Main ingredients:
- Chicken egg - 2 pieces;
- Kefir or yogurt - 1.5 cups;
- Cottage cheese - 100 grams;
- Hard cheese - 150 grams;
- Salt and spices - to taste;
- Wheat flour - 100 grams.
Preparation:
- Unlike classic khachapuri with cheese, you will definitely need fresh herbs to make these flatbreads. This could be dill, parsley, cilantro and lettuce.
- You need to pour the kefir into a bowl, break the eggs and add pre-chopped herbs. Add cheese, cottage cheese, spices and salt to taste to the resulting mixture. Mix thoroughly and add flour, previously sifted through a sieve. Stir until a homogeneous consistency is obtained.
- Fry the resulting mixture over medium heat until golden brown on both sides.
Khachapuri with herbs on kefir

Ingredients:
- 100 g hard cheese;
- 100 g Adyghe cheese;
- 3 eggs;
- a small bunch of fresh dill;
- 1 glass of kefir of any fat content;
- 1 cup wheat flour;
- 100 g butter;
- 2 tbsp. l. vegetable oil;
- salt and black pepper to taste.
Preparation
- Grate hard and Adyghe cheeses.
- Take fresh cheese, without sour smell and weathered crust. Sift the flour through a sieve.
- Sifted flour makes the dough more airy. Mix kefir with eggs.
- Fresh kefir gives khachapuri an additional cheesy flavor
- Melt the butter. Cool and add to the egg-kefir mixture.
- Add salt, black pepper and flour. Mix with a pastry whisk. The dough should be quite liquid.
- Finely chop fresh dill.
- Add greens to the dough and add grated cheese. Mix well and let stand for 20 minutes in a warm place. This is necessary so that the gluten contained in the flour swells and the dough becomes more homogeneous.
- Later, during heat treatment, this will give the dough elasticity and help create a golden brown crust. When the recommended time has expired, you need to heat a frying pan greased with vegetable oil and pour the cheese dough onto it. Fry the flatbread on both sides until browned. Preparation:
- To prepare the dish, it is better to use hard, Adyghe or Georgian suluguni cheese. You can mix different varieties to get the best taste.
- You need to grate the cheese on a coarse grater, add sour cream, you can use kefir instead of sour cream. Add eggs, butter and mix. Sift flour into the resulting mixture, add salt and pepper to taste and stir thoroughly until smooth. Then heat a frying pan with vegetable oil on the fire and quickly pour the resulting cheese dough onto it. Cover with a lid and fry over low heat for 3-5 minutes.
