I love baking with puff pastry, I love its texture, and you can use any product as a filling. I'll tell you how to cook yeast-free puff pastry in a frying pan.

Step-by-step preparation

  1. Step 1:

    How to make pies from puff pastry in a frying pan? While the dough is defrosting, make the filling. I have it from stewed cabbage, but you can cook them with other fillings: apples, rice with eggs, cottage cheese, etc. Chop the cabbage and fry while stirring in a frying pan with vegetable oil until soft (about 15 minutes), the heat is moderate. Finally add tomato paste and salt and stir. Simmer until done, it took me 5 minutes.

  2. Step 2:

    How long does it take to defrost the dough? I defrosted the dough at room temperature for about 40-50 minutes. It does not require strong defrosting - as soon as the dough becomes pliable, you can start cooking with it. I have the dough in one layer. Cut the dough crosswise into strips. I got 4 strips measuring 10 by 21 centimeters.

  3. Step 3:

    Divide each strip into equal rectangles, the size of which will determine the size of the pies. I cut each strip into 3 pieces.

  4. Step 4:

    Then roll out each rectangle with a rolling pin to form a square. I have these squares 10 by 10 centimeters.

  5. Step 5:

    Place a heaping tablespoon of filling in the middle of each square.

  6. Step 6:

    Pinch the edges of the pies tightly, giving them a triangular shape. You can pinch in a regular or curly way.

  7. Step 7:

    Heat a frying pan with vegetable oil, turn the heat to slightly below medium. Place the dough pieces in a frying pan and fry them on one side until golden brown. It took me 3-4 minutes. You focus on your stove.

  8. Step 8:

    Turn the pies over to the other side and fry them until done. I fried for 2-3 minutes. On average, it took me 5-7 minutes for one serving of pies. In total, from this amount of dough I got 12 pies, which I fried in three steps, since I could fit 4 pies in the pan at a time. I immediately put the finished pies on a plate, since they turned out not greasy and did not require a paper towel.

These pies are delicious both hot and cold. I liked them with sweet green tea. It is better to use ready-made filling for them; if, for example, you have raw minced meat, then fry the pies longer so that it has time to bake properly, or fry it in advance. Bon appetit!

Use oil with a high smoke point for frying! Any oils are useful only until they reach a certain temperature - the smoke point, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it. Unrefined oils, with rare exceptions, have a low smoke point. They contain a lot of unfiltered organic particles that quickly begin to burn. Refined oils are more heat resistant and have a higher smoke point. If you are going to cook your food in the oven, pan or grill, make sure you use an oil with a high smoke point. The most common oils with a high smoke point are refined varieties of sunflower, olive and grapeseed.

What is puff pastry like?

Unleavened and yeast are types of puff pastry. Whatever it is, flour and butter remain essential ingredients. Preparing such dough is a rather labor-intensive process, so many people prefer to buy frozen semi-finished products.

Puff pastry gets its name from the method of preparation. It must be rolled out repeatedly and very thinly, avoiding tearing, folded and rolled out again. An important aspect is that the dough should be cool. That is why, after rolling out each layer, it is placed in the refrigerator, first wrapped in cling film so that it does not lose moisture and remains elastic.

Classic apple strudel

Strudel is a dish of German cuisine. Translated into Russian, its name means “layers”. Therefore, store-bought puff pastry for apple strudel is best suited. This is a very tasty dish that will become a signature dish for any housewife. Although it takes a fair amount of time to prepare, it is worth it. We have ready-made puff pastry, so we’ll spend less effort on cooking.

You will need:

  • yeast puff pastry - half a kilo;
  • apples – half a kilo;
  • butter – half a pack;
  • sugar - half a glass;
  • powdered sugar - a couple of spoons;
  • raisins and nuts – 100 g each;
  • breadcrumbs – 50 g;
  • cinnamon - to taste.

Defrost the dough and prepare the filling. Soak the raisins, chop the nuts, wash the apples, peel them, and cut them into thin slices. Then, when all the filling ingredients are ready, combine them, add cinnamon and mix.

Roll out the finished dough thinly into a large rectangle. Grease its surface with melted butter. We distribute breadcrumbs on it, retreating four centimeters from the edges, and ten centimeters from the left edge.

Then spread the filling in an even layer on the breadcrumbs, keeping indentations. Now we bend the right, free edge, placing it on top of the filling. Next are the top and bottom. Then we fold the left edge of the dough and also place it on top of everything. Now we carefully begin to fold the strudel. This is not a roll, so you shouldn’t roll the cake into a cylinder. It must be folded in at least three layers. To do this, conditionally divide the rectangle into three parts. Bend one of them inward, and place the second on top of it. At the same time, coat the dough with melted butter. Now the strudel needs to be placed on the prepared baking sheet. Bake for half an hour or a little more, temperature – 180 degrees. After it is ready, you need to beautifully sprinkle the top crust through a sieve with powdered sugar.

How to defrost puff pastry

It is best to defrost the dough in the refrigerator. Take it out of the freezer, remove the packaging and place it in the refrigerator. If you leave the dough in the package, condensation will form inside. It will moisten the dough, and this should not be allowed. See the package for defrosting time.

You can defrost the dough at room temperature. Take it out of the freezer, cut the packaging, open it on the table and leave it like that. This way the defrosted dough will not stick to anything.

If the frozen layers do not separate, it means that the dough was not stored correctly. Place it on the table in one piece, and when it thaws, carefully separate it. The kitchen should not be too hot; defrost the dough away from the radiators and the oven. At temperatures above 25 °C, the dough will dry out and crack on the surface of the product during baking.

Is it possible to fry puff pastry in a frying pan?

Any housewife knows that ordinary dough can be baked in the oven and fried in a frying pan in preheated oil.
Does this rule apply to puff pastry? The answer is clear: of course, yes. Now you won’t have a question whether it’s possible to fry puff pastry in a frying pan. But there are small nuances regarding the frying process. If you decide to make a cake or lobiani, then the cakes need to be rolled out in a very thin layer and fried without oil at medium temperature. As for pies, kulebyak, puff pastries and other stuffed products, they are cooked in heated sunflower oil over low heat and preferably in a frying pan with a thick bottom.

You need to make sure that the products do not drown in oil, because the dough itself is already oily. Otherwise they will turn out greasy and tasteless. And don't forget to cover the pan with a lid so that the dough can rise a little.

Puff pastry is suitable for making large pies, which are similar to the French pie called Quiche.

Sequencing

A quick puff pastry pie is prepared as follows:

  • The ham should be cut into strips, the greens should be finely chopped. Combine ingredients.
  • Next, you need to add eggs, sour cream and spices to the mixture, mix everything thoroughly.
  • After this, you need to chop the mushrooms and onions and place them in a frying pan with oil. Fry until done over moderate heat.

  • Cooled mushrooms should be added to the mixture of sausage, eggs and sour cream. Pour in the cream, stir everything well.
  • The dough should be rolled out into a thin round layer and placed in a round baking dish.
  • Pour the filling into the bottom of the mold.
  • The cheese should be grated on a coarse grater and 2/3 of its volume sprinkled on top of the pie.
  • The pie needs to be placed in an oven preheated to 200 °C for 20 minutes, then open the oven, sprinkle the pie with the remaining cheese and bake for another 20 minutes. You can decorate the pie with chopped green onions.

Step-by-step recipe with photos

Let's take ingredients for making puff pastries with apples in a frying pan. I used the Grushovka variety of apples. You will need 6 tablespoons (60 g) of sugar - one spoon per pie.

Defrost the dough at room temperature for 40-50 minutes. It should not completely defrost, but only become slightly pliable. I had the dough in one layer weighing 500 g. I cut off a piece weighing 350 g. Cut the dough lengthwise into three equal rectangles - when you unroll the dough, simply separate it with a knife in sections.

Take one layer and roll it along the short edge with a rolling pin so that the sheet of dough becomes thinner. Cut it crosswise into two equal rectangular parts.

Place an apple cut into small cubes in the middle, sprinkle a tablespoon of sugar on top of the apples.

Fold the pie as shown in the photo and pinch tightly in the middle and along the edges.

This is how we form all the blanks - there will be 6 pieces in total.

Heat a frying pan with vegetable oil and lay out the first batch. Fry puff pastries with apples in a frying pan over medium heat on one side for about 3 minutes.

Turn over and fry for another 2 minutes.

Remove the finished pies from the pan and fry the rest. Bon appetit!

  • The dough should be rolled out into a thin layer and divided into 4 rectangles. Grease each rectangle with nut mixture using a silicone brush or spoon.

  • Then the dough needs to be rolled up and cut lengthwise into 2 parts, not reaching the other edge 5 cm.
  • Next, the cut roll needs to be braided and formed into a ring, both ends should be pinched well.
  • You need to do the same with the remaining 3 parts of the test. Then they should be placed on a baking sheet, greased with yolk and sprinkled with the remaining sugar.
  • Puff pastries should be baked at 200°C for 20-25 minutes.
