Today we will prepare excellent and incredibly tasty pancakes - chicken liver pancakes with rice. If you don’t have chicken liver, you can take another liver, just prepare it for the process first. Add pre-cooked rice to the liver; it will give the pancakes a denser and more pleasant structure.
You can serve these pancakes with different types of fresh vegetables, homemade pickles, you can offer a light salad and a little sour cream. If desired, you can add cheese, herbs, a variety of mushrooms and spices to the pancakes themselves.
Ingredients:
- Boiled rice – 5 tbsp.
- Chicken liver – 200 g
- Chicken eggs – 1 pc.
- Wheat flour – 1 tbsp.
- Salt, pepper, dry garlic - to taste
- Vegetable oil – 2 tbsp.
Step-by-step recipe with photos
Prepare all products according to the list. Boil the rice in advance - take two portions of water per serving of rice and cook until tender. Use fresh chicken liver, not frozen, it must be washed well in a sieve, then put in a blender bowl. Beat the liver until smooth – just a couple of minutes.
Be sure to cool the boiled rice and transfer it to a convenient deep bowl.
Add chopped chicken liver from the blender bowl to the rice immediately.
Beat a chicken egg into all the ingredients, add a pinch of salt and ground black pepper. Add a pinch of dry garlic.
Also add some wheat flour into the bowl.
Mix all ingredients thoroughly using a fork or whisk.
Heat a frying pan, pour in vegetable oil. Place a tablespoon of liver dough and fry the pancakes on both sides for a few minutes. After a while, serve the pancakes to the table.

To make future pancakes more fluffy, many people add various grains to them, most often semolina. Due to its properties, it is not particularly noticeable in the finished product, but makes it more voluminous and nutritious.
This recipe will be especially good for children, because not many people like semolina, and in order to replenish the child’s body with all the necessary substances, you can prepare something similar.
Ingredients:
- Chicken liver – 500 g
- Semolina – 2-3 tbsp. l.
- Onion – 1 head
- Eggs – 2 pcs.
- Garlic – 3 cloves
- Sour cream – 2 tbsp. l.
- Spices - to taste
- Salt, pepper - to taste
Cooking method:
1. Initially, we wash the liver and strain it from moisture, after which we transfer it to a blender and blend until it becomes paste-like.
If you don’t have a special device, use a meat grinder, or even a manual one.
2. Next, add onion, semolina and spices to the bowl. Mix everything again until smooth.
If you want, you can simply chop the onion finely, especially if you like this vegetable fried.
I would also like to draw your attention to the fact that if you normally add semolina to the dough (without a blender), lumps may appear. To prevent this from happening, add the dry mixture in portions, constantly stirring the resulting paste.
3. At the end, all that remains is to add the eggs with sour cream, mix and set everything aside for 30 minutes. This must be done so that the semolina swells.
4. After a while, place the frying pan on the stove and heat it up.
As soon as the container has heated up, you can put the dough on it. We do this using a regular spoon, giving the pancake a rounded shape. Fry on 1 side for about 3 minutes.
You can also notice that we do not use vegetable oil for frying, this is because the frying pan is non-stick, but I still recommend adding a little fat.
5. When the flatbreads are browned on one side, turn them over to the other and fry until similar. Use the rest of the dough in this order.

Many people do not like liver dishes because of the specific smell of the product. But liver pancakes have a more delicate taste and do not have an unpleasant aroma. They can be served hot with a side dish of potatoes, stewed cabbage or fresh vegetables, or cold as a snack.
Onions are often used in liver pancake recipes. You can put it raw, or you can pre-fry it in vegetable oil - the pancakes will become even tastier and more aromatic. You can also add different vegetables to the dough - cabbage, sweet peppers, eggplants and even potatoes.

- kilogram of beef liver;
- a pair of onions;

Step-by-step recipe for liver pancakes with rice
Rinse the rice thoroughly in several waters to remove any flouriness. Pour in plenty of water and boil until fully cooked, set aside to cool.
Peel the onion and cut into slices. Divide the liver into small pieces and, together with the onion, pass through a meat grinder or grind in a blender.
Add boiled rice, a spoonful of wheat flour, salt and pepper to the liver puree. Break the eggs into a cup and stir until the mixture becomes homogeneous. It should not be too liquid; if this happens, add a little more flour.
How to cook quickly and easily
- First you need to prepare the chicken liver. It needs to be defrosted, washed and cleared of films.
- Then the product should be boiled. To do this, place it in boiling water for 5-7 minutes. Next, the liver needs to be cooled and cut into small pieces.
- After this, you should prepare the vegetables. Onions and garlic must be peeled, washed and thoroughly chopped separately. Peel the carrots, then rinse under running water and grate on a medium grater.
- Now you should prepare the rice. It needs to be poured into a colander and rinsed thoroughly.
- Next, you need to fry the onions and carrots in hot vegetable oil. After this, the vegetables need to be simmered over medium heat for 5-7 minutes.
- After the vegetables have softened properly, add rice to them. Then everything needs to be mixed, seasoned with garlic, salt, herbs and black pepper. After five minutes, the dish can be removed from the heat and prepared for the next step.
- Now you need to preheat the oven to 180 degrees. While the temperature rises, pour half of the rice with vegetables onto a baking sheet and carefully level it over the entire surface.
- Place a layer of boiled liver on top, and the remaining rice and vegetables on top. Once again, everything must be thoroughly leveled, carefully poured with three glasses of boiled water and covered with foil for baking.

How to quickly cook liver pancakes with rice
Rinse the rice thoroughly, add water and boil until fully cooked. If you do this in the evening, you can prepare pancakes for breakfast even faster in the morning.
Puree the liver using a blender or meat grinder. Combine with rice, egg, salt and milk. Mix all ingredients thoroughly until smooth. This can be adjusted using flour.
Heat vegetable oil in a frying pan. When a light smoke rises above the frying pan, spoon the liver dough into the oil with a tablespoon, forming round pancakes of small thickness with the spoon.
Fry for about 2 minutes, then turn the pancakes over to the other side and fry for the same amount. It is recommended to place the pancakes on a paper towel so that it absorbs excess oil and the dish becomes less greasy.

Well, we can’t help but say about the taste that vegetables, especially onions, give. Carrots are a sweeter root vegetable and its note is faintly felt, but the “tear” vegetable adds piquancy and a characteristic aroma.
Ingredients:
- Chicken liver – 500 g

- Carrots – 1 pc.
- Flour – 3 tbsp. l.
- Eggs – 2 pcs.

1. We wash the main product well and separate it from veins and other unnecessary parts. Then we send it to a meat grinder and pass it through the smallest section. This process can also be entrusted to a blender, even an immersion blender.
2. Following the offal, we put vegetables into the meat receiver and twist them directly to the main component.
If desired, you can finely chop the onion with a knife so that you can feel it better in the finished dish, and pass the carrots through a fine grater.
3. Now add eggs, flour and salt and pepper to the prepared mass. Mix everything and set aside for now. In the meantime, you can put a frying pan with oil on the stove to heat up.
In fact, the amount of flour may differ from the stated number; it all depends on the moisture contained in the liver-vegetable mixture and the quality of the flour itself. Therefore, add a product based on these two factors. The consistency should be a not too liquid mass, reminiscent of regular pancake dough.
4. Place the dough on a heated frying pan using a tablespoon and fry on one side until golden brown.
By the way, to make it easier to understand when to turn the liverwort over, just watch the surface of the cake. When the raw dough dries out, you can turn it over to the other side.
5. Turn the pancakes over, fry them for literally another 1 minute and remove from the heat. This way we use all the dough.

Option 4: Liver pancakes with rice and semolina in the oven
To make the dish less caloric, it is better not to fry the pancakes, but to bake them in the oven. Instead of wheat flour, you can use semolina or rice, oatmeal or bran - this will make the dish more healthy, enriched with fiber. The pancakes will turn out even more delicious, especially if you choose veal liver.
Ingredients:
- half a kilo of veal liver;
- 50 gr. round rice;
- half a glass of milk;
- one egg;
- salt, nutmeg and pepper;
- onion head;
- 75-100 gr. semolina.
How to cook
It is advisable to pre-soak the liver in milk and leave for half a day. Then drain the milk and remove all films and veins from the offal with a knife.
Rinse the rice well in running water and cook until soft. Cool the finished rice.
Pass the liver in a meat grinder. Combine with finely chopped onion and rice.
Knead the resulting mass thoroughly, add rice, spices, semolina and mix again. It is necessary that all ingredients are evenly distributed among each other.
Pour a little vegetable oil onto a baking sheet and spread it over the bottom using a pastry brush. Place the pancakes with a spoon so that they do not touch each other.
Bake at 180-200 degrees for about half an hour.

The next product that housewives like to add is oatmeal. Unlike semolina, they have a larger structure, but this does not mean that they will be expressed in taste. Plus, these are grains that have a very good effect on the body.
The recipe can be called budgetary, because with oatmeal we will increase the amount of minced meat, which will help us prepare much more delicious pancakes.
Ingredients:
- Chicken liver – 600 g
- Oat flakes – 50 g
- Sour cream – 60 g
- Onion – 1 head
- Eggs – 1 pc.
- Garlic – 2-3 cloves
- Vegetable oil for frying
- Salt pepper
Cooking method:
1. We first separate the liver from unnecessary parts, wash it and send it to a meat grinder to grind together with oatmeal until it becomes paste-like.
You can also put onions in there, in case you don't like to taste bits of this vegetable in the finished product. We'll do it a little differently and just chop it finely.
2. After grinding the main product, we continue preparing the dough. To do this, add sour cream, chopped onion, egg, pressed garlic and salt and pepper. Next, mix everything and leave under the closed lid for 30-40 minutes so that the oatmeal swells.
3. After a while, heat a frying pan with vegetable oil and, using a spoon, place future pancakes on it. Under a closed lid, simmer the liverworts over medium heat for about 2 minutes.
4. As soon as the flatbreads are browned on one side, turn them over and cook for another minute, then remove from the stove.

Option 5: Liver pancakes with rice and sauce
You can use any rice you have at home for the pancakes. And for variety, it is recommended to serve the dish with cucumber sauce - the dish will be tasty, although unusual.
Ingredients:
- 650-700 gr. veal liver;
- a pair of onions;
- salt and pepper;
- a pair of chicken eggs;
- three tablespoons of soy sauce;
- half a glass of sour cream;
- three quarters of a glass of boiled rice;
- one cucumber;
- 40-50 gr. parmesan
Step by step recipe
Rice should be prepared in advance in the usual way and left to cool.
Cut the liver and onion into small pieces and grind together in a blender or meat grinder. Beat eggs, rice into the resulting mass, add salt and spices, mix well. The dough should be similar in thickness to sour cream - it should flow, but not be too liquid.
Pour vegetable oil into a frying pan and heat it up. Using a spoon, add pancakes and fry over moderate heat on both sides until golden brown.
Prepare the sauce: grate the cucumber and cheese on a fine grater, mix and season with sour cream and soy sauce. Mix thoroughly until smooth.

More aromatic liver pancakes will be obtained if you add fresh herbs and garlic to their composition. You can take any greens - parsley, cilantro, dill. The amount of heat can be adjusted by increasing or decreasing the amount of garlic.
Ingredients:
- half a kilogram of liver;
- one potato;
- 150 gr. rice;
- 50 gr. wheat flour;
- one chicken egg;
- 5-6 cloves of garlic;
- a teaspoon of salt and ground black pepper;
- sunflower oil;
- a bunch of fresh herbs (any).
How to cook
Rinse the liver thoroughly in a cup of cold water, changing it several times. If the liver is beef, then after it is washed, cut off the film from it with a knife, as it is very dense. Cut the liver into small pieces and pass in a meat grinder or blender.
Peel the onions and garlic cloves and also grind them in a meat grinder. Combine with liver and mix. Add peeled and finely grated potatoes there.
Rinse the rice several times until the water is clear. Pour water (one and a half glasses), close the lid of the pan and place on medium heat for 10-15 minutes. Then turn off the stove and leave the rice covered for another 12-15 minutes so that the rice grains are cooked.
Mix cooled cooked rice and liver in a bowl. Add a raw egg, finely chopped herbs, salt, spices and flour, stir everything. The dough should have the consistency of thick sour cream. If necessary, you can add another 1-2 tablespoons of flour until the desired thickness is achieved.
Heat sunflower oil in a frying pan, add small round pancakes using a tablespoon, and fry on both sides until cooked. It is best to take a frying pan with a non-stick coating to use less oil.
