I cut the fish fillet into cubes, salt and pepper, add a pinch of sugar, and leave to marinate for 15 minutes.

I cut the onion into pieces and fry in vegetable oil until golden brown.

I roll out the dough into a rectangular sheet measuring 30x40 cm. I put the onion in the middle, then the salmon fillet.

I cut the edges of the dough into oblique strips about 2 cm wide on both sides.

I carefully intertwine the strips like this. I grease with yolk and bake for 30-40 minutes at 180 degrees.

Delicious salmon pie with rice and mushrooms

Delicious, ideal dish for family lunch and dinner. Can be served every day or on holidays. The dough comes out with a crispy, amazing crust. Try it, it's truly delicious!

Ingredients:

  • 150 grams of mushrooms,
  • 1 onion,
  • 3 tablespoons olive oil,
  • 100 grams of boiled rice,
  • 1 small bunch of parsley,
  • 250 ml milk,
  • 500 g fresh salmon fillet with skin,
  • 1 raw egg yolk,
  • 300 grams of puff pastry,

Cooking steps:

Preheat the oven to 200°C.

I cut clean mushrooms into pieces.

I pour olive oil into the pan, add finely chopped onion, and fry for a few minutes.

Add the mushrooms, season with salt and pepper and fry, stirring frequently. I transfer everything into a bowl, mix with cooked rice and chopped parsley (1/2 bunch).

I wash and dry the salmon fillet (if there are scales on the skin, I clean them off with a knife). I place it in a saucepan, add a glass of milk, and bring it to a boil. Reduce the heat, season with freshly ground pepper, and cook for 5 minutes without a lid. I remove the fish, separate the meat from the skin, divide it into small pieces, and carefully mix it with the onion and mushroom filling. Season with salt and pepper.

In a bowl, beat the egg yolk with a small amount of water with a fork.

I cover a baking tray with baking paper. I cut the puff pastry lengthwise into two rectangles - one narrower - 11 cm, the other wider - 14 cm, but both are the same length.

I place a smaller piece of puff pastry on the baking sheet and prick it tightly with a fork. This is necessary so that steam escapes and the dough does not rise. I spread the filling, stepping back from the edge of the pie by 1-1.5 cm. I grease the edges with whipped yolk. I cover the filling with a wider piece of dough and carefully glue the edges. I brush the top with the remaining yolk and use a fork to make a pattern around the edges of the pie.

Place in the preheated oven and bake for about 30 minutes until the dough has a beautiful glossy color.

Filling for red fish pies

Compound:

  • lightly salted salmon, trout or other red fish (fillet) – 0.3 kg;
  • rice – 100 g;
  • chicken egg – 2 pcs.;
  • butter – 30 g;
  • green onions – 50 g;
  • pepper - to taste.

Cooking method:

  • Rinse the rice well, add 200 ml of water and lightly salt. Bring to a boil and simmer until there is no liquid left in the pan. Add butter, stir. Let the rice cool.
  • Check to see if there are any bones left in the fish fillet, remove them if necessary. Cut the fillet into small cubes and add to the rice.
  • Boil the eggs hard. Place them under running cold water to cool them quickly. Peel the shells, cut into small cubes, and add to the fish and rice.
  • Wash the onion, pat it dry with a napkin, chop it finely and pour it into a bowl with other products.
  • Mix the ingredients.

I cover the flour mass with film for a while, it will stand and increase by 2 times.

The taste of the pie depends on what the filling is, and it must turn out delicious.

I cut the fish into small pieces, add chopped onions, 0.5 tbsp fish seasoning, 0.5 tsp. ground pepper, salt to taste, Philadelphia cheese. Cover the filling with a lid and put it in the refrigerator.

The dough has increased, it has become soft and pliable, I divide it like this: 2/3 will go to the base and sides, 1/3 will be needed to cover the top. I take the mold and place the main part on the bottom.

I roll out the top of the pie thinner and trim off the excess with scissors.

I take 1 yolk and add 2 tablespoons to it. milk, stir, brush the top layer of dough with a brush. I leave it for 15 minutes to rise, then put it in the oven preheated to 180 degrees for 25 minutes.

The pie is ready, I grease it well with butter, cover it with a towel, let it stand for 30 minutes, and then serve it.

Open salmon quiche with broccoli

It is prepared from a special baked dough on which the filling is laid out. This is a festive option, it turns out tasty and moderately juicy, with a rich fish taste. Quiche is a type of pastry in which you can replace the filling. For example, instead of broccoli, spinach will do, and white meat will replace red fish. In short, experiments are welcome.

Ingredients for the dough:

  • 200 gr. wheat flour,
  • 100 gr. chilled butter,
  • a pinch of salt,
  • 1 yolk,
  • 2 tbsp. cold water.

Filling ingredients:

  • 2 eggs,
  • 250 gr. sour cream 20% or cream 30-35%,
  • 100 gr. hard cheese,
  • 300 gr. fresh salmon,
  • 200 gr. broccoli,
  • a pinch of salt.

I'm preparing the dough. Add butter, cut into small pieces, to the sifted flour. Together with the flour, I grind it into fine crumbs and add salt. I transfer the yolk into the flour mixture and mash well. I pour water little by little, it usually takes me 2 tbsp.

I gather the dough into a ball and divide it into 2 parts. 2/3 will be the base of the pie, 1/3 will be the sides. I wrap it in cling film and put it in the refrigerator for 30 minutes.

I'm making the filling. I remove the skin from the fish, remove the bones, cut it into small pieces, salt to taste, sprinkle with lemon juice, mix, and leave the fish to marinate.

I used frozen broccoli. Without defrosting it, I put it in boiling water, cook for 5 minutes, put it on a plate, and let it cool.

I grate the cheese on a coarse grater.

To pour, break the eggs into a bowl, beat them with a fork, add sour cream, mix well until smooth.

I take most of the dough out of the refrigerator, sprinkle it with flour, and roll it out into a large layer according to the size of the mold. I transfer the dough into the mold, roll it out along the bottom, and trim off the excess. I prick the base with a fork, put it in the oven, and bake at 200 degrees for 10-15 minutes. I leave it to cool completely.

I still have a third of the dough and trimmings left. I knead it until it is plastic, and form it into a rope of the desired shape. I spread it along the walls of the cake, pressing it against the walls of the mold to create sides 3-4 cm high.

I distribute half the salmon and the same amount of broccoli over the base. I sprinkle half the cheese, now lay out the remaining fish and cabbage. I pour the filling; if the ingredients peek out from under the filling, you can press them down a little. Top with leftover cheese.

I bake the cake for 35 minutes at 200 degrees. I put it a little higher in the oven for the last 10 minutes to brown the top.

I leave it to cool a little. I remove the sides from the still warm pie and transfer it to a plate. I decorate with fresh dill. Help yourself!

  • carrots – 100 g;
  • onions – 100 g;

Cooking method:

  • Cut the fish into fillets. Cut the fillet into small pieces and pass through a meat grinder twice. Salt and pepper the minced fish, stir.

  • Remove the peel from the onion and cut it into small cubes.
  • Heat oil in a frying pan, add chopped vegetables. Fry them until the onions turn golden.

  • When the fried vegetables have cooled, transfer them to a bowl with the minced fish. Add chopped herbs there.

Salmon pie with spinach and cheese
