  • 2 kg of raw chicken drumsticks;
  • 1 tbsp. (140 g) gluten-free flour mixture (92 g corn flour + 31 g potato starch + 17 g tapioca starch);
  • 1 tbsp. buttermilk (room temperature);
  • 1 egg (50 g, weighed without shell), room temperature, beaten;
  • 1.25 tbsp. (200 g) gluten-free breadcrumbs (from cornbread);
  • 1 tsp. coarsely ground black pepper;
  • 1.5 tsp. kosher salt;
  • 1.5 tsp. smoked Spanish paprika;
  • 0.5 tsp. dried oregano;
  • 0.5 tsp. dried thyme;
  • 0.5 tsp. dried parsley;
  • 0.25 tsp ground cumin;
  • 1/8 tsp. ground cinnamon;
  • 0.25 tsp onion powder;
  • 0.25 tsp garlic powder;
  • 1/8 tsp. chili powder;
  • food grade oil spray.

Step-by-step cooking process

  1. Preheat the oven to 190°C in advance, line a large rimmed baking sheet with unbleached parchment paper, place a wire rack on top and spray it with cooking oil.
  2. It is recommended to remove the skin from chicken legs using scissors or a very sharp knife.

  3. Place the gluten-free flour mixture in a shallow bowl or medium-sized frying pan.
  4. In a separate bowl, combine the buttermilk and eggs and whisk until well combined.
  5. Finally, in a separate bowl or pan, place the cornbread crumbs, all the peppers, salt, oregano, thyme, parsley, cumin, cinnamon, onion and garlic powder and chili powder and mix well.
  6. First, dip the prepared chicken pieces into the flour mixture, coating them evenly on all sides, then into the egg and buttermilk mixture (allowing any excess to drip off), then into the seasoned breading, pressing firmly on all sides.
  7. Next, place chicken pieces about 1 inch apart on the prepared rack on a baking sheet and lightly spray with oil spray.
  8. Next, place the pan with the filled rack on the center rack of the oven and bake for about 50 minutes, or until all the legs are golden brown and a food thermometer registers 73°C.

  • milk – 150 milliliters;

Step-by-step cooking process

  1. You need to preheat the oven to 200°C, line a rimmed baking sheet with aluminum foil, and place a rack on it sprayed with nonstick cooking spray.
