If the mushrooms are pickled, drain them in a colander, shake, then chop. If you use fresh mushrooms, then chop them too, then fry for about five minutes in a frying pan to add a pleasant aroma. Wild mushrooms require mandatory boiling. After frying, cool the product.
Step 3:
Add mushrooms to the dough, add minced meat and chop a few sprigs of dill here. You can add pepper for brighter taste. Stir the pancake batter until the filling ingredients are evenly distributed.
Step 4:
These pancakes need to be fried immediately. Just put it in a frying pan with oil for the usual version, or cook without fat in a non-stick pan. As an option, place the pancakes on a silicone or parchment-lined baking sheet, bake the pancakes in the oven, but keep the temperature at least 220 degrees.

Option 10: Pancakes with minced meat, cabbage and herbs on kefir
An original recipe for pancakes with pieces of cabbage and minced meat. Cabbage adds juiciness and freshness to baked goods. Thanks to dill and green onions, the pancakes are also aromatic. You can use cabbage left over from making cabbage rolls.
Ingredients:
- 200 g cabbage;
- two pinches of coarsely ground black pepper;
- 200 g minced pork;
- two pinches of sea salt;
- 100 g fresh herbs;
- baking soda;
- three eggs;
- 100 g of premium flour;
- 150 ml kefir.
Step by step recipe
Step 1:
Remove the top leaves from the cabbage and cut the vegetable into small pieces. There is no need to chop into thin strips. Place a pan of water on the stove, lightly salt it and bring to a boil. Add the cabbage and blanch for four minutes. Drain it in a colander and leave to drain all the liquid.
Step 2:
Wash the greens, dry and chop. Combine cabbage with herbs and minced meat, season everything with pepper and salt and stir.
Step 3:
Beat eggs into a deep container, add kefir, lightly salt and pepper. Shake everything until smooth with a whisk. Add baking soda and stir. Knead the dough by adding sifted flour in small portions. Its consistency should be slightly thicker than sour cream. Place the cabbage and minced meat into the dough and stir.
Step 4:
Spoon the dough into a frying pan with heated oil and fry until golden brown. Turn over to the other side, reduce heat and fry until done.
To bake the pancakes, first fry them over high heat, then reduce to medium and cook until done. Place the dough only in well-heated oil, otherwise it will spread and the baked goods will not turn out fluffy. There is no need to extinguish the soda; kefir will perform this function.
Second option
The second option assumes the presence of the following products:
- minced chicken, beef, pork, or mixed (not frozen) - 270 grams;
- kefir - 1/4 liter;
- large egg;
- onions - 1 piece;
- half a teaspoon of soda;
- 2-3 cloves of garlic;
- premium wheat flour (you can take any other flour, semolina, and even bran) - 100-130 grams;
- a teaspoon of salt;
- refined oil.
Preparation:
- In slightly heated kefir, “quench” the soda and stir. Leave for 5-7 minutes.
- Salt the egg and mix with a spoon.
- Place minced meat into the egg. Stir.
- Puree the peeled onions and garlic using a blender. Squeeze out excess juice.
- Thoroughly stir the onion-garlic puree into the kefir-meat mixture.
- Mix the sifted flour into the resulting mass until it becomes thick, like sour cream. Allow to “rest” at room temperature for 15-20 minutes.
- Heat a frying pan over high heat. Pour oil and let it warm up.
- Using a spoon, place the mixture in the form of small cakes. Fry over low heat for no more than 2-3 minutes on both sides until they are golden brown.
- Place the finished pancakes on paper towels for a few minutes. After this, serve while still warm with various sauces, for example, garlic, ketchup, adjika. Or you can just with sour cream.
