- half a kilogram of puff pastry.
Step-by-step recipe for potato puff pastries
Remove the finished puff pastry from the freezer and leave it on the counter until completely defrosted. Meanwhile, peel the potatoes and boil them until tender. Using a masher, make mashed potatoes with milk and butter. Rinse the greens, dry and finely chop. Add to puree and stir. Let cool.
Unroll the defrosted dough on the surface of the table. Roll it out lightly and cut into equal squares. Place the cooled filling in the middle of each. We connect the edges of the dough crosswise to make quadrangular pies.
Beat a couple of eggs with a whisk until smooth. Place the pies on a parchment-lined deco sheet. Brush them with the egg mixture and put them in the oven, preheating it to 180 C. As soon as the pies become golden brown, remove them from the oven and cool.
You can serve the baked goods with broth or drinks. Do not defrost dough in the microwave. You can bake pies from either yeast or yeast-free puff pastry.
Option 2. Quick recipe for puff pastry pies with potatoes and beans
To prepare the filling, use canned beans and potatoes. If you have leftover mashed potatoes from dinner, the pies can be made in minutes.
Ingredients
- 10 g basil;
- 250 g puff pastry;
- 300 g mashed potatoes;
- 300 g canned beans.
How to quickly make puff pastry pies with potatoes
Peel the potatoes, wash them and boil until soft. Drain the potato broth. Mash the vegetable by adding a little milk and butter. Open canned beans. Drain the liquid. Add the beans to the mashed potatoes and mash again, seasoning with pepper and basil. You should get a homogeneous mass.
Place the defrosted puff pastry on a floured table surface and unroll. Roll out into a layer no more than 3 mm thick. Cut into equal squares.
Turn on the oven at 200 C. Place the cooled potato and bean filling on one half of each square. Cover the filling with the other half of the dough and seal the edges with a fork. Place the formed pies on a deco lined with parchment. Bake the pies for 20 minutes until golden brown.
To prepare the filling, you can use fresh beans, after boiling them until tender.
Puff pastry and potato recipes
Delicious puff pastries filled with potatoes can be prepared very quickly if you use ready-made puff pastry. If you don’t have it on hand, you can prepare a simple puff pastry according to the following recipe
You will need the following ingredients:
- water – 300 ml;
- salt – 5 g;
- flour - about 400 g;
- margarine or butter – 300 g.

Recipe:
- Pour about 200 g of flour into salted water at room temperature. Knead the dough. The remaining flour is added in parts. At the end of kneading, the dough should be firm and elastic.
- Roll it into a layer no more than 5 mm thick.
- Soft margarine is used to coat the entire dough. Use 1/3 of margarine.
- The dough is rolled into a roll. First, one and then the other end of the roll is wrapped towards the middle. Place the dough in the freezer for 30 minutes.
- Take out the dough, roll it out again, grease it with 1/3 of the margarine and roll it again.
- Keep in the refrigerator for another half hour, after which the procedure is repeated a third time. The resulting dough can be used immediately, or can be frozen for future use and stored in the freezer for 7 days.
For potato puffs you need:
- ready puff pastry – 500 g;
- mashed potatoes – 400 g;
- dill and onion greens – 30 g;
- chicken egg yolk.
Cooking steps:
- Roll the finished dough a little with a rolling pin and cut into 10 by 10 cm squares.
- Finely chopped greens are mixed with mashed potatoes.
- Place 2-3 tbsp on one side of each square. l. fillings. The edges should remain free.
- Cover the filling with the second part of the dough and press the edges with a fork. Three small cuts are made on top, steam will escape through them. Place the puff pastries on a baking sheet.
- Brush with beaten yolk.
- The oven is preheated. The temperature should be +180. Place the baking sheet inside and bake the potato puffs for about 16-18 minutes.

Option 3. Puff pastries with potatoes and mushrooms
Puff pastry pies always turn out tender, crumbly and very tasty. Both adults and children love this pastry. The filling of potatoes and mushrooms is perfect for these pies.
Ingredients
- 500 g package of puff pastry;
- egg;
- 400 g champignons;
- dill and parsley;
- three boiled potatoes;
- freshly ground pepper;
- onion head;
- kitchen salt;
- 60 g hard cheese;
- 20 ml vegetable oil.
How to cook
Wash the mushrooms and dry them. We trim the stems and remove the thin skin from the caps. Chop the champignons into small pieces. Peel the onion, wash it and finely chop it. Place it in a frying pan with heated vegetable oil. Sauté the onion, stirring, until soft. Now add the mushrooms and continue to sauté, stirring until the moisture has evaporated. Salt and pepper to taste.
Grind the boiled potatoes using a grater with large holes. Transfer the vegetable to the frying pan. Add chopped herbs here. Stir and remove from the stove.
Place the defrosted dough on a floured table and roll it out into a layer no more than five mm thick. Cut into equal squares. Grind the cheese into small chips.
Place a spoonful of chilled filling on each square. Add a small pinch of grated cheese. Seal the edges of the puff pastry. Line a baking tray with baking paper. Place the pies on it. Brush the pies with beaten egg. Place in an oven preheated to 200 C. Bake for a quarter of an hour until golden brown.
You can prepare the filling with any mushrooms. The champignons can simply be rinsed and cleaned. They quickly absorb moisture, so these mushrooms are not recommended to be kept in water for a long time.
Puff pastries with minced meat
If you prepare minced meat in advance and defrost the dough, then in an hour the whole family will be able to enjoy delicious, aromatic baked goods with meat.
We will need (for 16 pcs):
- minced meat -500-600 gr
- onions - 2-3 pcs.
- dough - 4 plates (750 g)
- egg - 1 piece
- sesame - 2 tbsp. spoons
- spices, dried herbs
- vegetable oil - for greasing
Preparation:
1. Cut the onion into small cubes and add to the minced meat. You can, of course, grind it in a meat grinder, but you shouldn’t. Ground onion is very liquid, and the minced meat will also be liquid. But when we cut it, the minced meat will be the consistency we need. In addition, during the cooking process, the onion will gradually exchange juice with the meat, and this will make the filling much tastier.
2. Add spices and dried herbs to the minced meat. Good spices would be ground coriander, rosemary and cumin. They will give our products a simply divine aroma. You can add any dried herbs, but I add basil and parsley, as well as oregano.
3. Salt and pepper to taste. And add egg white. We will need the yolk to grease the baking surface. During the cooking process, it will acquire a beautiful golden color.
4. Mix the minced meat thoroughly until smooth.
5. Roll out one layer on a greased table. Don't forget that we roll it out in one direction so as not to disturb the layers. Cut the layer into four parts.
6.Place a significant portion of the filling on each piece of dough. Fold into an envelope or triangle. Place on a greased baking sheet or lined with a silicone mat.
7. Do the same with the remaining parts. Grease the finished pieces with yolk and sprinkle with sesame seeds.
8. Bake in an oven preheated to 180 degrees for 35-40 minutes. The pies will brown and become beautiful and very appetizing.
9. Take them out and place them on a large flat dish. let cool slightly and serve with hot tea.
Option 4. Puff pastry pies with potatoes, chicken and vegetables
Puff pastry stuffed with potatoes, chicken and vegetables turns out incredibly tasty, satisfying and healthy.
Ingredients
- 10 ml olive oil;
- egg;
- 30 g drained butter;
- 4 sheets of puff pastry;
- half a kilogram of chicken fillet;
- 10 g fresh tarragon;
- a clove of garlic;
- a glass of frozen green peas;
- 25 g flour;
- boiled potato tuber;
- white part of leek;
- large boiled carrots;
- a third of a glass of water or white wine;
- half stack heavy cream;
- stack chicken broth
Step by step recipe
Wash the potato tuber and carrot and boil until soft. Cool the vegetables and peel them. Grind into small pieces. Clean the chicken fillet from films and veins. Wash the meat and dry with a paper towel. Cut the chicken fillet into small pieces.
Place a thick-walled saucepan over medium heat and heat a mixture of butter and olive oil in it. Place the meat in it and fry, stirring, until it is covered with an appetizing crust. Remove chicken with a slotted spoon, transfer to a plate and set aside. Peel the onion and garlic and finely chop. Place in the pan where the meat was fried and sauté for about three minutes until golden brown. Add flour and cook, stirring, for a minute. Pour in the wine, bring to a boil and cook for another minute. Add cream and broth. Cook over medium heat for about five minutes, stirring.
Add vegetables, chicken pieces, and tarragon to the saucepan. Add salt and remove from the stove. Turn on the oven at 200 degrees.
Thaw the puff pastry. Place it on the table, dust it with flour, and roll it out lightly. Cut into squares. Place a small amount of cooled filling in the center of each. Gather the edges into an envelope shape and seal them. Place the finished pies on a baking sheet and brush with beaten egg. Place in a preheated oven for 25 minutes.
You can use starch as a thickener instead of flour. The filling can be made from any poultry meat.

Cut the meat into small pieces and the onion into thin half rings. Put it all in a separate bowl, add salt and pepper, add vegetable oil, close the lid and forget for 1-1.6 hours. Let the meat marinate thoroughly.
Then we cut the potatoes thinly and add them to our bowl. Salt and pepper again, mix thoroughly.
Divide the finished dough into two parts, one slightly larger than the other. Which is larger is our bottom, we put it on a baking sheet, level it, and pour the contents from the bowl on top.
