream – 5 tbsp. l.;
  • ground white pepper;
  • dill;
  • salt.

The by-products are washed and removed from excess fat. The leek should be divided into leaves and choose those that are white. They must be washed well and then cut into cubes. The garlic must be crushed using a press.

Fry the vegetables in oil until golden brown and add the offal to them. Mix ingredients and fry for 5 minutes. Fry the flour (without oil) in a separate dry frying pan. When it becomes creamy, add it to sour cream and add salt, chopped dill and white pepper.
