How to cook “Korean-style green beans”

Prepare all the necessary ingredients. I used frozen boiled beans. It needs to be defrosted first.

Place the prepared beans in a salad bowl, peel the carrots and grate them on a Korean carrot grater. Add to beans.

Mix oil, vinegar, sugar and coriander. Pour the dressing over the vegetables. Mix with a spoon and remember a little with your hands.

Then add finely chopped garlic, salt and pepper to taste. Mix everything well again.

Cover the salad with a lid and refrigerate for 2-3 hours. Shake or stir occasionally.

Such dishes (with Korean coriander-based seasoning) are made from almost all vegetables. They are good made from beets, carrots, eggplants, zucchini and even cucumbers. Made with just a few ingredients (and a generous dollop of garlic), this appetizer is colorful and zesty.

Korean green (or asparagus) beans are no exception to this big list. Sweet pods, imbued with the aroma of spices, acid and garlic, turn out to be very tasty. Green beans can also be prepared for future use for the winter. In this brine it will turn out nourishing, tender and juicy. Carrots add the necessary sweetness to the dish, and garlic adds a slight spiciness.

To prepare Korean green beans for the winter, it is recommended to use natural fruit vinegar. This could be a wine or apple product. If you do not have natural acid available, replace it with table vinegar (after recalculating its amount).

Ingredients for preparing Korean-style green beans for the winter:

  • asparagus (green) beans – 500 g
  • carrots – 1 pc.
  • vegetable oil – 50 ml
  • garlic – 3-4 cloves
  • table or apple cider vinegar 6% – 3 tbsp.
  • Korean spice mixture – 1 tbsp.
  • water – 300 ml
  • sugar – 1.5 tbsp.
  • salt – 1.5 tsp.

Korean green beans - recipe for the winter:

We clean the pods, cut them into small segments, and put them in a bowl. Pour boiling water over the beans and cook for 2-5 minutes.

Place the green beans in cold water (to preserve color), then drain and place the asparagus in a bowl.

Cut the carrots into thin strips (or three on a grater for Korean carrots) and add it to the beans, also add chopped garlic.

Mix all the ingredients.

Place the resulting mixture in a dry and clean container. Thoroughly compact the mass.

Add sugar, salt and spices to the water. Bring the mixture to a boil and pour the beans into the jars. Add the recommended amount of vinegar.

Cover the jar with a lid and sterilize the workpiece in a pan of water for 20-25 minutes (after boiling).

Korean-style green beans are ready for the winter!

Turn the hermetically sealed jar over and cover with a blanket until completely cooled. We store the workpiece in the proper place for this purpose - a cellar or pantry.
