Tender and juicy on the inside, at the same time crispy on the outside, squid rings fried in batter in a frying pan can be found on the tables of ordinary people in any part of the world. They say that the dish was invented in the East, but the snack became most popular in the Mediterranean countries. Recently, our people fell in love with the dish, and we quickly learned how to cook it at home, even without a deep fryer.

Whether the rings become crispy depends on the dough. Mix the batter with beer, with starch, cheese, cook it in Chinese, or make it, as in Spain, with sparkling water. All this will help to achieve that very pleasantly crunchy shell on the rings. A selection of my recipes will introduce you to the world of squid appetizers and help you choose the best option.

Squid rings in batter - the easiest frying pan recipe

Take:

  • Squid.
  • Olive oil.
  • Red hot pepper - a pinch to taste.
  • Oil for frying.
  • Eggs – 2 pcs.
  • Flour - spoon.
  • Breadcrumbs - a handful.

Step by step recipe:

Wait until the squid carcasses thaw, proceed in a gentle manner, leaving them on the refrigerator shelf. Then remove the entrails if you used unpeeled seafood. Remove the transparent ridge.

To quickly and easily peel the carcasses, pour boiling water over them. Hold for exactly 10 seconds and quickly remove. Let cool slightly and remove any remaining skin with your hands.

Cut into rings no more than a centimeter thick.

Marinate the squid rings with olive oil and hot red pepper. After 5 minutes you can start frying.

Beat a couple of eggs with a whisk, add a spoonful of flour there and work with the whisk some more to break up the lumps.

Place the breading on a separate plate.

Pour a generous portion of oil into the frying pan (1.5-2 cm high) so that the rings float freely in deep frying. Warm it up thoroughly.

Throw a squid ring into the eggs.

Then transfer to breadcrumbs. Roll well.

Place in a frying pan to fry. The time for frying the rings until golden brown is 40-70 seconds, depending on their size and oil temperature.

Then place it on a napkin and wait for the excess fat to be absorbed.

Battered squid rings with breadcrumbs and sour cream sauce

Take for 2 servings:

  • Squids – 2 pcs. (250 gr.)
  • Flour – 30 gr.
  • Eggs - a couple.
  • Breadcrumbs – 50 gr.
  • Sunflower oil – 500 gr.
  • Lemon juice - to taste.
  • Black pepper, salt.

If you find it, buy ready-made breading with dried garlic and sesame seeds. If it doesn’t work, I advise you to make it yourself; it will be useful not only for frying squid.

For sour cream sauce:

  • Sour cream, full fat - 2 large spoons.
  • Onions – 15 gr.
  • Green onions – 10 gr.
  • Garlic clove.
  • Mustard – 5 gr.
  • Soy sauce – 5 ml.

Step by step recipe:

Thaw the carcasses of the product, clean them thoroughly, removing the skin completely. Rinse and pat dry slightly with a paper towel.

Cut into rings about a centimeter wide.

Pepper and sprinkle with lemon juice. Stir and leave to marinate for 10-15 minutes.

Break the eggs into a bowl and beat them with a fork until smooth. Place the crackers in a separate bowl. Place a plate of flour nearby.

Dust the rings with flour, then place them in the beaten egg.

Transfer to breadcrumbs and coat well.

Since we will be deep frying, pour enough oil into the pan. Heat it well. Throw in the squid preparations. Fry for exactly a minute and 20 seconds.

Remove and place on a paper napkin to absorb excess fat.

Make sour cream sauce. To do this, chop the onions and green onions.

Place in a container. Next, add the crushed garlic clove and sour cream.

Add a dash of soy sauce and mustard. Mix the sauce well.

Place the squid rings on a plate, place a spoonful of thick sour cream sauce in the center, and enjoy.

In wine batter

Squid fried in wine batter is a very aesthetic and incredibly tasty dish that can decorate any evening table. To prepare, you will need to select a bottle of good white wine, it will take you approximately one hour in total. Ingredients for 4 servings:

  • Octopus – 1 kg.
  • White wine – 250 ml.
  • Protein – 2 pcs.
  • Wheat flour – 150 gr.
  • Sunflower oil.
  • Salt pepper.

Cooking method:

  • For cooking, you can use freshly frozen squid rings. If you cannot find a mollusk in this form, you can take a regular squid carcass, rinse it in advance under running water, peel it and cut it into even rings no more than one and a half centimeters wide.
  • Rings of octopuses are placed in preheated and slightly salted water, where they should be boiled for five minutes. At the end of cooking, the rings are folded out using a colander and placed in a separate container.
  • Next is the preparation of the batter. In a separate bowl, mix the wine, previously separated egg whites and flour. Salt, pepper and other spices to taste are added to the resulting mass.
  • When frying, use only enough oil to coat the bottom of the pan. Having established the most powerful fire, we begin to cook squid in batter. The rings are dipped in a mixture of wine, flour, spices and proteins, and then placed on hot oil.
  • Fry the squid for two minutes on each side. Once cooked, place the clam pieces on a paper towel or napkin. You can serve!

Squid rings fried in milk batter

Very tasty batter, tender, rich, with a crispy crust.

Compound:

  • Squid – 2 pcs.
  • Egg.
  • Flour – 4 tablespoons.
  • Water – 2 spoons.
  • Milk – 3-4 spoons.
  • Sour cream – 2 large spoons.

How to cook:

  1. Leave the carcasses on the refrigerator shelf to slowly thaw. Then cut it, wash it thoroughly, cut into rings.
  2. Beat an egg into a container, add sour cream, stir.
  3. Add a spoonful of flour, add one spoonful of butter, milk and water. Knead the dough.
  4. Place the rings on a plate with the remaining flour and roll.
  5. Place in a bowl with dough and then fry.
  6. Heat the oil in a frying pan. Drop the blanks.
  7. Deep fry for 1-2 minutes until nice and crispy.

Crispy squid rings in cheese batter

Cheese batter with an indescribable piquant taste is an excellent coating for squid rings. Juicy and crispy at the same time, lovers of seafood appetizers will certainly appreciate them.

Necessary:

  • Squid – 500 gr.
  • Cheese – 50 gr.
  • Breadcrumbs - 4 large spoons.
  • Egg.
  • Flour - a handful.
  • Frying oil, salt, ground pepper.

How to fry:

  1. Cut the cleaned seafood carcasses into rings.
  2. Add salt and pepper to taste, stir.
  3. Beat the egg with a whisk, pour flour onto a saucer.
  4. Grate a piece of hard cheese into fine crumbs and toss into breadcrumbs. The cheese can be aged, not too fresh so that it is hard.
  5. Place the pieces in flour, then in the egg, then transfer to breadcrumbs and roll thoroughly.
  6. Fry in oil until crispy, about 1-2 minutes on each side.
  7. Don't forget to pat the finished rings dry to remove excess fat and calories.

Squid rings in beer batter - a very tasty recipe

It’s not for nothing that culinary experts love to use beer batter - it tightly envelops the seafood rings and does not disintegrate during frying.

We take:

  • Rings – 1 kg.
  • Beer – 70 ml.
  • Eggs – 5 pcs.
  • Sunflower oil.
  • Bay leaf - leaf.
  • Salt – 5 large spoons.
  • Allspice – 5 peas.

Preparation:

  1. I won’t describe how to prepare seafood carcasses for cooking, everything is described above in a step-by-step recipe with photos. When you cut the squid into rings, move on to the next step.
  2. Prepare the brine. Boil water, add salt, a few sweet peas and a bay leaf.
  3. When the salt has dissolved, throw in the rings. Boil for a minute. Quickly remove and rinse with cold water.
  4. For the batter, beat the eggs. Add flour, pour in beer, shake well. The batter will be quite thick, like rich sour cream.
  5. Dip the pieces into the batter one at a time, then transfer them to the hot oil.
  6. Cook, turning constantly, for about a minute. Then place on a paper towel to absorb excess oil.

Squid in lemon batter

Try cooking squid in lemon batter, it turns out delicious and aromatic.

  • 2 squid carcasses;
  • 2 eggs;
  • 150 ml milk;
  • 1 lemon;
  • 4-5 tablespoons of flour;
  • salt, turmeric, dry aromatic herbs, black pepper to taste.

We clean and rinse the squids. Place the carcasses in salted boiling water for two minutes, then remove and immerse in cold water to cool quickly. Cut the cooled squid into rings about 1 cm wide or small pieces and dry.

Separately, beat the eggs, add salt and pepper, and add a pinch of turmeric. Then squeeze the lemon juice and mix. Add milk, dried herbs and flour. Mix thoroughly. There should be no flour lumps in the dough. Place the batter in the refrigerator for 20-30 minutes.

Heat vegetable oil in a frying pan; there should be enough oil so that the rings are practically immersed in it.

Dip the squid pieces into the batter. Make sure that the entire surface of the piece is covered with dough. Fry the squid in batter until golden brown. Then place the fried pieces on paper towels to remove excess fat.

How to cook spicy squid rings in Chinese style

In China, squid rings are considered fast street food, like our fast food, and are sold on almost every corner.

Required:

  • Squid carcasses – 6 pcs.
  • Flour – 100 gr.
  • Potato starch – 100 gr.
  • Soy sauce – 50 ml.
  • Chili pepper – ½ pod.
  • Mineral sparkling water – 250 ml.
  • Salt – a pinch.
  • Ground pepper - the same amount.
  • Sunflower oil – ½ cup.

How to do:

  1. Defrost the carcasses, clean them, chop them into rings.
  2. Place in a bowl, pour over the marinade consisting of soy sauce and finely chopped hot chili. Leave for a quarter of an hour.
  3. To prepare the batter, pour flour and starch into a bowl, add salt, pepper, and stir.
  4. Pour in mineral water and knead the dough.
  5. When the squid is sufficiently marinated, discard the sauce. Place the mixture into the dough and stir until the batter is evenly distributed.
  6. Heat oil in a frying pan and add semi-finished products. Fry quickly, turning the rings frequently. Then blot off any excess fat and serve.

In Chinese

Squid in Chinese batter turns out to be very tasty. Its peculiarity is that the rings are fried over high heat in cold dough.

Prepared from certain ingredients:

  • kilo of squid;
  • a pinch of red chili pepper;
  • one hundred grams of flour;
  • one hundred grams of starch;
  • salt;
  • 250 ml mineral water;
  • spices to taste;
  • black pepper;
  • sunflower oil in fact.

Squid rings - recipe like in a restaurant

Crispy rings prepared according to this recipe will go in great demand with beer.

You will need:

  • Seafood half-carcasses.
  • Flour – 50 gr.
  • Mayonnaise – 2 tablespoons.
  • Sour cream - the same amount.
  • Lemon slice.
  • Egg.
  • Dill - sprig.
  • Garlic – a small clove.
  • Ground coriander - a pinch.
  • Breadcrumbs for tempura (if not, crush corn flakes).
  • Crackers – 100 gr.

Fry:

  1. Start by making the sauce. Chop a sprig of dill into crumbs, add mayonnaise, sour cream, and crushed garlic. Mash the sauce thoroughly.
  2. Season the flour with coriander and salt and stir.
  3. Cut the squid carcasses into rings 4-5 mm thick, place in a bowl with flour, stir. Leave until cooking begins.
  4. Beat the egg with a pinch of salt.
  5. Heat the fat in a frying pan, adjust the heat to medium.
  6. Remove the rings from the flour and dip them in the egg. then roll in breading. Set aside to fry.
  7. Cook for no more than 20 seconds on each side. Transfer to paper towel. When the excess fat is absorbed, take the first sample.

With breadcrumbs

The simplest recipe is to cook squid in a simple breading of white crackers or toasted white bread.

Compound:

  • flour - 6 tablespoons;
  • eggs - 2 pieces;
  • breadcrumbs - 10–12 tablespoons;
  • frozen squid - 1 kg;
  • salt - 1 tsp;
  • ground black pepper - 1-2 teaspoons.

Calorie content: 200 kcal.

Preparation:

  1. Thaw the cleaned squids and rinse them under running water. Dry on a paper towel. Cut into rings no more than 10 mm thick. Roll the rings in flour.

    Secret: For a more even distribution of flour throughout the product, put the flour in a paper bag and throw the chopped squid into it. Shake the bag of rings. The flour will be evenly distributed over them.

  2. Dip the rings in beaten egg and coat in breadcrumbs.

    Note: instead of breadcrumbs, you can use regular white bread, dried in the oven. Cut it into small cubes and place in the oven for a few minutes.

  3. Fry the squid rings over medium heat for 2-3 minutes until browned.
  4. Serve with a sprig of parsley and tomatoes.

How to make rings in Spanish

The Spaniards call the dish calamares a la romana, although such a snack has never been heard of in Italy. Keep the real recipe, from Spanish cafes.

Ingredients:

  • Rings – 1 kg.
  • Corn starch – 50 gr.
  • Flour - the same amount.
  • Egg.
  • Sparkling water – 150 ml.
  • Salt – ½ teaspoon.
  • Baking soda – ½ teaspoon.
  • Oil.

Preparation:

  1. Break an egg into a bowl, pour in soda, add flour, soda, and salt. Beat the dough without lumps.
  2. Hide on the refrigerator shelf for 30 minutes.
  3. Prepare the squid for frying - clean it, cut it into rings.
  4. Pour starch and flour into the bag and mix.
  5. Throw the seafood pieces into a bag with flour and starch, shake so that the dry mixture envelops the product on all sides.
  6. Heat the oil in a frying pan, pouring a 3-4 cm layer of it. Dip the rings into the batter one by one and lay them out to fry. Turn the pieces until they acquire a wonderful golden color. Serve with a slice of lemon.
