I really love the combination of apples and curd cream, so here I want to show you how to make Bavarian apple cake. This is a very delicate pastry with apples on a crispy dough with aromatic cinnamon.

Cooking steps

15 minutes

Preparing the apple filling:

Peel the apples, remove the core, slice thinly and place in a saucepan.

Sprinkle sugar on apples and add water. Place on the fire and bring to a boil, simmer over low heat for 15 minutes.

Let cool, drain the apples in a colander to drain excess liquid.

Preparing the custard:

Beat the eggs with a whisk with sugar and vanilla sugar.

Add flour, mix, pour in milk, mix again.

Pour everything into a thick-bottomed saucepan and bring to a boil over low heat, stirring constantly.

Boil until thickened. Let cool.

Separately, beat the butter until white with a mixer.

Add the cooled custard mixture a spoonful at a time, whisking each time with a mixer.

Preparation of the dough:

Grind the flour and butter into fine crumbs.

Add sour cream, soda, slaked with vinegar.

5 minutes Knead the dough and gather it into a ball.

Cover the dough with cling film and let it rest for 5 minutes.

Divide the dough into 9 parts.

Sprinkle the table and rolling pin with flour.

Roll each piece of dough into a rectangular layer 20 × 15 cm.
Place the apple filling in the middle, cover and seal the edges.

You get rectangular pies.

15 minutes Bake the dough in an oven preheated to 180°C.

Approximate baking time is 15 minutes. Cool.

Cake assembly:

The first layer is three pies, the second layer is cream.

Repeat the sequence 2 more times (6 layers in total).

Sprinkle with crushed cookie or waffle crumbs (can be nuts).

Hi all! Today I want to treat you to my birthday cake. I called it “Bavaria” because I made Bavarian mousse. I took the idea for this cake from Andrey (Andy Chef). But only the idea, I say so that later I will not be accused of theft, plagiarism, and so on.

Bavarian mousse comes in caramel flavor and white chocolate. But they all have almost the same basis. This is custard. I tried to make the glaze today without glucose syrup, because it is not always and not sold everywhere. So let's get started!

Bavarian apple pie recipe with photos

  1. A couple of hours before cooking, take the butter out of the refrigerator and allow it to soften to a plastic, creamy state. Mix with sugar and rub vigorously with a fork - a single mass should form.

  2. Combine flour with baking powder. Sift and add to the oil mixture.

  3. Mix thoroughly by hand until crumbs form. The mass turns out dry and crumbly - it can be molded into a ball, but it will not be plastic (this is not necessary in this recipe).

  4. Place the loose dough in a baking dish (here we use a container with a diameter of 24 cm). Using your fingers or, for example, the bottom of a glass, compact it into an even layer, filling the entire perimeter. We form a border about 2 cm high along the edge.

  5. Spread the flour base with a thin layer of jam or jam. For our Bavarian pie, we chose aromatic raspberry jam. Can be replaced with cherry, plum, blueberry, etc. From the recommendations - the jam should not be cloying, ideally with a slight sourness.

  6. For buttercream, mix cheese, sugar (including vanilla), add eggs. Beat with a mixer until smooth and homogeneous.

  7. Place the cream in a flour “bowl” and level it with a spoon.

  8. Remove the core from the apples and cut off a thin layer of peel. Cut into thin slices, mix with cinnamon and place on top of the cheese cream - try to distribute evenly.

  9. Sprinkle the apples with sugar and scatter the almond petals. The latter can be replaced with finely chopped nuts. Place the Bavarian pie in an oven preheated to 180 degrees. Bake for 60-70 minutes (until golden brown).

  10. Cool the finished baked goods completely in the mold, then remove.

Recipe for Bavarian Apple Pie:

Prepare the dough. In the bowl of a blender, beat room temperature butter and sugar.

Gradually add sifted flour and vanillin in several stages.

Knead soft dough.

Grease a baking dish with butter. Dust with flour. Place the dough into the pan, spreading it over the bottom and sides of the pan.

Prepare the filling. In a blender bowl, mix sugar, ricotta (I used chocolate) and egg until smooth.

Place the mixture on top of the dough.

Peel the apples and remove seeds. Cut into thin slices.

Place the apples in a spiral on the cheese layer.

Sprinkle the pie with cinnamon and sugar. Place the pie in a preheated oven (200 degrees). Bake for 10 minutes. Then reduce the oven power to 180 degrees and continue baking the cake for another 30 minutes.

Remove the finished pie from the oven and cool in the pan.

  • Chocolate 115 g
  • Cream 100 ml
  • Whipped cream 165
  • Nut butter 20 g
  • Gelatin 10g
  • Cream cheese 55 g

How to cook:

Step 1. Soak gelatin in ice water.

Step 2. Heat the cream. As soon as the cream begins to reach 65 degrees, put the swollen gelatin into the chocolate and pour hot cream over everything, beat with a submersible blender.

Step 3. Add cream cheese and nut butter, beat with a blender.

Step 4. Gently fold in the whipped cream and stir with a spatula.

Biscuit:

  • 3 eggs
  • 40 g sugar
  • 1 tsp cocoa
  • 25 g almond flour
  • 50 g flour

How to cook:

Step 1. Separate the whites from the yolks.

Step 2. Beat the whites into a stable foam, add sugar and beat again.

Step 3. Next, add the yolks and flour, mix everything carefully with a spatula.

  • 100 g sugar
  • 10 g butter
  • 40 ml cream for caramel + 50 g cream for ganache
  • 50 grams milk or dark chocolate

How to cook:

Step 1. Prepare caramel. Pour sugar into a saucepan and wait until it is completely dissolved, add a piece of butter (!!! be careful, there will be a lot of steam!!!) Then add room temperature cream (40 ml) and stir vigorously.

Step 2. Prepare the ganache. Pour chocolate into cream (50 g). Melt everything in a water bath and cool.

Line the bottom of the springform pan with parchment.

  • Mix flour, oatmeal, salt, sugar and lemon zest.
  • Add the frozen butter cut into cubes and grind everything into crumbs.
  • Add sour cream and knead the dough.

Roll it out on film to a diameter of 28-29 cm and place it in a mold, making sides.

Prick with a fork and refrigerate for an hour.

Place parchment paper with beans on the dough and place in the oven preheated to 190° for 10 minutes. Let the base cool.

How to make ricotta cream

Weigh out the ricotta. I take a 250 g package, put the cheese on a sieve, approximately 30 g of liquid comes out.

Mix cheese with egg, sugar and vanilla until smooth.

Wash the apples, peel and cut into thin slices.

Assembling the Pie
  • Place half the cream on the base, half the apples on top, the remaining cream and the remaining apples.
  • Sprinkle cinnamon sugar on top.

Bake in the oven at 190° for 40 to 50 minutes until the apples are ready.

Remove the finished pie from the mold and let cool.

How to prepare “Bavaria Cake” step by step with photos at home

So, first we make raspberry confit. I did it in advance. I took frozen raspberries, gelatin, water and sugar.

Sprinkle slightly defrosted raspberries with sugar and add water. We put it on fire.

Boil the raspberries for 3 minutes. Crush the berries, if necessary, and strain through a sieve. Fill the gelatin with water in advance. I have records.

Mix raspberries with gelatin. Let cool and pour into molds. I have these special ones for freezing. We put them in the freezer for 5 hours, I leave them overnight.

We make the mousse the next day. We will need cream, sugar, milk, gelatin.

I have a finished sponge cake, I cut it along the bottom of the mold. My form is Eclipse, now you can buy this form everywhere, I think. You can take a regular 20 cm mold and assemble the cake upside down.

Fill the gelatin with water. Let's heat the milk. Beat the yolks with sugar. Add heated milk to them, while stirring well. And put it back on the fire, cook until thickened. I added a little white chocolate to the hot mixture, just the way I wanted it. But this is optional. And add the squeezed gelatin. And let the mass cool. Then whip the cream and mix with our mixture.

We take our raspberry balls out of the freezer before using. If your mixture has not yet cooled down, then put them back in the freezer for now. The mass should have cooled down by this time.

Pour the mousse into a mold 1 cm high. Place in the freezer for 10 minutes.

I found the cake recipe on the Internet. My family loves cakes like this, so I decided to make them. Of course, I adapted it to my taste, so I don’t pretend to be a purely German cuisine, as it was designated. The cake turns out tender, creamy chocolate. Please help yourself, maybe someone will be interested.

  • Then prepare the cream.
  • To do this, beat the eggs, add all the sugar, beat for 1.5 minutes. Then add flour, mix, then pour in milk, first one third, then add the rest of the milk and vanilla, mix.
  • We will cook the cream in a frying pan. Pour the mixture into a thick-bottomed frying pan and cook, stirring constantly, until the mixture thickens. This will take no more than 5 minutes. Remove the frying pan from the stove, let the mass cool to room temperature (in order for the mass to cool faster, it can be transferred to another container). Beat soft butter and add cream to it in several additions. Place the finished cream in the refrigerator.

Place all the pieces (9 pieces) on a baking sheet and place in an oven preheated to 180 C for 20 minutes.
