What kind of pies have we prepared for you? We were looking for different cooking options and all kinds of fillings for this simple but such a popular dish. We had juicy and tender belyashi with meat on our menu. We tried our hand at experimenting with yeast dough and making products with cherries from it. But the pastries that we will prepare today are a real bestseller in the culinary world. These are apple pies in the oven!
When I was just thinking about this topic, it seemed to me, well, what can I say here? And everything is clear and simple. However, after digging through my notes, I found such interesting, but, unfortunately, forgotten recipes. With great pleasure I will bring them back “to life” and describe them in detail. And I am also grateful to all those who, like me, are looking for different ways not only to prepare, but also to decorate a dish. Now is the time to remember pies with fish. Remember how cute they look? One tiny touch, and we see not trivial products, but a new molding option. The ideas of many authors inspired me, so the collection turned out to be quite large. Of course, I am also waiting for your suggestions, cooking and shaping options. I really hope that I have infected you and that you will try one or more recipes from the collection.
Butter pies with apples made from yeast dough in the oven
Now we will try one dough, Viennese. It is very simple to prepare, and in the end we get tender, fluffy pastries. By the way, Viennese dough is suitable not only for sweet pastries. I remember very well how my grandmother made snack pies from it. But the best thing she did was baked goods, which were filled with apples and cottage cheese.
Ingredients:
- Milk – 250 ml.
- Eggs – 2 pcs.
- Yeast (pressed) – 18 gr.
- Sugar – 120 gr.
- Butter – 100 gr.
- Flour – 600 gr.
- Salt – 0.5 tsp.
- You can also add lemon zest and vanilla sugar to the dough.
Filling:
- Apples – 7 pcs.
- Butter – 1 tbsp.
- Sugar – 4 tbsp.
- Cinnamon
Preparation.
Crumble the pressed yeast.
Mix them with sugar. Pour half the warm milk into the bowl with the yeast. Mix the base for the dough. Add 4 tbsp. sifted flour. Mix.
Cover the bowl with the dough with film and let it stand in a warm place for about 1 hour.
In a separate bowl, combine salt, remaining sugar and vanillin. Beat in the eggs. Whisk the mixture.
Mix the dough.
Add the remaining warm milk and the egg mixture into the bowl with the dough. Melt the butter and add it to the dough. Mix.
Add flour in small portions and mix after each portion.
Knead the finished soft dough on the surface for 10-15 minutes. It sticks to your hands and that's how it should be.
Grease a bowl with oil and place the kneaded dough into it. Cover the bowl and place in a warm place for another 2-2.5 hours.
While the dough is standing, it will need to be kneaded every 30-40 minutes. Open, crush and cover again with film.
Let's prepare the filling. Peel the apples, peel them and remove the core. Cut them into small pieces.
Melt butter in a frying pan.
Add sugar. Mix with sugar.
When the sugar starts to melt, add the apples. Mix everything well and fry for a few minutes.
Place the finished filling in a sieve to drain excess liquid. Cool the filling on a plate before using.
Divide the risen dough into 50g pieces (this is about 20-25 pieces).
Knead the pieces, round them and let them rest for 10 minutes.
Sprinkle apples with cinnamon. Mix. We stretch each piece one by one into a flat cake. Place the filling in the middle.
We assemble and fix the edges.
Place the pies (seam side down) on a baking sheet and let them rest for 10-20 minutes until they have risen.
Brush them with beaten egg. Bake at 180⁰ for 30-35 minutes.
Cool the finished baked goods. Even though the dough takes a long time to prepare, it is worth it. The dough turns out very fluffy!
How to make pies with apples from yeast dough
Apple filling
While the dough is rising, prepare the apple filling. If desired and to taste, you can add orange or lemon zest, cinnamon, and cookie crumbs to the apple filling, but in any case, prepare the apples correctly in advance. By removing excess juice, you will not worry about leaking pies in the oven.
Peel the apples.
Cut into small cubes (we cut vegetables for Olivier salad of similar sizes).
Sprinkle with lemon juice and sprinkle the filling with sugar. Lemon juice is needed so that ripe fruits release excess moisture as quickly as possible. Granulated sugar also contributes to this.
Before adding the filling to the pies, squeeze it out so that the juice from the apples does not leak out in the oven during baking.
If the apples are very juicy and you are worried that the apple pies will start to leak in the oven, prepare the filling in a different way. Cut the fruit into medium-sized cubes, place in a frying pan with a small piece of butter and sprinkle with sugar. Simmer the apples over low heat for 3-4 minutes. After complete cooling, drain off excess liquid (you can drain the filling in a colander). How else can you make apple filling? A quick and delicious recipe for pies with apples and cinnamon
Who among us doesn’t like quick recipes, when a minimum of time passes from the idea to the finished result? We will now prepare these products for you in a very, simply record-breaking time! The results are small, crispy strudels. By the way, these are Moldavian pies. Most often they are prepared with cherries, plums or apples.
Ingredients:
- Flour – 350 gr.
- Water (warm) – 125 gr.
- Vegetable oil – 120 gr.
- Salt – 0.5 tsp.
Filling:
- Apples (already peeled) – 1 kg.
- Butter – 50 gr.
- Cinnamon – 1 tsp.
- Sugar (ideally brown, it will give the filling a caramel taste) – 2 tbsp.
- Vanilla extract – 1 tsp.
Preparation.
Sift flour into a bowl.
Mix flour with salt, vegetable oil and warm water. Mix the dough.
The dough should be allowed to rest for 10-15 minutes. To do this, roll it into a ball and cover it with film.
Peel the apples and remove the core. Cut them into small pieces.
Melt the butter in a frying pan. Pour the fruits and raisins into the pan and simmer them for 5 minutes over low heat.
Add vanillin and cinnamon to the filling. Mix.
Divide the proofed dough into pieces of approximately 35g (17 pieces).
Roll out each piece into a layer less than 1mm thick. The dough should be so thin that the pattern on the table can be seen through it.
Place the filling on the edge of the layer. We bend the edge to the middle and wrap the roll.
Place the pieces on a baking sheet and brush them with beaten egg.
Bake for 20 minutes at 180C.
Sprinkle the finished mini-strudels with powdered sugar when the pies have cooled completely.
A quick and delicious recipe for pies with apples and cinnamon
Forming pies
The risen dough should be divided into pieces, which we will place on a surface sprinkled with flour. The pieces are the size of a large chicken egg. Each piece of dough is a future pie. Particularly demanding housewives distribute the dough into pieces according to weight so that the baked goods look perfect, all the pies are the same.
Roll out each piece of dough using a rolling pin (or press with your hands).
Place the filling on each flatbread (1 heaped teaspoon). To taste, you can sprinkle the filling a little with sugar (but I usually don’t do this, the apple filling turns out sweet anyway).
We pinch the pie so that there are no holes left. Place on a baking sheet covered with parchment paper.
Now you need to grease the apple pies so that they get a golden brown crust in the oven.
The secret to a crispy golden brown crust is simple - mix the yolk of one egg with a pinch of salt and add 1-2 tbsp. spoons of milk.
I noticed that if you grease the baked goods not just with yolk, but with yolk with water or milk, the surface turns out beautiful, glossy and not as dark as when greased only with yolk. Using a pastry brush, grease all the pies on the baking sheet. You can sprinkle the top of your baked goods with sugar or baking spices. Place the pies at a short distance from each other so that they do not stick together in the oven (yeast dough increases significantly in size).
By this time you need to turn on the oven to heat up (temperature 180 C). After 15 minutes, our pies will “grow” a little and increase in size. Now it's time to go into the oven! 5 minutes after the pies have been in the oven, you need to reduce the baking temperature to 160 C and bake for another 25-30 minutes. After half an hour, the apple pies are ready in the oven. Take out the baking sheet with the pies and place them on a plate or in a bowl. With hot tea, milk or kefir - it will be delicious with any drink. These are the ruddy brothers we got!

I confess again and again. That of all types of dough, my favorite is puff pastry. It makes light, simply fluffy pies. The dough goes wonderfully with the apple and those spices that go with the fruit. They can be baked in the oven, or they can be fried.
Ingredients:
- Flour – 400 gr.
- Water – 125-150 ml.
- Vegetable oil – 100 ml.
- Salt – 0.5 tsp.
Filling:
- Apples – 3-4 pcs.
- Sugar – 90 gr.
- Cinnamon – 1-2 pcs.
- Ground cinnamon – 1 tsp.
- Vanilla extract – 1 tsp.
- Lemon juice – 2 tbsp.
Preparation.
Sift the flour. Add salt and mix.
Add vegetable oil.
Grind with flour.
Pour in water portionwise to make the dough dense and elastic. First, pour in half of the available water. Mix. If necessary, add more water.
Knead the dough on the surface for 3-4 minutes. Wrap the dough in film and let it rest for 20 minutes.
Peel the apples from seeds, membranes and peels and cut into medium-sized pieces.
Place the apples in a bowl and pour lemon juice over them.
Preparing caramel. Melt sugar in a frying pan. Just pour it into a hot frying pan and wait for it to melt. Rotate the pan periodically so that it caramelizes faster.
Add apples and spices (two types of cinnamon and vanillin) to the caramel. Stir and simmer the fruits over high heat until they caramelize.
Remove the cinnamon stick. Cool the finished filling.
Divide the dough into equal 12 parts.
Roll each piece into a ball and flatten slightly. Let the pieces rest for 10 minutes.
Roll out one of the pieces of dough into a thin, long rectangular layer. We keep the rest under film.
Place a tablespoon of filling on one edge, in the corner.
We wrap one side of the dough into a triangle, pulling the edge to the middle.
You can fasten it with water. You just need to lightly moisten the edges of the dough with your fingers.
And again wrap the dough into a triangle.
We continue to wrap.
And we pinch the edge to fix the structure.
Heat the oil in a frying pan. There should be a lot of oil so that the pie is deep-fried. Place the pies seam side down. Fry over medium heat.
Place the pies fried on both sides (fry for 4 minutes on each side) on paper towels.
Thanks to the fact that we wrapped the dough in several layers, we get flaky pastries. By the way, you can not only fry, but also bake these pies. If you cook in the oven, then bake at 180 degrees. approximately 20 minutes.

Pies with apples made from puff pastry
Apple filling with nuts and raisins
This filling, which includes nuts and raisins, can be used to make strudel. It is recommended to pre-soak raisins in hot water for 10 minutes to remove dirt and chemicals.
After this, drain the water and dry the raisins, spreading them on a paper napkin.
Ingredients
Required Products:
- 2 apples;
- 3 tbsp. l. Sahara;
- 1 tbsp. l. lemon juice;
- 50 g raisins and the same amount of walnuts;
- butter - 30 g;
- breadcrumbs – 15 g;
- 30 ml cognac.
Preparation
Sequencing:
- The previously peeled fruits are cut into small cubes.
- Next, the fruit pieces are placed in a frying pan with heated oil, sprinkled with sugar, lemon juice is added and simmered for 3 minutes.
- Then add raisins and cognac to the fruit composition, mix it and simmer until the excess liquid evaporates.
- Remove the finished filling from the heat and allow it to cool.
- Meanwhile, fry the nuts in a frying pan. After cooling, crush them with a rolling pin and combine with breadcrumbs.
- When preparing a pie, first lay nuts on the dough, and then apple filling on them.
Easy to prepare pies with apple filling
If you don't like to "bother" with the filling. Here's a great recipe for you! What else is he good at? Because the pies are shaped in an unusual way. The bouquet of taste and aroma of crispy golden brown crust and applesauce will not leave you indifferent to this dish.
Ingredients:
- Sifted flour – 250 gr.
- Sour cream (fat) – 100 gr.
- Butter (melted) – 100 gr.
- Sugar – 100 gr.
- Salt - a pinch
- Baking powder - half a teaspoon
- Apples – 6 pcs.
- Egg and sugar for decoration
Preparation.
Mix butter, salt, sugar and sour cream.
Sift the flour together with the baking powder again.
Combine liquid and dry ingredients. Knead soft, tender dough.
Let the dough rest for 30-40 minutes in the refrigerator. But first, let's wrap it in film.
Peel the apples. Cut them in half and remove the core.
We make a sausage from the finished dough. Divide the sausage into 12 parts.
We roll the parts into balls and work with each of them one by one.
Roll out a layer of dough from the ball to 2-3mm high.
Place half of the dough in the middle of the dough sheet.
Wrap the dough around the apple; we secure the edges.
We will bake the pies with the seam side down.
Brush each piece with beaten egg and dip in sugar.
Bake for 40 minutes at 200⁰.
Long baking is justified, since the fruit takes a long time to cook. But the end result is a crispy crust with a soft center.

Recipe for preparing apples for the winter without sugar
Fruit filling can be prepared for future use. This saves time for making apple pie in the future.
Ingredients

- 2 kg apples;
- lemon – 1 pc.;
- 100 ml water.
Preparation
Step-by-step instruction:
- First, wash the fruit well and remove the core. Then you need to cut them into pieces.
- Next, place the apples in a saucepan, add water and lemon juice and wait until the mixture boils. Boil the fruits for 10 minutes, stirring constantly.
- After this, the apples are distributed into sterile jars, sealed and left until they cool completely.
There is another recipe for making the filling. It is designed for 2 kg of fruit.
They work like this:
- First, cut the fruit into slices, pour 2 tbsp. water, bring to a boil. After this, you need to boil them for a quarter of an hour, remembering to stir.
- Then, after rubbing the resulting composition through a sieve, the fruit mass is again sent to the pan. Cook the applesauce, reducing the heat as much as possible, until thickened.
- When the filling is ready, distribute it into jars and sterilize for a quarter of an hour, covering the containers with lids. Having rolled up the jar, they are sent for storage in a cold place.
Curd pies with apples made from curd dough
Cottage cheese is considered an ideal combination for apples. And so in this recipe I decided to show how to prepare curd dough for a sweet filling. By the way, I advise you to “play” with the thickness of the curd dough. Then you will see for yourself how different a dish made from the same ingredients can sound!
Ingredients:
- Cottage cheese – 140 gr.
- Flour – 200 gr.
- Butter – 120 gr.
- Baking powder – 0.5 tsp.
- Salt – 1/3 tsp.
Filling:
- Apples – 600 gr.
- Butter – 30 gr.
- Sugar – 50 gr.
- Lime (or lemon) juice – 2 tsp.
Preparation.
Cool the butter in the freezer for about half an hour. Combine flour with salt and baking powder.
Rub the oil into the dry mixture.
To make grating easier, periodically dip the butter into flour.
Mix the butter into the flour until crumbly. Put cottage cheese into the dough and knead the dough.
We form the finished dough into a sausage, wrap it in film and put it in the refrigerator for 2 hours.
Let's prepare the filling. Peel and core the apples. Pour lime juice into the finely chopped pieces.
Melt the butter in a frying pan. Pour sugar into the pan.
When the sugar melts a little, add pieces of fruit.
Simmer the apples until excess moisture evaporates. You need to constantly stir them with the caramel so that the caramel does not burn and the fruits are evenly caramelized.
Divide the dough into 15 parts of 30g each. Roll out the pieces to about 3mm thickness.
Add the filling and mold it like dumplings.
The pies are similar to sochniki. And in principle, if you remember that there is cottage cheese in the dough, then it’s probably true! We get one of the options for Sochniki!
Bake the pies at 200⁰ for 20-25 minutes.
Sprinkle with powdered sugar.
By the way, I didn’t know, but the author of the recipe claims that this dough can be stored for up to 2 (!) days! I admit, I don’t keep it, because it makes such delicious cookies!
Curd pies with apples made from curd dough
Yeast apple pies made from kefir dough
Let's prepare an unusual type of yeast dough with kefir. The aroma, freshness and taste are preserved for a very long time in this dough. Look how beautiful and ruddy they are, your hand is just reaching out to try this baked goods.
We will need:
- Flour – 450 gr.
- Butter – 75 gr.
- Sugar – 3 tbsp. l.
- Eggs – 1 pc. (large or 2 small)
- Salt – 0.5 tsp.
- Dry yeast – 1.5 tsp.
- Warm kefir – 225 gr.
Apple pies in the oven without yeast from shortcrust pastry
Shortbread dough is quick to prepare. Just to make it comfortable to work with, don’t forget to cool it! The advantage of this dough is that you can adjust the thickness of the layer in the pies: the dough is tasty and fluffy, and thin. By the way, there are baked goods made from the same dough and with the same filling, but the molding of the products is different. And these baked goods have different names! So, experiment, look for your ideal!
Ingredients:
- Flour – 350 gr.
- Sour cream – 150 gr.

- Butter (soft) – 140 gr.
- Sugar – 2 tbsp.
- Baking powder – 1 tsp.

Peel the apples and grate them on a coarse grater.
Add sugar and cinnamon (optional) to the grated apples. Mix.
To make it easier to work with, divide the dough into several parts. Each part is 3-4mm thick.
Squeeze out round pieces with a mold.
Place the filling in the middle of the dough.
If there is liquid in the filling, you need to drain it!
We connect the edges of the workpiece and fix it with the teeth of a fork.
Brush the dough with beaten egg.
Bake the pies for 25 minutes. Oven temperature - 190⁰.

A simple recipe for apple filling for baking
The apple pie filling will be more successful if you make it from strong, juicy, slightly sour fruits. It can be used not only in making pies, but also as a filling for pancakes.
Ingredients
Have to take:
- 300 g apples;
- 50 g granulated sugar;
- 30 ml water.
Preparation
Step-by-step cooking process:
- First of all, cut the prepared apples into pieces.
- After this, place them in an enamel pan, add liquid and granulated sugar, and mix.
- Cover the pan with a lid and allow the mixture to boil. Remembering to stir constantly, cook the mixture over low heat until the apple pieces soften.
How to make applesauce pies
Can semi-liquid applesauce filling stop us? I'll show you how you can make bomb pies with this filling! One more moment! If the puree is too liquid, you can put it on a sieve lined with gauze. Another way is to boil the puree with potato starch (2-3 tablespoons per 10 medium fruits).
Ingredients:
- Flour – 300-350 gr.
- Butter – 50 gr.
- Vegetable oil – 50 gr.
- Eggs – 1 pc.
- Milk – 120 ml.
- Yeast – 6 gr.
- Sugar – 3 tbsp.
Filling:
- Apples – 5-6 pcs.
- Cinnamon + coriander
- Sugar
Preparation.
Heat the milk (50⁰). Add butter to it and stir until the butter melts.
When the butter has almost melted add sugar. Stir until the sugar begins to dissolve.
Add yeast. Mix.
Add vegetable oil.
Beat in the egg and mix the whole mass thoroughly.
Sift the flour and immediately add all the flour to the base.
Mix the dough. In this case, no kneading is needed, just mix all the ingredients until smooth.
Place the dough in the refrigerator for 4 HOURS!!!! It’s possible for 6, and even 12. But the test must be allowed to stand!!! IN THE COLD!!!
Peel the apples and remove the cores.
Sprinkle the apples cut into random pieces with sugar. Add sugar to taste, from 2 tbsp. up to 1 tbsp. I took half a glass, the taste of this puree completely satisfied me!
Let the slightly boiled (10 minutes) apple pieces cool.
Why boil fruit at all? So that they release excess liquid. Then the filling will not leak and will not shrink in baking.
Puree them in a blender. At this stage, I had already drained the liquid and kept the pieces in a sieve.
I add a little more lemon juice and vanilla sugar. You can add other spices to flavor the filling.
In baked goods, the filling should be bright in taste!
Add cinnamon and coriander (0.5 tsp each) to the finished puree. Mix.
As you can see, the puree turned out to be quite dense.
The dough has risen a little in the refrigerator. But we will get a greater effect after the first proofing of the dough.
In the meantime, knead the dough on the work surface. The dough is so soft and tender that you don’t even need to beat it on the table, it’s already so fluffy!
15) Divide the dough into several parts to make it easier to work with.
Roll out the dough into a thin, literally transparent layer.
Align the edges of the layer.
At this point, turn the oven on to the lowest setting. You also need to prepare sugar by mixing it with cinnamon. We use sugar and cinnamon randomly.
Cut the layer into rectangles. I'll show you a little later. That the dimensions of the workpieces may be different.
Place puree on the edge of each piece. And spread the filling. By reducing it to nothing to the opposite edge of the workpiece.
Roll each rectangle into a roll.
Before placing the rolls on a baking sheet, dip them in cinnamon sugar.
Place the pies at a distance from each other. Place in the oven without increasing the temperature. And at the same time, do not close the oven door. Let the pieces stand like this for 10-15 minutes.
But you can also make regular pies, just smaller in size so that they are cute))) Squeeze out the round pieces.
Place applesauce in the middle of each piece.
We connect the edges of the workpiece and slightly flatten them on top.
And in the same way we “wet” the products in sugar. Place the preparations on a baking sheet.
Bake for 15-20 minutes at 180⁰.
Leave the finished products for 10 minutes in the oven, which is turned off but still warm. Then we take it out and let it cool a little.
Yeast dough, but it turns out so thin! Pies are just the bomb!
Have you noticed that we did not put the yeast dough in the heat, but in the cold? This is how French yeast dough is prepared. It is extremely tasty, much tastier than usual. And it’s so easy to prepare that even kids can do it!
How to prepare apples for pies for the winter?
The filling for apple pies, when prepared for the winter, is absolutely not inferior in its properties to the freshly prepared filling.
- For those who are accustomed to seeing juicy fruit slices in pies, it is advisable to cut the apples for preparation in a similar way and preserve them with the addition of sugar.
- If the texture of the fruit base is not important, you can prepare apples for pies in the form of thick jam, marmalade, puree or apple chips.
- If you have free space in the freezer, sliced pie filling can be easily frozen and then transferred to bags or containers for storage.
Apples for the winter for pies in slices
Making apples for pies in cubes, cubes or slices is suitable for baking charlottes, large open and closed pies, and portioned products with filling. The amount of sugar can be adjusted depending on the sweetness and natural acidity of the fruit and the taste preferences of the family.
- apples – 1 kg;
- granulated sugar – 2-4 tbsp. spoons.
- The apples are thoroughly washed, cleaned of the seed chambers and, if desired, peeled.
- Chop the pulp into slices or cubes, place in an enamel container, sprinkle with sugar and leave for 5 hours, stirring from time to time.
- Place the mixture along with the juice into jars, cover with lids and sterilize in boiling water for 15 minutes.
- Apples are sealed in slices for the winter with lids for pies, and wrapped upside down for a day.
Five-minute apples for winter pies
“Five Minute” apples for pies are prepared without sterilization, but require the addition of more sugar. It is preferable to use sour or sweet and sour aromatic fruits. If desired, the fruit mass can be seasoned with ground cinnamon by stirring in the additive before starting to boil the base.
- apples – 1.5 kg;
- granulated sugar - 1 cup.
- The apples are washed, peeled from the middle and, if desired, peeled, cut into cubes, bars or slices.
- Cover the apple slices with sugar and leave for 5-6 hours or overnight.
- Place the container with the workpiece on the stove, bring the contents to a boil while stirring, and boil for 5 minutes.
- Place the apple pie filling in boiled jars, roll it up with sterile lids, and put it under a fur coat until it cools completely.
Apple jam for pies
Apple preparation for pies for the winter in the form of thick jam is an ideal option for those with a sweet tooth and those who prefer sweet pastries. When boiling the apple mass, you should achieve the point when, after stirring the workpiece with a spatula or spoon, a trace remains that does not tighten within a few seconds.
