I’ll start the selection of recipes for pies with cottage cheese with this option, because it is as simple as possible. There is no need to knead the dough for a long time. There is no need to mix it up in the generally accepted concept. Simply make butter crumbs in literally 5 minutes!
For this dessert take:
for the baby:
- flour - 250 gr.
- butter - 130 gr. (frozen)
- sugar - 60 gr.
- vanilla sugar - 10 gr.
- baking powder - 1 tsp.
For filling:
- cottage cheese - 250 gr.
- sour cream - 90 gr.
- sugar - 60 gr.
- vanilla sugar - 10 gr.
- starch - 1 tsp.
- zest of half a lemon (or orange)
Cooking method:
1. You need to start preparing this pie with the filling. Take cottage cheese, preferably with a fat content of at least 9%, it will be tastier. Add sour cream (any kind), sugar and vanilla sugar, starch, preferably corn starch, it does not have its own distinct taste.
2.Use an immersion blender (or chopper) to blend all these components into a creamy mass, smooth and tender. As a last resort, you can grind the cottage cheese through a sieve, but you won’t be able to achieve the structure that a blender gives.
3. All that remains is to add lemon or orange zest to the blended mixture for flavor. If you don’t like the citrus smell, you can do without these additives and limit yourself to just vanilla.
4. Using a spatula, mix the filling with the zest.
If desired, you can add other ingredients to the filling: cocoa (instead of starch), which will give a brown color and chocolate taste, cinnamon, melted chocolate, condensed milk instead of sour cream and sugar.
5.Now you can do the crumbs. Sift the entire amount of flour (250 g) into a bowl. Add baking powder (1 tsp), sugar (60 g) and vanilla sugar (1 tsp). Mix everything with a spoon until smooth.
6.Grate the butter into this mixture on a coarse grater, which needs to be frozen in advance. You can also chop it with a knife; this is a good alternative to a grater.
7. Rub the butter with flour and sugar into crumbs with your hands. The dough is ready! That's how quickly it's done.
8. It’s better to take a detachable form, but you can also use a silicone one, for example. The diameter for this amount of products should be small: 18-20 cm. If you take a larger one, you will need to increase the quantity of all components. Line the bottom of the pan with parchment or foil.
9.Place 2/3 of the crumbs on the bottom and press them down with a spoon, compact them a little. Place all the curd filling on top and even out the layer.
10. Sprinkle the remaining dough on top, but do not press it down, but leave it in this crumbly form. Preheat the oven to 180º and bake the pie for 30 minutes. You want the top to brown well.
11. Let the dessert cool completely right in the mold, do not rush to take it out. The hot cottage cheese is still a little runny, you need to give it time to harden.
12.When the baked goods have cooled, run a knife or spatula around the edge and remove the sides. Cut into portions and delight your loved ones with this yummy dish.

How to bake a quick cottage cheese pie with cottage cheese and sour cream in the oven?
This recipe is also a quick one. There will be no division into base and filling. You just need to mix all the ingredients and bake them. How much easier can it be?
Ingredients:
- cottage cheese - 520 gr.
- sugar - 4 tbsp.
- salt - a pinch
- eggs - 3 pcs.
- vanillin - 1 sachet
- sour cream - 3 tbsp.
- flour - 170 gr.
- baking powder - 10 gr.
- raisins - 150g.
Cooking steps:
1.Pour all the cottage cheese, sugar, salt, vanillin, eggs and sour cream into a deep container. Mix well with a spoon. You can use a mixer or blender to make the grains smaller.
2.Add baking powder to the flour and sift into the resulting liquid mass. Mix everything again.
3.Rinse the raisins and dry with paper towels; excess moisture is not needed here. Pour the filling (you can use other dried fruits) into the dough and combine well.
4. Cover the form with parchment. The size of the mold in this case is 22x16 cm. The height of the pie will depend on the size. Do not take a container that is too small: it will be difficult for the dessert to bake well in the middle.
5.Place in a preheated oven at 180º for 45 minutes. When the top crust is browned, check for doneness by piercing the center with a toothpick. There should be no traces of dough left on the stick.
6. Let the curd pie cool and you can cut it into pieces. If desired, you can sprinkle powdered sugar on top.

▪ Add 150 g of sugar or fructose, mix everything.
▪ In another cup, pour 300 ml of kefir into a cup and quench the soda in it, stirring quickly until bubbly foam forms. If kefir is not sour enough, you can add lemon juice.
▪ Combine both cups, add eggs, cottage cheese and mix. The dough should be of medium thickness, which will not spread on the baking sheet, but spread out. I add 3 s. l. flour until the desired consistency is formed.
▪ Grease a baking sheet with butter. Transfer the dough and level it out. 7. Place in a preheated oven at a temperature of 180 - 200 degrees for 25 - 40 minutes depending on the oven (it took me 35 minutes)
▪ Take out the baking sheet, cut off the edges and cut it into pieces. We eat this pastry in two versions, since it’s simply unbearable to wait for the cake to cool and you want to eat a piece fresh and hot.
▪ With a complete feeling of satisfaction, we begin soaking the biscuit. We make the cream, mix 200g sour cream with the fat content you prefer, you can use low-fat curd cream (it will be more dietary) and 4 tbsp honey. l.
▪ Trim the edges and grease the pieces of cake, place the next row and grease with cream on all sides. 11. Grind the trimmings in a blender and decorate with crumbs. Cool the cake and serve.
