How else can you prepare the filling?
When the dried apricots are quite tough, they need to be boiled. For the filling, 400 g of dried fruits are enough, as well as approximately 120 g of sugar. Soak dried apricots for fifteen minutes, then rinse, add hot water and place on the stove. Boil for another fifteen minutes, remove from the water and mix with sugar.
Alternatively, you can make sweet puree. To do this, you need to soak half a kilogram of dried fruits as usual, then pour just a little water into the frying pan and transfer the dried apricots there. Simmer it, mix with sugar, grind in a blender or meat grinder.
And for a richer taste, you can supplement dried apricots with other products. For example, you can take 100 g of dried apricots, 100 g of dried peaches, 200 g of dates, 50 g of dried cranberries, 70 g of hazelnuts, 100 g of dried apples, 5 g of cinnamon and 2 g of nutmeg, a little cloves, orange juice and zest, 180 ml sweet sherry.
Mix all of the above products in a small bowl and pour sweet sherry or wine over them and leave to soak overnight. You can exclude, supplement or replace any of the ingredients provided. Once soaked, they should be used within three to four days, stored covered with foil in the refrigerator.
When using, the products must be chopped with a knife. To prevent them from sticking to the knife, dip it in cornstarch, corn flour or powdered sugar.
You can mix dried apricots, soaked and minced through a meat grinder, with jam, such as peach or apricot. You can use any syrup. And if the dried fruits are too sweet, you can add a couple of drops of lemon or lime juice to them.
Among other ingredients, dried fruits can be added with vanilla (and it is advisable to take a real vanilla stick and use its soft part), chocolate drops, various nuts, raisins, various fruits, for example, an apple or banana. Some people add pumpkin seeds or peanuts. Before use, nuts do not need to be soaked, but rather heated in a frying pan so that they reveal their taste and aroma, and they do not need to be crushed.

Yeast pies with dried apricots
Delicious pies with dried apricots made with yeast. In this version, there will be nothing in the filling except dried apricots. This is just a basic recipe, a platform for further culinary fantasies.
- Wheat flour – 1000-1100 g.
- Milk – 500 ml.
- Eggs – 3 pcs.
- Butter (or margarine) – 45 g.
- Sugar – 1-3 tbsp. spoons;
- Salt – 1 teaspoon;
- Yeast (dry) – 11 g.
- Sunflower oil – 1 tbsp. spoon;
- Dried apricots (sweet) – 750 g.
First, let's knead the yeast dough.
- Heat the milk slightly, fill 1 glass and stir the yeast in it (wait 10 minutes). Dissolve sugar (1 spoon), salt and butter in the remaining milk.
- Then pour the milk and yeast back into the saucepan.
- Beat in the eggs and mix well with a fork or whisk.
- Add flour in small portions and stir. We do this until the flour runs out. When the dough becomes thick, you will have to knead it with your hands.
- The dough should be soft and elastic. Cover it with a towel and leave it warm for 30-60 minutes.
- Fill the dried apricots with water and place on the stove, bring to a boil, then remove from the heat and let cool.
- Then drain the water and simply thinly chop the soft dried apricots into pieces or strips.
- Add sugar to dried apricots and mix.
- Sprinkle the table with flour so that nothing sticks anywhere.
- Knead the dough, tear off a large piece, which should be rolled out into something like a sausage. Then cut into pieces and roll with a rolling pin so that we get thin round cakes.
Delicious recipe! What to eat without cooking
Well, now we get to the main thing - heat treatment.
- If you need fried pies, just pour oil into a frying pan, heat it up and place the pies seam side down. Fry on one side and the other until golden brown (2-5 minutes).
- If you want to bake pies in the oven, then grease a baking sheet with oil and place the pies. Brush each pie with beaten egg or egg yolk and let them sit for 3-5 minutes. In the meantime, you can preheat the oven to 180 degrees. Place the pies in the oven and wait about 30 minutes.
Pies with dried apricots on puff pastry
Crispy and flavorful puff pastries with dried apricots. These are sold in stores and are called “puff pastries”.
We use ready-made dough. With or without yeast? Especially, it doesn't matter. It’s just that in the first case it will turn out a little more fluffy (in the photo it’s just yeast puff pastry).
- Puff pastry – 550 g.
- Chicken egg – 1 pc.
- Dried apricots – 260 g.
- While the dough is defrosting, fill the dried apricots with water and cook for 10-15 minutes until they become soft and juicy.
- Then cut the dried apricots into small pieces and mix with sugar. It’s even better if you grind the dried apricots in a blender.
- Roll out the dough thinly and divide it with a knife along the entire length into strips 11 cm wide.
- Now you need to place dried apricots along each strip of dough. Place it in the middle so that there is enough space around the edges.
- Then we connect these free edges of the dough over the filling and pinch tightly. Turn each strip over and flatten slightly.
- We take a knife and divide each strip into arbitrary “pies”.
- Grease a baking sheet with oil and heat the oven to 200 degrees.
- Place the pies, brush them with beaten yolk and bake for 20 minutes until golden brown.

Step-by-step dough preparation
- Dissolve a spoonful of sugar, salt and yeast in milk heated to forty degrees, let the mixture stand for about ten minutes, meanwhile, in a separate bowl, mix the egg and remaining sugar, lightly beat with a fork, add softened butter and knead thoroughly until uniform.
- Pour half of the flour into the yeast mixture, making sure to sift it through a sieve twice before doing so. After stirring the mass until smooth, pour the sweet oily mixture into it and mix again. Next, add the remaining flour little by little, being careful not to overcrowd the dough.
- Knead it on the table until elastic and smooth, roll it into a ball and place it in a plastic bag so that there is a little space left in it and be sure to tie it tightly so that the dough does not come out when increasing in volume.
- We place it in the refrigerator, and after half an hour we can start making pies, while the “Kremlin” dough can be stored in this state for up to seven days without losing its properties.

First, let's start with the filling. I lightly crushed the nuts with a rolling pin. Add nuts and 1-2 tsp to the curd cheese. brown sugar. Mix.

The peculiarity of the recipe is the speed of preparation, since such buns are prepared from purchased classic yeast dough. If desired, you can make this dough yourself.
You will need to buy yeast dough, and also, if desired, a sufficient amount of dried apricots. In addition to these products, you will need sugar and sesame seeds to decorate the buns.
Cooking process.
- Roll out the finished dough, put the filling of chopped dried apricots mixed with sugar inside, and make buns.
- Brush each product with yolk, sprinkle with sesame seeds, bake in the oven until beautifully golden brown/crusted.
On a note! The filling of dried apricots for pies can be very varied; in addition to the above-mentioned products, apples, cottage cheese, rice, pears, and pineapples go well with these dried fruits.

Preparing the filling
- The filling of dried apricots for pies is very simple to prepare: rinse the dried apricots with water, then fill them with clean ones so that they are lightly covered, that is, there should be a minimum amount of water.
- Let this mass boil and turn off the heat, drain the water (it can be used to prepare compote).
- Add sugar to the dried apricots and grind the mixture into a paste using a blender, obtaining a wonderful aromatic filling for pies.
It is worth noting that we do this with real dried apricots, that is, dried apricot slices without any additional processing for which the modern food industry is famous. It is quite easy to distinguish real dried apricots from those treated with preservatives or boiled in sugar syrup and dried in dryers: the original is brown in color, the pieces are wrinkled in appearance and hard to the touch - rather unsightly in appearance.
Processed dried apricots, on the contrary, are very impressive: bright orange, beautifully round in shape, and when bitten, they resemble dried marmalade, not at all tight. It’s better not to take dried apricots like this if you are interested in your health, the presence of vitamins in the product, and the taste as well.
Some people add raisins, prunes, or a small amount of fresh carrots, grated on a fine grater, to dried apricots. This gives pies with dried apricots even more benefits or a large amount of useful microelements contained in these products.
