Stozhki is a combined dish consisting of minced meat, on top of which a variety of fillings are laid out in layers. Stacks are baked mainly in the oven. Thanks to its multi-component composition, the dish activates metabolism in tissues, helps strengthen the immune system, and also normalizes the activity of the digestive organs and cells of the nervous system. It should be taken into account that the energy value of stacks can vary from 130 to 300 kcal. The calorie content and benefits of a dish depend on the products that are included in the recipe.

Classic recipe

Stacks of minced meat (the oven recipe is more popular due to the ease of preparation and juiciness of the finished dish) in the classic variation contains a minimal list of ingredients.

What ingredients will you need?

To prepare stacks of 1 kg of prepared minced meat (it is advisable to prepare the minced meat yourself in advance), you will additionally need:

  • turnip onions (it is recommended to peel them in advance) – 2 pcs.;
  • grated cheese (it is recommended to choose Russian or Parmesan) – 230 g;
  • black pepper (it is advisable to grind the product before starting cooking) – 1-2 g;
  • classic mayonnaise (the amount of product should be controlled during the preparation process) – 100-150 ml;
  • purified vegetable oil – 30-40 ml.

Additionally, you can use a set of spices for minced meat in an amount of 10-13 g. When choosing spices, you should take into account the inclusion of salt in the composition, otherwise the base may turn out to be over-salted.

Step-by-step cooking process

It is recommended to prepare stacks of ready-made minced meat in compliance with the following points:

  1. It is recommended to cut the onions in the shape of half rings with a thickness of approximately 0.5 cm.

  2. Place the chopped onion in a frying pan with heated vegetable oil and fry on a medium heat burner for approximately 5 minutes. The onion should be slightly browned.
  3. Then the minced meat should be transferred to a bowl and mixed with ground pepper and a set of spices (if spices are included in the list of products).
  4. To give the minced meat the desired texture, it is recommended to beat it. To do this, the minced meat should be rolled into a ball and raised above the table by approximately 20 cm. Then it should be sharply thrown into a wide and deep dish. It is important not to overdo it with the throwing force so that the minced meat does not scatter throughout the room. Repeat manipulations at least 15 times.
  5. After this, the minced meat should be placed in a dish, covered with a towel and left to rest for about 30 minutes. During this period, the spices will fully reveal their aroma.
  6. Before following the next steps, it is recommended to turn on the oven to warm up. Set the temperature to 200 degrees.
  7. Then roll the rested minced meat into balls and flatten them. The desired height of the workpiece is 1-1.5 cm, and the diameter is approximately 7-8 cm.
  8. Place the minced meat cakes on a baking sheet covered with food foil.
  9. Place the fried onion on top of the flatbreads and coat it with mayonnaise.
  10. Place the baking sheet in the oven and bake the stacks for approximately 40 minutes.
  11. Approximately 15 minutes before the dish is ready, it is recommended to sprinkle the stacks with cheese.

Useful tips and tricks

Stacks of minced meat (the recipe in the oven allows you to prepare a juicy, nutritious and satisfying dish) will correspond to the taste and appearance stated in the description, subject to the rules of product design.

Important recommendations for designing stacks:

Basic subtleties of cookingBrief description of actions
Give preference to homemade minced meatWhen purchasing ready-made minced meat, the exact composition is not known, and if low-quality minced meat is used, the dish will not have the required taste.
When buying ready-made minced meat, choose only freshFrozen minced meat contains less nutrients and is also more watery after defrosting.
Do not add soaked bread to the minced meatIf the recipe calls for adding soaked bread, it is better to use breadcrumbs.
Do not add chicken eggs to the minced meatIf there is a chicken egg in the recipe, it is recommended to use only the yolk, then the minced meat will be more tender.
Add boiling water to the minced meatTo make the minced meat juicier, just pour 30-50 ml of boiling water into it. Carry out the procedure carefully so that the meat does not cook.
Choose the correct minced meat thicknessThe thickness of the base of the stacks (minced meat) should be in the range of 1-1.3 cm. Otherwise, the minced meat may not be baked.
Beat the finished minced meatAfter beating, the minced meat becomes more tender and holds its shape better.
Ensure uniform baking of stacksFor this product, you should not place it tightly in the mold; it is important to leave a gap of approximately 1.5 cm between them.
Proper serving of the finished dishStacks should be served as a separate dish (without a side dish). If desired, you can add chopped fresh vegetables to the plate with stacks.
Use cheese as a garnishIt is recommended to sprinkle the cheese on the stacks approximately 10 minutes before readiness, so that the product has time to melt and brown.
When using raw potatoes as a filling, they should be grated before use.If you grate the potatoes in advance, they will darken and the dish will lose its appearance.
Make correct ingredient substitutionsFor example, boiled eggs can be replaced with fresh mushrooms, and potatoes with carrots or zucchini.

Stacks of minced meat are more aromatic if spices are added to both the minced meat and the filling. For example, you can use ground pepper, cilantro, dill and even mint leaves in the recipe. The most important condition for preparing a dish is maintaining the temperature in the oven.
