- 1/2 tsp. mixture of ground peppers;
- 5 g dill.
Step-by-step cooking process
You can prepare meat zrazy with buckwheat according to this recipe:
- First you need to pour the buckwheat onto a sieve and rinse it with running water.
- Then it should be poured into a saucepan, pour in water in a ratio of 1:2 and put on fire. You will need to cook the cereal until the moisture has completely evaporated for 20 minutes. Ready buckwheat needs to be cooled.
- While the cereal is cooling, you can peel the onion and chop it into small cubes. The cubes can be placed in a frying pan heated with sunflower oil and fry until transparent, then add the boiled champignons cut into small pieces and continue frying for at least another 5 minutes.
- Next, you need to place the minced meat in a bowl, add table salt and a mixture of peppers and mix. Place half of the fried onion and champignons into the pan with the boiled buckwheat and stir.
- Now you need to form a flat cake from the minced meat, put some of the filling on it and roll into a ball so that the filling is inside. Thus, it is necessary to form all the zrazy and place them on a hot frying pan greased with sunflower oil. Zrazy should be fried until crisp on all sides.
- After frying the zrazy, you need to transfer it to the remaining onion and mushroom frying, pour in the cream and broth, and put the container on the fire. After the liquid boils, turn down the heat and simmer the zrazy in the creamy sauce until thickened. This will take about 10 minutes.
Before serving, zrazy should be sprinkled with dill.
Preparation: recipe with mushrooms in the oven
Step 1.
Preparation of minced meat. Cut the meat into small pieces and twist through a meat grinder twice.
Step 2.
Soak the bun pieces in milk and also twist them using a meat grinder and add them to the minced meat. Skip the garlic and onion. Add an egg, you can use the white, and grease the zrazy with the yolk before baking. Mix all ingredients and add spices.
Step 3.
Let's prepare the filling. Wash the mushrooms and cut them into cubes.

Now let's get started. Divide the minced meat into 12 or 15 parts and form into balls. Flatten the ball on a plate and place 1-2 tsp of filling in the middle. Delicious served with salads.

Zrazy with minced mushrooms in a frying pan is prepared in the following way:
- The first step is to prepare the chicken meat. It will need to be washed well under running water and cut into large pieces. The onion must be peeled and cut into 4 equal parts. The garlic will also need to be peeled. Pour milk over the bread slices, let them absorb the liquid a little, and then squeeze the milk out of the bread with your hands.
- Next, you will need to install a small attachment on the meat grinder and pass the meat with onions, garlic and squeezed bread through it. You need to break 2 eggs into the final minced meat and mix the components thoroughly until a single mass is formed.
- Now you need to make the filling. The champignons can be washed in cold water, cut into small pieces and placed in a frying pan with heated sunflower oil. While the mushrooms are fried, they should be stirred constantly. After 3 min. To the mushrooms you will need to add peeled and finely diced onions. The components need to be fried for about 2 - 3 minutes.
- Then you need to pour sour cream into a bowl, add eggs to it and beat the mixture with a fork until smooth. The resulting mixture should be poured into the frying pan with the mushrooms and served until cooked over low heat. The omelette will be ready when the mixture becomes dense.
- Then you need to take part of the minced meat, make a flat cake out of it, place a small part of the prepared filling in the center and form the workpiece in the shape of a cutlet so that the filling is inside. Each piece must be rolled on all sides in breadcrumbs.
- Next, you will need to melt all the butter in a frying pan and lay out the preparations.
- Zrazy should be fried over low heat until a brown crust forms on both sides. If the butter starts to burn, you can add a little vegetable oil to it.

- 0.5 tbsp. milk;
- 0.5 tsp. table salt;
- 0.5 tsp. chopped black pepper;
- sunflower oil for frying.
Step-by-step cooking process
Zrazy with minced mushrooms in a frying pan can be prepared as follows:
- You need to pour oil into the frying pan and send it to heat up. Peel the onion, remove the husk, place it on a kitchen board and chop into cubes. You will need to add the onion to a frying pan heated with oil and fry until golden.
- Then the mushrooms should be rinsed under water, dried using paper towels, finely chopped on a cutting board, poured into a frying pan with the onions, stirred and cooked over moderate heat for several minutes. After 5-7 minutes. you can add a little salt and pepper.
- Place slices of bread in a bowl, pour milk over them and leave for at least 15 minutes. You need to transfer the minced meat into another container, add a raw chicken egg to it and mix. The second onion must be peeled, placed in a blender bowl and pureed. A meat grinder is also suitable for this purpose.
- Onion puree should be added to the minced meat, the bread soaked in milk should be added there, having previously squeezed it out, add a small amount of salt and pepper, mix thoroughly and make several flat cakes, making indentations in them. Afterwards, you need to wet your hands, take a small portion of minced meat, place it in the recess made on the flatbread, and seal it so that the filling is not visible. In this way, you will need to form the remaining zrazy.
- Pour wheat flour onto the parchment, roll the zrazy in it on all sides, place them in a heated frying pan, coated with oil, and cook until golden brown, turning over, over moderate heat.
- Fried zrazy can be placed on portioned plates, garnished with pickles and served with mashed potatoes.
Step by step recipe
First you need to make the mushroom filling for the zraz. Fry finely chopped onion in a frying pan over medium heat in vegetable oil until translucent. Then add carrots and fry until golden brown. Add finely chopped mushrooms, fry for another 10 minutes or until all the liquid has evaporated. Turn off the heat and let the filling cool.
Then prepare minced meat for future meat preparations. Mix the meat (pork and beef) twisted in a meat grinder. Add 1 egg and bread soaked in milk. Add salt and pepper to taste, mix well.
From the minced meat we have prepared, it is necessary to form a medium cake, approximately 10 by 10 cm in size or a little less, about one and a half cm thick. Place 1 tablespoon of the onion-mushroom filling prepared in advance in the center of the meat cake.
Carefully pinch the edges so that the filling does not fall out of the cutlet during frying. Form into a cutlet shape. Bread the zrazy, first roll in beaten egg, then dip in breadcrumbs.
Fry the zrazy over medium heat in vegetable oil in a frying pan until golden brown and cooked through.
Zrazy should be served hot or warm with a side dish and vegetables. It will be very tasty if you also make sauce for the meat. Bon appetit!

You can prepare meat zrazy with chanterelles according to these instructions:
- To begin with, you can peel the onion and finely chop it into cubes. The chanterelles should be washed to remove all dirt and finely chopped. Now you can heat the frying pan, pour in sunflower oil and lay out the chopped ingredients. Mushrooms and onions should be fried until the chanterelles give up moisture and the onions become golden.
- Next, you need to fill the saucepan with water and put 2 eggs in it. Place the saucepan on the stove and cook the eggs for 10 - 13 minutes. from the moment the water boils. Boiled eggs need to be cooled by filling them with cold water, then peeled and finely chopped with a knife.
- Now in a bowl you can put the onion and mushroom frying, an egg, pre-chopped dill and parsley, add 1/4 tsp. ground pepper with table salt and mix the ingredients well.
- Then you need to cut off the crusts from the bread, the soft part of the bread can be placed in a bowl and poured with milk.
- When the bread has absorbed the liquid a little, you will need to squeeze it out with your hands and add it to the minced chicken. You also need to break an egg into the meat, add the remaining pepper and salt and mix the ingredients until smooth.
- Afterwards, you need to divide the minced meat into several small parts, form each part into an oval cake and place part of the filling in the center. Now you need to wrap the meat in the shape of a cutlet and roll all the cutlets in breadcrumbs.
- Now the workpieces can be placed in a frying pan with the addition of sunflower oil and fry them on both sides until a brown coating forms. It is better to fry the zrazy over low heat so that they are well cooked inside.

- First, you can put 2 eggs in a saucepan, fill them with water and send them to cook on the stove. In 10 minutes. After the water boils, the eggs will be cooked and will need to be poured with cold water so that they cool faster.
- In the meantime, you can peel the onion and chop it into small cubes.
- The champignons need to be washed under running water and cut into large cubes; during the frying process they will lose half of their volume. Pour 30 ml of sunflower oil into a heated frying pan, add onion and fry it for 2 - 3 minutes. until transparent. You will need to place the minced pork in a deep bowl, add a raw egg, slices of bread without crusts squeezed out of excess milk, add the remaining salt and pepper and mix the minced meat well until a homogeneous mixture is obtained.
- Then you need to form a round cake from part of the minced meat, place a portion of the filling in the center and wrap the cake so that the filling is inside. This way you will need to make all the zrazy and roll them in flour.
- Next, you need to put the zrazy on a hot frying pan, pouring the remaining sunflower oil into it. Zrazy should be fried on medium heat for about 3 minutes, then turn them over and continue to fry for another 3 - 4 minutes. After this, you need to carefully pour a small amount of water into the pan, close the lid and simmer the zrazy for 5 - 7 minutes. Ready-made zrazy can be placed on plates and each serving can be decorated with fresh parsley.
