Finnish pie with blueberries or blueberries

Blueberries are an amazing berry, which in its beneficial properties is equal to medicines. I won’t even list how many different vitamins and amino acids it contains. I’ll just say that eating blueberries has a beneficial effect on human metabolism, improves memory, vision, lowers blood sugar levels, strengthens the cardiovascular system, improves gastrointestinal tract activity and much more. It’s just a pity that it doesn’t grow everywhere; it’s a northern berry.

This year there was a good harvest of blueberries, so we tried to eat them raw. I also froze some whole berries, they will make a wonderful compote or pie in winter. With fresh blueberries you can make a very tasty blueberry pie. You can cook it without baking, then it will be blueberry cheesecake. One of my articles has a detailed recipe for its preparation. And today we’ll try to bake it, using different recipes, so that you can choose the one you like best.

Finnish blueberry pie with sour cream filling

Today I made a delicious blueberry pie, which is very popular in Finland. The pie turned out tender and juicy, this is a recipe for jellied pie. I spied the recipe from my beloved Yulia Vysotskaya, prepared it and hasten to share the recipe with you.

We will need:

For the test:
  • flour - 130 gr.
  • butter - 100 gr.
  • cottage cheese - 100 gr.
  • almonds - 50 gr.
For filling:
  • blueberries - 200-300 gr.
  • sour cream - 250 ml
  • eggs - 2 pcs.
  • sugar - 70 gr.
  • vanilla sugar - 1 tsp.
  1. It is advisable to remove the butter from the refrigerator in advance. Chop the butter into small pieces with a knife.

2. Add cottage cheese to the butter and also chop with a knife.

3. Add flour little by little and mix lightly.

4. I pre-fry the almonds in a frying pan without oil. Then they acquire a special aroma and taste. And after that, I grind it into crumbs with a mixer and add it to the dough. I mix nuts into the dough.

5. Beat in the egg, the dough becomes more elastic. At this stage, you need to knead the dough with your hands so that all the ingredients are well mixed and the dough becomes homogeneous and smooth.

6. Place the dough in the mold. I flattened the dough with my fists, leaving the edges. And put the dough directly in the baking dish in the freezer for 20 minutes.

7. During this time, prepare the filling for the pie. Mix sour cream, eggs, sugar and vanilla sugar, do not beat, just mix well. We take the form with the dough out of the refrigerator and fill it with sour cream filling.

8. Sprinkle blueberries evenly on top, and distribute a few almond petals over the top of the cake (can be replaced with almond slices).

9. Bake at 180 degrees for 45 minutes. The pie should brown slightly, the filling will thicken and you can delight your family and guests with this pie.

Blueberry pie

This pie, like all the others, can be prepared with fresh blueberries, frozen ones, or even blueberry jam. We cook the dough into crumbs, which is why it is called grated pie.

We will need:

  • blueberries - 1 cup
  • flour - 1.5 cups
  • butter - 125 gr.
  • sugar - 3/4 cup
  • egg - 1 pc.
  • salt - a pinch
  • baking powder - 1/2 tsp.
  1. Beat the softened butter with sugar until smooth, add sugar and a pinch of salt and grind some more.

2. You can add a whole egg, but this recipe only contains the yolk. Then the dough turns out more crumbly and soft.

3. Pour in all the flour and add a little baking powder. Knead the dough, it will not stick together, it will turn out crumbly, that’s exactly how you want it.

4. Pour the dough crumbs evenly into a pan lined with parchment and greased. About 3/4 of the entire dough should be used.

5. Spread a layer of blueberries or jam on the crumbs to about 1 cm.

6. Sprinkle the remaining dough on top.

7. Preheat the oven to 250 degrees. Bake for about 15 minutes, the crumbs on top should be nicely browned during this time.

Prepare the filling and fill the pie

In a deep bowl, beat the egg with sugar and cottage cheese with a mixer or whisk. We will also send yogurt and a bag of vanilla sugar here. Beat again. We need a homogeneous mixture.

Pour the resulting curd filling into a mold lined with stiff dough.

Distribute the prepared berries on the surface of the filling. If you are using frozen blueberries, pour them out just as they are. If you have fresh berries at your disposal, you need to wash them and remove excess water from the blueberries.

Blueberry pie made from shortcrust pastry - recipe with photo

Shortbread dough often comes to the rescue when you need to quickly prepare something tasty for tea. It is prepared easily and quickly, and the ingredients for it are always at hand.

We will need:

For the test:
  • flour - 300 gr.
  • butter - 100 gr.
  • sugar - 100 gr.
  • egg - 1 pc.
  • baking powder - 1 tsp.
For filling:
  • fresh blueberries - 200 gr.
  • jam - 200 gr.

Please note that for the filling we mix fresh blueberries with blueberry jam

  1. To prepare the dough, first soften the butter. Mix butter with sugar, egg, flour and baking powder.

2. Knead into a smooth, homogeneous dough. Spread it with your hands in a baking dish in an even layer, leaving sides. Using a fork, prick the dough in several places.

3. Place the pan with the dough in an oven preheated to 200 degrees for 10 minutes. During this time, the dough will not brown, but will only harden slightly.

4. For the filling, mix fresh berries with jam. You can, of course, make such a pie from just fresh berries, or you can only make it from jam. But this particular combination is very tasty, since blueberries themselves are a neutral-tasting berry, and jam adds sweetness and juiciness to the filling. Spread the filling onto the dough. Send to bake again for 20 minutes.

Fast, tasty and inexpensive. Blueberries can be replaced with any other berry.

What's inside the pie: fillings for kalakukko

The basis of the Kalakukko filling is one type of fish. Finns choose fillets of perch, trout, salmon, herring or vendace. The peculiarity of the pie is the combination of pieces of fish with bacon or pork, which makes the dish more filling. Be sure that your husband will definitely love Kalakukko. Fish contains a lot of Omega-3, which is necessary for appearance and health, so this filling will only benefit girls. It is customary to add herbs and spices to the filling, which add color to the pie and deepen the taste of Kalakukko.

Pie with blueberries and cottage cheese from yeast dough

An excellent treat for tea or coffee. The pie is rich and beautiful, it is impossible to refuse it. This pie is made from yeast dough, so you will have to tinker a little. I post a very detailed description of the preparation of the pie with photographs. For the test:
  • flour - 500 gr.
  • milk - 250 ml
  • fresh yeast - 40 gr.
  • butter - 80 gr.
  • sugar - 150 gr.
  • salt - 1/2 tsp.
  • vanilla sugar - 1 tsp.
  • egg - 1 pc.
For filling:
  • cottage cheese - 200 gr.
  • sugar - 50 gr.
  • sour cream - 100 gr.
  • lemon juice - 1 tbsp. l.
  • corn starch - 30 gr.
  • fresh blueberries - 300 gr.
    For the glaze:
  • milk - 2 tbsp. l.
  • sugar - 50 gr.

In order for the dough to rise faster, all ingredients for it must be removed from the refrigerator in advance and heated to room temperature

  1. Let's prepare the dough. To do this, slightly heat the milk and dissolve the yeast in it. Add 2 tsp. sugar and mix. Leave the dough to rise in a warm place for 10-15 minutes. If the yeast is fresh, the dough will rise 2-3 times.

2. Prepare the dough in a separate bowl. Beat in the egg, add sugar, salt and vanilla sugar. Gradually add all the flour, after sifting it through a sieve.

Vanilla sugar can be replaced with vanilla oil, the cake will acquire a richer, delicious smell

3. During this time the dough has risen, pour it into the dough.

4. Melt the butter and leave to cool slightly. When preparing yeast dough, all ingredients should be moderately warm. Knead the dough by hand or using a food processor. At the same time, add oil in small portions. You will need to knead for about 15-20 minutes. You should get an elastic, thin, homogeneous mass. Sprinkle the dough a little on top with your hand, cover with a clean towel and leave for 1-1.5 hours in a warm place.

5. During this time, prepare the filling. Mix cottage cheese, sour cream, sugar, lemon juice and starch. You should get a homogeneous, appetizing cream.

6. The dough has increased. Place it on a floured table. Using your hands from the edges, collect it from all sides into a lump, knead it a little and, using a rolling pin, roll it out into a circle about 0.5 cm thick.

7. Using a spatula, spread the curd cream onto the dough in an even layer. We don’t reach the very edges; there should be dough left there without filling.

8. Sprinkle blueberries on top of the cream, also leaving the edges of the dough free of filling.

9. Now with both hands we roll the dough into a roll.

10. Cut the roll crosswise into equal pieces, which we lay out quite tightly around the circle of the mold. Don't forget to line the pan with baking paper.

11. Place the pie in a cold oven, set the temperature to 170 degrees and bake the pie for about 30 minutes. The cake should rise nicely in the oven.

12. Prepare the glaze (although this is not necessary). Add milk to sugar and stir thoroughly until smooth.

13. When the cake has cooled slightly, pour the glaze randomly over the surface.

Blueberry puff pastry pie

Blueberry pie can also be made from puff pastry. You can make your own puff pastry. But I must admit that I often buy ready-made puff pastry and quickly make various delicious dishes from it. Blueberry pie is one such delicacy, no cake needed.

Summer is coming to an end, but there is still an opportunity to enjoy its gifts. And to prolong the pleasure, prepare berries and fruits for the winter. I prefer to freeze or make jam. And then all year round you can bake delicious pies with fillings, such as today’s ones with blueberries.

How and with what do you eat Kakalukko?

Fish pie is eaten both warm and cold. Finns cut off the top and eat the filling.

You can eat it like a regular pie, cutting it into portions. By the way, rye dough goes perfectly with fish and bacon. It is customary to drink kakalukko with beer or red wine. This delicacy will be a wonderful breakfast, lunch or dinner. You can safely prepare fish pie for guests, because there are enough portions for everyone, and the taste of the Finnish pie will be remembered for a long time.
