Apple cake - how simple it sounds, but how difficult it can be to prepare. Paying tribute to the wonderful taste of one of the best fruits, the confectioners worked hard. The apple cakes contain cognac and spicy cinnamon, honey and pistachios, in a word - the company was worthy. And, of course, the main thing will be apples, of any variety and size.

Apple cakes - general cooking principles

• Apples are used in making cakes, cream or as a filling. The fruits are first peeled and cored, then crushed and served according to the recipe. If apples are added to the dough, they are not subjected to additional processing. For cream or filling, they must be stewed to soften.

• Apple cakes are prepared with or without creams. Fruits go well with creamy masses prepared with dairy products. Apple cakes are well soaked in any butter cream.

• Apple dough for cakes is often supplemented with nuts, pistachios or carrots. Its thickness directly depends on the type of cake. For the biscuit type of preparations, a rare dough, reminiscent of homemade sour cream, is prepared. Shortbread or puff pastries are rolled out from a hard, but quite soft and elastic.

• For baking, any type of dough is placed only in a hot oven, brought to the required temperature. The readiness of sponge cakes is checked by piercing them with a wooden skewer; when baking puff pastries or shortbreads, they are more guided by their color and the time specified in the recipe.

• Finely chopped nuts, pieces of soft fruits such as kiwi or banana, and grated chocolate are best suited for decorating apple dessert. Often such cakes are decorated with dried apple slices. They are rolled into roses and placed on the surface of the cake.

There are many recipes for making apple cakes. Some recipes are complex, while others are simple and made from available ingredients. Such cakes are not difficult for any housewife to prepare and it doesn’t take much time. There are only simple recipes here, try making a cake with apples using one of them, the recipe for the “Try” cake speaks for itself.

Cake with apples “Try”

Cake with apples “Try” - the name itself invites you to try to cook, and then taste it - it’s easy to prepare, but very tasty to eat
Ingredients: flour 250 g, butter or margarine 100 g, sugar 80 g, apples 0.5 kg, eggs 2 pcs, potato starch 1 tablespoon.

Preparation

Grind the softened butter, sugar and yolks until the sugar dissolves, then add the flour. Knead the dough and refrigerate for an hour. Roll out the chilled dough and place it in a greased pan so that you get edges 1-2 cm high.

Beat the egg whites into a thick foam, gradually adding 1 tablespoon of sugar and starch, add peeled apples, cut into small pieces, place everything in a mold with dough, bake for about 40 minutes at 200 degrees.

Preparation

Grind the butter with egg yolks and 100 g of sugar until a fluffy mass is obtained, add sour cream to the mixture, after adding soda to it. Knead the dough, adding enough flour so that the dough turns out like thick sour cream. Knead the dough thoroughly. Grease the mold with oil, transfer the finished dough into the mold and bake.

Cut the peeled and cored apples into equal slices and boil for 3 minutes in sweetened water, remove them and let the liquid drain. Beat the egg whites and sugar until foamy. Place the apples on the cooled cake and pour the whites over it, place the cake in a low oven for 15 minutes, let the whites dry.

Delicious, delicate aromatic cake with apples and apple cream.
The cake is easy to prepare, the cream gives it more apple flavor Ingredients: 4 apples, 4 eggs, 200 g flour, 200 g sugar, 70 g butter, 1 teaspoon cinnamon.

First of all, prepare the apple custard.

Ingredients for the cream: 3 apples, 2 - 3 tablespoons sugar, 1 tablespoon starch, 1 egg, vanilla on the tip of a teaspoon, 3 tablespoons sour cream.

Preparing the cream

Bake the apples in the oven or microwave, cool them, then rub them through a sieve or beat them in a blender, add sugar and vanillin. Separately mix the egg with starch. Place a bowl with the apple mixture in a water bath, heat it and gradually add the egg mixture into the hot mass, stirring constantly. When the mass thickens, remove it from the heat. Cool. Add sour cream to the cooled mixture, beat, and place in the refrigerator to cool.

Preparing the cake

Beat eggs with sugar until completely dissolved. Gradually add flour and stir until smooth. Grease a baking pan with oil and pour the dough into the pan.

Prepare the apples, it is better to take sweet and sour apples. Cut the apples, remove the core, cut into slices. Place the slices on the dough in a circle, covering the entire surface of the dough. Sprinkle with cinnamon sugar, add the butter cut into pieces and place in a preheated oven. Bake at 180 -200 degrees for 35 - 40 minutes.

Cool the finished cake and remove from the mold. Cover with cream.

Recipe 2: Apple Tatin Cake (step by step photos)

It’s best to cook this apple cake in a frying pan or saucepan, which you can then put in the oven - this way there will be less fuss with pouring caramel. I didn’t have a suitable sized dish, so I prepared the caramel in a ladle, then poured it into a one-piece pan and fried the apples in it right on the burner.

For the test:

  • 200 g flour
  • 115 g cold butter
  • 1/4 tsp. salt
  • pinch of sugar
  • 2 tbsp. cold water

For filling:

  • 3-4 large apples with fairly dense pulp
  • juice of half a lemon
  • 150 g sugar
  • 75 g butter

Prepare the dough. To do this, put flour, salt, sugar and cold butter cut into cubes into a blender bowl.

Chop until you get fatty crumbs.

Add water and knead the dough as quickly as possible. Do not knead for too long, otherwise the butter will melt and the dough will turn out wooden. Form the dough into a ball, wrap it in cling film and put it in the refrigerator for 30-40 minutes.

Peel the apples and remove the core. Cut each into 6 pieces. Sprinkle with lemon juice to prevent darkening.

Selecting dishes for the pie. Ideally, this should be a saucepan or frying pan in which you can melt caramel, fry apples in it, and bake a pie in the oven. If there is no suitable one, we take the ladle into a one-piece metal mold. Melt sugar in a saucepan until it becomes caramel. It is important not to burn it! At some point the mixture may become sugary - don't worry, it will melt. Place apples in the caramel and top with sliced ​​butter. Fry the apples over low heat in caramel, turning a couple of times, about 5 minutes in total.

Remove from heat.

Roll out the dough into a layer with a diameter slightly larger than the mold. Place on top of the apples, tuck the edges of the dough along the sides of the saucepan (or mold, as in my case).

Place the pie in an oven preheated to 200 degrees and bake until the dough is ready, 20-25 minutes.

Turn the finished pie over onto a plate. Serve warm. Can be topped with a scoop of ice cream or lightly sweetened whipped cream.

"Tiramisu"

The exquisite dessert “Tiramisu” cannot be complete without the participation of cookies. Not only is it based on cakes soaked in coffee liqueur, but on top of all the layers, to give the delicate dessert a mysterious and fragile “crunch,” a cookie tube serves as an edible decoration.

To prepare a real tiramisu dessert, you need special ingredients that can be obtained by visiting Italy. Our products are replaced by Russian items:

  • mascarpone - with heavy cream and sour cream
  • special coffee infusion of liqueur or cognac with the addition of natural coffee
  • specially baked bread base is replaced with sponge cakes

If you don’t have the opportunity to try Tiramisu made from real Italian ingredients, then a Russian recipe will do just fine to surprise your guests. And some will like this interpretation even more than Italian proportions.

Preparing the biscuit dough

A cake with apples bakes quite quickly in a slow cooker. But before you put the biscuit dough into the bowl of the device, you should knead it.

Add ½ cup granulated sugar to the egg yolks and rub them thoroughly with a large spoon. As soon as the ingredients turn white and increase in volume, they are left aside and the processing of proteins begins. Sugar is also added to them and beat with a blender until stiff peaks form.

Having received a fluffy and dense protein mass, it is laid out in the sweet yolk mixture and stirred thoroughly. Next, soda, slaked with sour cream, and sifted flour are added to the components. The result is a very fluffy and airy dough.

Apple cakes are especially delicious if they are prepared using the freshest and sweetest fruit possible. They are thoroughly washed, the peel is cut off and the seed box is removed. After this, the apples are chopped into thin slices and placed in the dough.

Don't worry if you think there's too much fruit. During the heat treatment, their volume will noticeably decrease.

Recipe 1, step by step: apple cinnamon cake

Juicy, soaked, aromatic and very tender homemade cake.

  • apple – 700 gr
  • wheat flour - 1 cup
  • sugar - 1 glass
  • chicken eggs - 5 pcs
  • ground cinnamon - 1 tsp.
  • baking powder - 0.5 tsp.

To prepare a biscuit apple roll (the base for the cake), we will need sweet and sour apples, wheat flour, chicken eggs, granulated sugar, ground cinnamon and baking powder (although I think we can do without it).

Immediately turn on the oven to warm up (180 degrees). Peel and chop the apples on a coarse grater. The sweeter the apples, the faster the flesh will darken.

Be sure to squeeze the juice out of the apples so you can drink it right away.

Take either a wide baking dish or a baking sheet with sides. I decided to take a rather large (but, as it turned out, not enough) form, so my roll didn’t work out. You put everything on a baking sheet so that the layer of apples and dough is thinner and can be rolled up later. Don't forget to put baking paper, otherwise the apples will stick to the pan or baking sheet.

Sprinkle the apple layer with ground cinnamon and a couple of tablespoons of granulated sugar. That's it, we're done with the filling for now.

Now let's quickly prepare the biscuit dough. Break chicken eggs into a suitable bowl.

Add the rest of the sugar and beat everything with a mixer at high speed until a fluffy white mass forms. Then sift the wheat flour mixed with baking powder in portions.

Mix the flour into the egg mixture using folding movements (scraping from bottom to top).

Fill the apple layer with biscuit dough and smooth it out. Place in a hot oven to bake for 15-20 minutes at 180 degrees.

The finished biscuit will rise and brown.

Take another sheet of parchment paper and turn the cake pan over onto it.

We remove the form - the baked goods with paper remain on this sheet.

Using a cutting board, turn the cake over so that the apple layer is on top. If you prepared the baked goods on a wide baking sheet, you can easily roll this layer into a roll. But, as you can see in the photo, I ended up with a rather tall sponge cake, so when folding it will simply crack, and not even once.

That's why I cut it into 3 equal parts.

I folded one on top of the other and it turned out to be a cake. But you can’t serve it like that - it’s completely unsightly.

As a rule, confectionery products are decorated with the ingredients that are included in their composition. It was possible, of course, to caramelize the apples, but for some reason I imagined this option. I decided to make chocolate cream and decorate the cake with pistachios and raspberries. I have the cream in a bag - I just needed to whisk it with a glass of cold milk.

I covered the cake with chocolate cream and decorated it with raspberries and chopped pistachios.

Homemade “Anthill” with cookies and boiled condensed milk without baking

Everyone knows the Anthill cake; I already wrote about its classic recipe in one of my articles. Today we are talking about no-bake recipes. And this wonderful, quick, quick cake can be classified as just such.

We will need:

  • cookies – 500 g;
  • boiled condensed milk – 1 can;
  • walnuts – 150 g;
  • butter – 180 g;
  • poppy.

Preparation:

  1. Break the cookies into crumbs with your hands. You can use a rolling pin for these purposes.
  2. Peel and chop the nuts and add to the cookie crumbs. A blender is best for this. Mix everything well.

Be careful not to let nut shells get into the cake.

  1. Beat the softened butter with a mixer.
  2. Gradually add condensed milk into the oil and continue whisking.

  3. Add the resulting cream to the cookies with nuts and mix everything very thoroughly.

  4. Place the prepared mass in a heap on the dish in which the dessert will be served.

  5. Decorate the cake with poppy seeds and leave in the refrigerator for at least an hour. But it's better for a longer time.

  6. Slice and serve this delicious delicacy!

Preparation

  1. 1First of all, prepare a delicate vanilla cream. To do this, beat an egg into a saucepan. Add 60 g of sugar, starch and vanillin to it. Mix the ingredients with a whisk.
  2. 2When the mixture becomes homogeneous, pour in another 300 ml of milk. Mix everything well again. Place the mixture on the fire and cook, stirring constantly, until thickened.
  3. 3As soon as the cream starts to steam, turn down the heat. Otherwise, the cream may burn. Add 30 g of butter to the already thick mass. Stir the mixture.

  4. 4 Cool the finished cream by placing the saucepan in a bowl of cold water. The latter will need to be changed several times. When assembling the cake, the cream should be at room temperature.
  5. 5While the cream is cooling, prepare the cakes. Cut firm and slightly sour apples into thin slices. Place them in a bowl and cover with lemon juice.
  6. 6Now prepare the dough. Beat the remaining eggs with a blender with the remaining sugar. After 3 minutes, pour the remaining milk into them. Stir the mixture. Pour in the remaining melted butter.

  7. 7 Mix flour with baking powder. Pour the dry mixture into the previous one and stir with a mixer at low speed. Pour the apple slices into the prepared batter. Stir.
  8. 8Cook the pancakes, covered, in a preheated frying pan greased with vegetable oil. In total you should get 3 fluffy cakes. You will spend a couple of minutes on each side.
  9. 9Be sure to let the finished golden brown cakes cool completely. Only then assemble the cake. Place the cakes on top of each other, generously greasing them with cream. Use it to decorate the dessert.

Personally, for me, this apple cake serves as the first harbinger of autumn. Not that cold time of year when you don’t even want to go outside because of the rain and wind, but Indian summer. Garnish the delicacy with mint leaves, raspberries and serve for evening tea on the veranda. Don't forget to cover your loved ones with a warm blanket!
