Composition of ingredients

- 420 g flour;

- 100 g natural honey;
- 170 g granulated sugar;
- 3 chicken eggs;
- 370 g powdered sugar;
- 420 g cream cheese;
- 1 liter of cream with a fat content of 33% or more;
- 1/2 tsp. regular salt;
- 1 tsp. table salt.
Step-by-step cooking process
Detailed instructions on how to prepare a classic version of the cake:
- First you need to break the eggs into a saucepan, add granulated sugar, add natural honey and mix thoroughly. After this, you need to take the butter out of the refrigerator, put it in a saucepan, stir, put on low heat and heat until the granulated sugar dissolves and the butter melts.
- Next, you need to turn off the heat, add the required amount of regular salt, baking soda and stir well. The volume of the mass will increase by 2 times. After this, you will need to cool it by placing the saucepan in a container filled with cold water.
- Then you need to put half the wheat flour, mix using a kitchen spatula or whisk, then add the remaining flour and knead the dough. The finished dough should be very soft.
- Now you can shape the dough into a ball, put it in a plastic bag and leave to cool for 30 minutes. or for the whole night. Afterwards, preheat the oven to 180°C, remove the dough from the refrigerator, place it on a cutting board and cut into 6-9 pieces.
- Each piece of dough must be rolled out using a rolling pin, cut out from the rolled out layers of cakes and pierced in several places with a fork.
- Then you need to bake the cakes by placing them in molds lined with parchment and placing them in a preheated oven. This will take 4-5 minutes.
- To prepare cream cheese, pour powdered sugar into a blender bowl, add cream to it and beat until strong foam. After this, you need to add cream cheese to the mixture and beat until the mass thickens and becomes homogeneous.
- The baked cakes must be coated with butter cream, stacked on top of each other, sprinkled with crushed scraps that are left over from the cakes, put in the refrigerator and left for at least 4 hours so that the cake is soaked in cream. The cake will soak better if left in the refrigerator overnight.

Honey cake with Cheese cream can be prepared following these instructions:
- First you need to take a large saucepan, put butter in it, add honey, add granulated sugar, stir, put on low heat and heat until you get a homogeneous mass.
- Then you will need to add baking soda and stir until the mass increases in volume and begins to foam. After this, you need to cook the mixture until the foam turns golden over low heat, stirring, then remove from the heat and cool until it becomes warm.
- Next you need to add the eggs, mix well and start kneading the dough, adding wheat flour in small portions using a sieve. The prepared dough will be slightly sticky. Then you need to form the dough into a ball, place it in a pan, cover with cling film or a lid and place in the refrigerator for 2-3 hours. Once cooled, the dough will no longer be sticky.
- After the specified time, the dough can be taken out of the refrigerator, placed on a table covered with a sheet of parchment, divided into 3 parts, roll each part into a thin layer of dough, cut a small circle in the center of each piece, and make several punctures on the sides with a fork.
- Now you can make cream cheese. To do this, you need to mix the cream together with powdered sugar using a mixer, then add curd cheese to it and mix the ingredients until smooth. The prepared cream must be applied to the cakes using a pastry bag.
- At this stage you will need to assemble the cake by stacking the cake layers on top of each other. Afterwards, you need to put the honey cake in a cake box, close it and place it in the refrigerator to soak for several hours.
- At the end, you need to wash the apricots, remove the bones, cut into equal slices, also wash the strawberries, peel and cut in half.
The cooled cake should be decorated with cocktail cherries, cookies, sliced apricots and strawberries, alternating the ingredients with each other.
Assembly
Step 1. Divide the sponge cake into three layers.
Step 2. Cover the first cake with cream cheese, place the honey mousse filling in the center and brush the cream around the edge. ATTENTION! The edges of the side should be higher than the honey mousse, since the top sponge cake is held together with the cream, and not the filling. Press down firmly on the biscuit to release excess air.
Step 3. We also cover the second sponge cake with cream, make a side and place raspberries in the center. Cover with the third cake layer and do the same manipulation to get rid of the air.

- Then you will need to prepare the dough. A large saucepan needs to be filled 1/3 with water, put on fire and brought to a boil. Pour granulated sugar into a smaller saucepan, beat in eggs at room temperature, grind with a fork, then add butter, then honey, place the container with the ingredients in boiling water and heat the ingredients until completely dissolved.
- Next, you need to add baking soda and mix for 5-7 minutes, using a wooden spatula, until the mass increases 3 times. After this, add sifted wheat flour in small portions and knead the dough.
- Cool to room temperature, shape into a ball, place in a plastic bag and refrigerate for several hours.
- Now you can take the dough out of the refrigerator, cut it into 10 parts, roll each part into a thin layer of dough on the table, sprinkled with a small amount of flour, transfer the pieces to parchment sheets and cut out round cakes from them.
- At this stage, you need to preheat the oven to 180°C, spread the dough layers into silicone molds and bake the cakes one by one for 5 minutes. The remaining dough should be baked, crushed and left for decoration. - First you need to start preparing the dough for the cakes. You will need to melt a piece of butter. It is best to do this in a water bath.
- Pour granulated sugar into a bowl with warm butter and completely dissolve it, add water and mix the ingredients.
- Next, you need to add honey and mix the ingredients again. If the mass has cooled down, it should be placed in a water bath again so that the honey dissolves. You can also add baking soda and mix again.
- Now you need to add 200 g of flour and mix well until the flour lumps disperse. Then let the dough cool slightly, break one egg and beat the ingredients. Thus, you need to add all the eggs 1 pc.
- Then you can add the remaining flour in small parts and knead a soft and elastic dough. The finished dough should be divided into 11 equal parts, rolled into balls and placed in a bowl. Cover the bowl with cling film and leave the dough like this for 30 minutes.
- Then you need to spread a piece of baking paper on the table, put some of the dough on it and roll it into a wide thin layer. To prevent the dough from sticking to the rolling pin, you can sprinkle it with flour. The parchment with the workpiece should be transferred to a baking sheet and placed in an oven heated to 180 °C. The cake needs to be baked for about 5 minutes. until golden brown. In the same way you need to prepare the remaining cakes.
- After baking, you need to cut out round pieces with a diameter of 22 cm from the cakes. To do this, you can use a round springform pan or any other method. The remaining cake scraps should be cut into small pieces and placed in a blender bowl. The trimmings should be crushed to fine crumbs, which will be used for sprinkling the cake.
- Next, you can prepare the cream. To do this, pour cold cream into a deep bowl and beat it with a mixer until light foam, after which you need to add cream cheese and beat the ingredients again.
- Now you need to add the peanut butter and beat the ingredients again until you get a single mass. The cream should be light and airy. It should not be beaten for too long.
- Now you can assemble the cake. Each cake must be generously greased with cream on top and the pieces must be placed on top of each other.
- The sides of the honey cake should also be coated with cream. The top and sides of the honey cake will also need to be leveled using a spatula, and then sprinkled with crumbs from the remaining cakes.

- Egg yolks - 5 pcs;
- Vegetable oil (odorless) - 100 gr.
How to make chiffon sponge cake:
Step 1. Beat the egg whites with 100 grams of sugar at medium mixer speed. We add sugar for the first time when the whites have beaten to the state of “beer foam”; the second time when the foam becomes more stable; and the third, when the mass turns white. Beat the meringue to soft peaks, when the “tail” hangs from the whisk, but if you wave it, it will not fall off.
Step 2. Beat the yolks with 100 grams of sugar into a fluffy mass, then add vegetable oil and slowly add water.
Step 3. Sift flour and baking powder into a container, add salt and mix well with a whisk.
Step 4. Add dry ingredients to the yolks and mix the dough well.
Step 5. Manually add meringue to the dough in three steps.
With condensed milk
To prepare this version of dessert you need to allocate about 8 - 9 hours of free time.

- 1/2 tsp. baking soda;
- 1/4 tsp. table salt;
- 500 g cream cheese;
- 200 g condensed milk;
- 100 g meringue;
- 50 g cranberries;
- several chrysanthemum flowers.

You can prepare the dessert according to these instructions:
- The first step is to prepare the dough. To do this, you can pour honey into a deep bowl, add table salt along with granulated sugar and put in a piece of butter, which must be heated in advance at room temperature until soft. The ingredients need to be mixed, beat in the egg and mix all the ingredients again using a mixer until the granulated sugar is completely dissolved.
- It is necessary to add flour to the resulting composition, sifting it through a sieve along with baking soda. Now you can knead a soft dough. If the dough comes out liquid, you will need to add a little more flour than indicated in the ingredients.
- The finished dough will need to be divided into 2 parts and each of them rolled out into a layer approximately 3 mm thick. From each layer of dough you will need to cut a heart-shaped piece. To do this, use a paper template measuring 20x25 cm.
- Next, each piece needs to be pricked with a fork. You need to make as many punctures as possible so that the dough does not swell during baking. The blanks can be transferred to parchment, placed on baking sheets and placed in an oven heated to 180 °C. The cakes should be baked for no more than 10 – 15 minutes. The finished cakes need to be cooled by placing them on a flat surface.
- In the meantime, you will need to make the cream. Place the cream cheese in a bowl, pour condensed milk into it and beat both components with a mixer until fluffy. The finished cream should be placed in a pastry bag with a round nozzle installed.
- The cream must be squeezed onto each cake in large drops, covering the entire surface of each cake, after which they must be laid on top of each other.
- Now the cake should be placed in the refrigerator for 5 - 7 hours so that it is soaked. After this, you need to lay meringue, cranberries and several chrysanthemum flowers on top.
Honey cake prepared according to this recipe with Cheese cream can also be decorated with small heart-shaped cookies.
Buttercream for honey cake
Buttercream will make the honey cake airy and very tender. This cream is also suitable for filling tubes and baskets.
Ingredients
- Cream – 550 ml
- Powder – 120 g
- White chocolate – 50 g
Preparation
- To make a cream from cream, it must be very fatty. Most often, such cream can be found under the name “confectionery”; its fat content is approximately 33-35%.
- Before use, the product must be refrigerated and properly cooled. If you are making this cream for the first time, also cool the devices you will be using.
- Melt the chocolate and cool.
- Now whip the cream and powder until fluffy and thick.
- Pour the cooled but still liquid chocolate into the mixture and gently mix it with a spatula.
- If desired, you can use another chocolate, for example, milk or with additives. But in this case, you need to remember that the taste and color of the finished cream will change.
- By the way, buttercream is very easily colored with dyes. At the same time, it does not flow and holds its shape well.
With sour cream
The amount of ingredients is calculated for a cake with a diameter of 18 cm from 10 - 13 layers.

- First you can prepare the cream. Place the cream cheese in a deep container, add sour cream, powdered sugar and combine the ingredients with a mixer, beating them at medium speed. The finished cream should remain slightly liquid. The container with cream can be closed with a lid or covered with plastic wrap and placed in the refrigerator.
- Now you can prepare the dough. The oven will need to be turned on in advance to preheat to 190°C. Place honey and butter in a saucepan, heat the mixture in a water bath and mix the ingredients until a single mass is obtained.
- Meanwhile, break the eggs into a clean bowl, add all the sugar and beat the ingredients with a mixer at medium speed. When the sugar has dissolved, the mass can be poured into a saucepan with honey and carefully mix the ingredients with a silicone spatula.
- Next, you need to mix flour with soda and sift it through a sieve. Flour should be added in parts to the liquid mass, constantly mixing the ingredients. The finished dough will be quite liquid.
- Afterwards, you should draw circles with a diameter of 18 cm on parchment paper and spread the dough into the mold as thinly as possible. 2 of these pieces will fit on a baking sheet. They should be placed in the oven and baked for no more than 3 - 4 minutes. As soon as the Dough acquires a golden hue, the cakes must be removed from the oven and stacked on top of each other without removing the parchment. Thus, you will need to bake 10 - 13 cakes.
- Now you can start assembling the cake. Carefully remove the parchment from the cooled cakes and spread chilled cheese cream on top of each cake. The cakes must be laid on top of each other, pressing them in the center to get the most even cake possible. The sides should be greased with the remaining cream and leveled with a silicone spatula or a culinary spatula.
- Then, using a blender, you will need to grind the chocolate chip cookies into crumbs and sprinkle on the top and sides of the cake. The finished cake should be placed in the refrigerator for soaking and kept there for 2 - 4 hours.
The dessert can be decorated with any berries, placing them on top. Fruits cut into slices are also suitable for decoration. Honey cake can be prepared in the shape of a heart, number or other shape. It is recommended to add citrus zest or cinnamon to the Cheese cream for the cake.
Honey cake with prunes and sour cream
Honey cake with prunes and sour cream turns out extremely tasty and original. Prunes give the cream an unusual taste and aroma.
Ingredients
- Sour cream – 630 g
- Powder, prunes – 220 g each
- Rum or cognac – 50 ml
Preparation
- First, let's prepare the prunes. Choose something nice and fresh so it doesn't fall apart or get too messy. Wash it, pour boiling water for a few minutes, then rinse and grind in a blender. You can cut the prunes by hand, but then you will end up with quite large pieces of it in the cream.
- Pour chopped prunes with alcohol, stir and leave for half an hour. You can skip this step, but it is cognac/rum that makes prunes especially aromatic.
- You need to use sour cream that has drained and is full of fat; with such a product the cream will be much tastier. Beat sour cream with powder until fluffy and stable consistency.
- Then add prunes to the cream in parts and gently mix the mixture with a spatula.
- You can also add nuts to the cream, but this is not necessary - a matter of taste.
