The classic version of the dish is prepared from smoked chicken wings, peas, potatoes and onions with carrots. The ingredients will be enough for 5-6 servings.


Pea soup with smoked wings

For preparation you will need the following components:

  • 5 smoked chicken wings;
  • 3 potatoes;
  • 1 tbsp. peas;
  • 1 carrot;
  • 1 onion;
  • 3 tbsp. l. sunflower oil;
  • salt;
  • ground black pepper.

Step-by-step preparation scheme:

  1. First you need to wash the peas in hot water. You can also soak the peas for 4 hours.
  2. Afterwards, you need to take a large saucepan, add peas, pour in 2 liters of water, put on high heat and wait until it boils.
  3. While the peas are cooking, you need to wash the potatoes, peel them and chop them into strips. Also peel the onion and chop into cubes. You can also peel the carrots and chop them using a coarse grater.
  4. Next, you need to heat the frying pan, pour oil into it, add grated carrots and chopped onions, add salt and pepper and fry until golden.
  5. Now you can put the potatoes in the pan, cut the wings at the joints and after 5 minutes. add it there too.
  6. After 7 min. You need to add fried vegetables to the soup and mix evenly. The soup will need to be cooked for another 6 minutes, and then pour into portions and garnish with finely chopped herbs.

Composition of the dish

Pea soup with smoked wings and garlic is prepared according to the following recipe:

  1. First you need to place the peas in a colander, rinse them under running cold water and soak for 6 - 8 hours. Afterwards, the prepared peas should be transferred to a saucepan, filled with water and placed on the stove. Peas need to be cooked for 40 - 50 minutes.

  2. Next, you need to wash the potatoes, peel them with a knife or vegetable peeler and cut them into medium-sized cubes. The chopped potatoes should be added to the pan and continue to cook for about 10 - 15 minutes.
  3. Then the smoked wings need to be cut at the joints, cut off and the ends removed.
  4. Afterwards you will need to peel the onion, rinse it under water and chop it into small cubes. The carrots should also be washed, peeled and grated on a grater with small holes.
  5. Next, you need to heat the frying pan, pour sunflower oil into it and add onions and carrots. Vegetables should be fried until the onion becomes transparent.
  6. Now you need to add the smoked wings to the pan and bring the broth to a boil. When the soup boils, you will need to add fried vegetables, add table salt and crushed pepper and continue cooking for about another 10 minutes.
  7. Next, you need to peel the garlic, chop it very finely with a knife or press it through a garlic press. The dill should be finely chopped with a knife. When the soup is almost ready, add bay leaves, crushed garlic and chopped dill to it.

The finished soup should be left in the pan for 10 - 15 minutes before serving.

With chili pepper

To prepare a dish with chili peppers, you will need the following ingredients:

  • 500 g smoked chicken wings;
  • 1.5 tbsp. dry peas;
  • 5 potatoes;
  • 1 carrot;
  • 1 tsp. table salt;
  • 1/2 tsp. chopped pepper;
  • 1 chili pepper;
  • 3 liters of water;
  • 5 g dried dill;
  • 3 tbsp. l. sunflower oil.

Step-by-step cooking instructions:

  1. First, you will need to place the peas in a colander and rinse them thoroughly under running cool water. The washed peas should be placed in a saucepan, filled with water and left in this form for 5 – 7 hours.
  2. Next, you need to peel the onion, rinse it under running cold water and finely chop it into cubes. Chopped onion should be placed in a deep frying pan, pour sunflower oil into it and fry until golden brown.
  3. Afterwards you will need to rinse, peel the carrots using a vegetable peeler and chop them using a grater with large holes. Chopped carrots should be added to the onions and continue to fry for another 5 - 7 minutes.
  4. Now you need to place the smoked wings in the pan, fill the entire contents with hot water, add the washed peas and bring to a boil, setting the heat to maximum. When the water boils, reduce the heat to medium and cook until the peas are ready for 30 - 40 minutes.
  5. Then you need to wash the potatoes, peel them with a vegetable peeler, cut them into medium-sized cubes and add them to the pan. Chili peppers need to be cut into 2 parts, remove the seeds, chop finely and add to the pan. You also need to add table salt and crushed pepper to the soup and cook until the potatoes are ready for about 10 minutes.
  6. At the end of cooking, you will need to add dried dill, remove the soup from the heat, cover with a lid and let the dish brew for 20 minutes.

Soup with smoked wings and beans

You will need the following ingredients:

  • Dried beans – 70 grams.
  • Green beans – 100 grams.
  • Smoked chicken wings – 300 grams.
  • Chicken broth - 700 milliliters.
  • Olive oil – 30 grams.
  • Stem celery – 2 pieces.
  • Onions – 40 grams.
  • Smoked paprika – ½ teaspoon,
  • Tomatoes – 50 grams.
  • Chili powder - a pinch.
  • Potatoes – 100 grams.
  • Ground black pepper.

Let's look at how to prepare the ingredients. It is necessary to cut the green beans, pre-processing them. Cut it into diamonds. Leave the dried beans to soak. Soaking time - 8 hours. After cleaning, chop the onion. Potatoes must be cut into cubes. Then wash the celery and finely chop it. We move on to finely chopping the garlic. Next, chop the tomatoes, removing the stem.

Step-by-step preparation:

  1. Fry the onions and garlic until they turn golden brown. For sautéing we use olive oil. Prepare chicken broth. To do this, cook the chicken wings for 30-40 minutes. After boiling, remove the smoked meats from the broth.

  2. Add dried beans and cook until they soften. Beans can be used in several colors at once. Then add the potatoes. Next comes the frying of onions and garlic.

  3. After the broth boils, you need to add celery and green beans. Next, the remaining ingredients are used: sea salt, freshly ground black pepper, tomatoes, thyme, wine sauce, paprika, thyme, chili pepper.

The calorie content of this soup is 69.9 kcal per 100 grams. Before serving, pour the soup into bowls and place a wing in each.

This soup is also cooked without beans. Instead of beans, you can add vegetables such as kale, chard and sweet potatoes.

With bell pepper

To prepare a dish using bell pepper you need to prepare:

  • 100 g split dry peas;
  • 1 carrot;
  • 3 smoked chicken wings;
  • 0.5 onions;
  • 3 tbsp. l. sunflower oil;
  • 0.5 bell pepper;
  • 200 g potatoes;
  • 10 g parsley;
  • 1 clove of garlic;
  • 1 tsp. table salt;
  • 1/2 tsp. chopped pepper.

Pea soup with smoked wings and bell pepper can be prepared as follows:

  1. First you need to prepare the peas. To do this, rinse it in a colander under running cool water, place it in a saucepan, fill it with water and leave it like that for 4 - 5 hours. After the time has passed, you need to drain the water, pour in clean water, put the pan with peas on the stove and cook for about 40 – 50 min. over medium heat.
  2. Next, you need to peel the onion, rinse it under water and cut it into small cubes. The carrots should also be washed, peeled with a vegetable peeler and cut into thin straw.
  3. Now you should heat the frying pan, grease it with sunflower oil, place the chopped vegetables in it and fry until golden brown.
  4. Then you will need to cut the bell pepper into 2 parts, remove the core with seeds and cut one half into thin strips. Add the chopped pepper to the pan with the onions and carrots and continue frying for another 2 - 3 minutes.

  5. Afterwards, you need to peel the potatoes using a vegetable peeler, cut them into small cubes and place them in a saucepan with the almost finished peas. Peas and potatoes need to be boiled until the potatoes are soft.
  6. When the potatoes become soft, the contents of the pan need to be mashed using a potato masher.
  7. Now you will need to cut the smoked wings at the joints, cut off the ends and add them to the pan. You should also add fried vegetables to the pan, add chopped pepper and table salt and cook for about 10 minutes.
  8. Then you need to finely chop the parsley, peel the garlic and press it through a garlic press. Both components should be added to the pan at the end of cooking the soup, cover with a lid and let sit for 15 - 20 minutes.

Cooking features

  • Smoked wings must be fresh. When purchasing, pay attention to the expiration date, do not hesitate to inspect the product and smell it. The presence of pronounced sourness in the smell, and suspicious spots on the surface of the wings should alert you. It also doesn’t hurt to check the product’s ingredients to make sure it doesn’t contain any suspicious additives. It’s even safer to use home-smoked chicken.
  • Peas boil quite slowly, so before cooking they need to be soaked for 4-5 hours or even overnight, leaving them in a cool place for this time. Soaking allows you not only to soften the peas and speed up their further cooking, but also to rid the beans (at least partially) of substances that cause flatulence.
  • The cooking time for peas depends on whether they have been soaked, as well as on the size of their grains. After soaking, crushed peas are cooked for 40-50 minutes, without soaking - 1.5 hours. Whole peas take twice as long to cook. If you want the peas to become completely soft, then their cooking time can be increased further. If you don’t have the opportunity to spend so much time at the stove to control the process of preparing soup, you can entrust this task to a multicooker.
  • It's a good idea to add dill to your pea soup. It will give the dish a pleasant aroma and reduce gas formation in the intestines.
  • You can season the soup of peas and smoked poultry wings only with pepper and bay leaf, but the taste and aroma of the dish is well emphasized by many other seasonings, including curry, paprika, turmeric, and garlic.

In a slow cooker

To prepare soup in a slow cooker, you will need the following ingredients:

  • 300 g smoked chicken wings;
  • 500 g potatoes;
  • 1 carrot;
  • 1 onion;
  • 3 tbsp. l. sunflower oil;
  • 5 tbsp. l. dried split peas;
  • 1.5 liters of water;
  • 10 g parsley;
  • 2 laurel leaves;
  • 1 tsp. table salt.

Step-by-step cooking instructions:

  1. First you need to put the peas on a sieve, rinse them under running water, transfer them to a container and fill with cool water. Peas should be left in water for 4 - 5 hours.
  2. Next, you need to peel the onion, rinse it under running water and chop it into small cubes. The carrots will also need to be washed, peeled with a vegetable peeler and grated. Potatoes should be washed, peeled and cut into small strips. The parsley will need to be finely chopped.
  3. Now you need to pour sunflower oil into the multicooker bowl, add chopped vegetables and set the “Frying” mode for 30 minutes. After 5 minutes, add smoked chicken wings, chopped potatoes, and chopped parsley to the fried vegetables. You also need to add peas to the multicooker bowl, after draining the water from them.
  4. Then you need to pour water into the bowl, add table salt and bay leaves. Now you can close the bowl, set the “Stew” mode for 2 hours and cook until the time expires.

  3. Now you need to wash the potatoes, peel them with a vegetable peeler and chop them into medium cubes. The onion should also be peeled, rinsed under running water and chopped into small cubes. The chili pepper should be cut lengthwise into 2 parts, remove the seeds with partitions and chop into thin half rings.
  4. Then you need to peel the garlic, press it into a separate container through a garlic press, add mustard to it and mix thoroughly.
  5. You need to remove the smoked meats from the finished broth, cool slightly, separate the meat from the bones and cut them into small pieces.
  6. Now you need to bring the broth to a boil, add the prepared peas and cook for about 10 minutes. Then you should add chopped potatoes, onions, meat removed from the bones and chopped chili peppers, chopped pepper and table salt. The contents of the pan will need to be cooked over medium heat until the potatoes are cooked.
  7. At the end of cooking, add a mixture of garlic and mustard, bay leaves and cook the soup for another 2 - 3 minutes. The finished soup should be removed from the stove, covered with a lid and left for 10 - 15 minutes.

The finished dish should be poured into portioned plates and served with sour cream and rye bread. The soup can be made spicier by adding chili pepper seeds.

How to make delicious pea soup with smoked ribs

Place the pan on medium heat and pour in vegetable oil. Cut the onion into small pieces and place in a saucepan. Stirring and frying.

While the onion is frying, grate the carrots on a coarse grater. When the onion turns golden, add the carrots. And then fry everything together.

While everything is frying, cut the ribs.

And when the vegetables become soft, add the ribs to the pan.

Add washed peas and pour boiling water.

Add heat and bring to a boil. Close the lid, reduce the heat and leave to slowly gurgle. Now we wait until the peas are almost completely cooked.

While it is cooking, cut the potatoes into equal pieces.

We mind our own business. We don’t know how long the peas take to cook, we just periodically look into the pan and try to see if they are cooked or not. As soon as this moment has arrived, throw the potatoes into the pan.

Bring to a boil and adjust the amount of salt. Since the ribs were already salted, add a little. However, do it to your taste.

Season with pepper and continue cooking until the potatoes are ready.

When the potatoes are cooked, the soup is ready. Turn off the heat and let it brew for 10-15 minutes. Pour into plates, add herbs and serve.

  3. Then you will need to wash the onion, peel and chop into cubes. You also need to wash the carrots, peel and grate using a grater with large holes. Then pour oil into the frying pan, heat it, add chopped vegetables and fry until golden brown.
  4. You need to add a little water to the fried vegetables and simmer the ingredients. Remove the pan from the heat, cool the peas and potatoes and puree them using an immersion blender. If it turns out too thick, you can add a little boiled water to it.

To prepare, you need to use chicken wings, but store-bought ones will also work. We divide each of them into two parts. You can, of course, use only the pulp for cooking, but then we won’t get the taste that the enzymes released during cooking from the seeds will give.

Let's start cooking with the broth, which is prepared using the wings themselves. To do this, fill them with running water over high heat, bring to a boil, then lower the temperature and cook for 15–20 minutes.

Peel the potatoes and rinse thoroughly in cold water, then cut them into small cubes.

Send the potatoes into the broth, add salt, black pepper and bay leaves. Close the container and continue cooking over low heat.

While we are cooking, we are preparing the frying. Peel the carrots, rinse and chop them on a grater (preferably a coarse one). Peel the onions and finely chop them.

In a preheated frying pan, fry the onion in vegetable oil until noticeably golden. Add carrots there and simmer together until the carrots change their color to a more faded color and soften.

When the potatoes are half cooked, add the onion and carrot fry to the pan and continue to cook over low heat until fully cooked.

Today I will cook pea soup with smoked chicken wings. One of my work acquaintances once boasted about the soup that his wife had prepared for him (also pea soup, by the way!), and out of purely professional interest I asked what she used to cook the broth. It turned out to be smoked chicken. And I thought, why not?!

Both smoked ribs and chicken are probably smoked in the same smokehouse, only the ribs have so little meat, and they cost more. So, I decided to try it. And I was very pleased with the result!

I bought smoked chicken wings, my children immediately pounced on them, chewed almost half of them just like that, and only managed to save four of them. But this quantity, by the way, was enough to make the broth rich.

For a 3-liter pot of soup we will need:

  • smoked chicken wings – 4 pieces (for those who like richer broth, more is possible)
  • potatoes - 3 pieces
  • yellow split peas – 1 cup
  • carrots – 1 piece
  • onions – 1 piece
  • sweet bell pepper – 3 pieces of different colors (half each)
  • tomatoes - 2 pieces
  • vegetable oil - for frying
  • salt, bay leaf, black peppercorns, herbs - to taste

I first thoroughly washed the smoked chicken wings, then filled them with cold water and simmered them for about half an hour:

We must give him his due: the water he was in remained almost clear. These peas take about the same amount of time to cook as potatoes, about fifteen to twenty minutes.

During this time we make vegetable dressing. Today, in addition to onions and carrots, sweet bell peppers and tomatoes will participate in it. I thought, it’s summer, stop thinking about meat, it’s time to enjoy vegetables!

I cut the carrots into thin shavings and the onion into half rings:

Today I have a large selection of peppers, I prepared red, green and yellow, I use, of course, not all of them, but only their halves. I washed it, cleaned it of seeds, and also tried to cut it as thin as possible:

Finally, I prepared the tomatoes in the same way.

Now, in a frying pan heated with vegetable oil, I sauté our vegetables one by one: first, onions and carrots:

And at the very end I throw in the tomatoes:

They are quite juicy, will prevent the vegetables from burning and eliminate the need to add excess oil.

The vegetables are stewed together for about ten minutes, and then they cheerfully go to get acquainted with the potatoes and peas. We also send chicken meat to them:

All that remains is to add salt to the soup (if necessary, the broth is already salted enough due to the smoked wings), add bay leaves and black peppercorns, sprinkle it with herbs and close the lid, allowing it to rest a little before serving.

Today I cooked it for my beloved son-in-law. I specifically went to the store for smoked pork ribs and peas. I also bought brisket and hunting sausages, but everything was in order. For 3 liters of water you will need:

  • Dry peas - 1 cup;
  • 3-4 potatoes;
  • Smoked chicken wings - 3-4 pieces;
  • Carrot - 1 piece;
  • Onion - 1 piece;
  • Greens (dill or parsley) - 1 bunch;
  • Vegetable oil - 30 gr.;
  • Butter - 30 gr.;
  • Black pepper - 4-5 peas;
  • Salt - to taste;
  • White bread - 3 slices.

With turkey

The dish consists of the following components:

  • 400 g smoked turkey wings;
  • 3 potatoes;
  • 1.5 liters of water;
  • 1 onion;
  • 2 tbsp. peas;
  • 1 carrot;
  • 20 ml sunflower oil;
  • salt and pepper.

Main stages of preparation:

  1. First you need to cut the wings in half. Next, you need to pour water into the pan, put it on the stove and bring to a boil, setting the heat to high. When the water starts to boil, place the wings in it and cook for 2 - 4 minutes. Then you need to rinse the peas in a colander, add water and let them brew. The meat broth should be strained, the swollen peas should be added to it, boiled and the foam removed. The soup will need to be simmered until the peas are ready.
  2. Afterwards, you need to wash the carrots and onions and peel them. The carrots need to be grated on a large grater, and the onion should be finely chopped.

  3. Now you can coat the frying pan with oil, heat it, add grated carrots and chopped onions and fry for 8 minutes.
  4. The fried vegetables should be placed in a pan with the prepared peas, the potatoes should be washed, peeled and cut into small cubes. After the prepared potatoes, place them in a saucepan, add chopped pepper and table salt and cook the soup for about 8 minutes.
  5. Then you can place the smoked wings in the soup and cook for another 5 minutes. and pour into plates.

Soup with smoked wings and melted cheese

Let's prepare all the necessary ingredients for the soup:

  • Processed cheese – 100 grams.
  • Smoked wings – 300 grams.
  • Chicken broth (you can use water) – 700 milliliters.
  • Butter – 40 grams.
  • Potatoes – 200 grams.
  • Parsnip – 20 grams.
  • Dill - a couple of sprigs.
  • Leek – 60 grams.
  • Celery (root) – 20 grams.
  • Parsley (root) – 20 grams
  • Carrots – 40 grams.
  • Salt.

To prepare smoked cheese soup, you need to first prepare the ingredients. First peel and wash the potatoes, then cut them into cubes. We get cubes from parsnips and carrots, and slices if desired. Cut celery and parsley in the same way. After peeling, wash and finely chop the onion. We wash the dill and then finely chop it.

Let's look at the recipe step by step:

  1. First you need to sauté the root vegetables for 10 minutes. Please note that frying takes place in butter. Then you need to add the leek and continue frying for another 5 minutes.

  2. Cook the wings for 30 minutes and remove.
  3. Add potatoes and fried vegetables to the broth. After the broth with smoked meats boils, it needs to be cooked for another 15 minutes.
  4. Add cheese to the soup, add salt to taste and leave to simmer for at least 10 minutes.

Serve the broth in special deep plates, add smoked meats and sprinkle with dill. Cheese soup consists of 85 kcal per 100 grams. Whole chicken is also used to prepare this soup.

Sausage

To prepare the dish you need the following ingredients:

  • 2 smoked chicken wings;
  • 200 g smoked sausage;
  • 2 carrots;
  • 1 onion;
  • 1 tbsp. peas;
  • 3 liters of water;
  • 75 g crackers;
  • 6 potatoes;
  • 25 g of greens.

Pea soup with smoked wings and sausage can be prepared as follows:

  1. The first step is to wash the potatoes, peel them and chop them into cubes. Afterwards, the washed peas must be placed in a pan filled with water along with the potatoes and put on fire.
  2. Next, wash the onion and carrots and peel them. Then you need to grate the carrots using a grater with large holes, and finely chop the onion. Vegetables must be fried until golden brown in a heated oil pan.
  3. Then you need to cut the sausage into small pieces, halve the wings, wash the greens and chop finely. You can add vegetables, sausage, herbs, wings to the soup and cook for 10 minutes.

  4. Before serving, you can add crackers to the soup and pour it into bowls.

Useful tips and tricks

Basic recommendations:

  • You can add a small amount of soda to the water. This will help speed up the cooking process of the peas.
  • For taste, you can add garlic croutons from white bread, pre-fried in an oil pan, to the soup.
  • Split peas are best suited for this dish. It absorbs moisture well.

Easily digestible pea soup with smoked wings is suitable for lunch or a small dinner. It will help get rid of the feeling of hunger. After steeping, the dish will become even tastier and healthier.
